Kimmar - Thanks for posting the food porn. I've fallen off the couch here. How on earth did you GET to take those pictures??? And if your DH relented, please THANK your DH for letting you take those pictures. If he weren't over 9000 miles away, I'd blow him a kiss!!!! Heck....after the day I had, I could kiss you too for those pictures.

Brandi ~ I was so afraid that you would not be able to eat the meat. It's so funny what our body tells us. Hopefully the seafood will be better.

The sun is shining and I see blue sky out of my window. It is still a bit cooler than it should be but at last it isn't raining.

Ellen, David and I both were a little worried that I would not be able to handle it either. Tonight we are taking DS and his Finance and her two kids (4 & 5) out to dinner. So tonight is another test, I will have a big salad no matter what, but I am going to try some things and see how it goes.

The sun was shinning this morning here and it was so pretty I have not seen it for days. We had 8.71 inches of rain the month of April and 90% feel in the last two days!

Strawberry Shortcake.... Yummy....

WooHoo it's Friday :cool1: :banana:

I am so excited for this weekend. As soon as work is over (actually I am going to leave a bit early as I want to wash the car) I am headed to Kearney. I am picking Lilly Bug up from Day Care then we are going to the house and load their Tahoe and heading to Lincoln. I haven't been to see my Boy since a real fast trip in February. The only sad part is Doug is on call and can't join us. But him and his Dad are putting in a new circuit box (or something :lmao:) in the house so they were excited. :dance3:

Tomorrow is the Berkshire Hathaway Share Holders meeting in Omaha. They are always a lot of fun, plus the shopping is amazing. On Sunday Matthew and Stephanie are running the Lincoln Marathon. I am so proud of them!!! I am so sad though that I am not running with them. It opened at 12:01 on January 1st. Unbeknownst to me they both signed up for it by 12:15 am. I got on at 7am and it was already sold out. Damn!!! So Marty, Lilly and I will be their cheerleaders. :cheer2:

I have the champagne and glasses packed as we are going to celebrate Matthew's promotion. He was promoted to Credit Analyst for First State Bank of Nebraska. We are so proud!!

Here is the recipe that I have been promising. I hope you like it!!

Kimmar ~ see I can go meatless once in awhile. ;)

Penne with Butternut Squash

1 pound pasta - I used bow tie
2 T olive oil
2 cups diced butternut squash
12 cremini mushrooms - I used button - trimmed and sliced
4 cloves garlic -minced
1 medium shallot or 1/2 small red onion minced
1/4 to 1/2 teaspoon red pepper flakes - I omitted these as I had Lilly
1 cup grated parmesan cheese
3 T fresh oregano

Bring a large pot of salted water to a boil. Cook pasta as directed, reserve 1 cup of cooking water, then drain

Meanwhile heat 1 T olive oil in a large nonstick skillet over medium-hig heat. Add the squash, salt and pepper to taste. Cook for about 5 minutes until golden and tender. Transfer to a plate and set aside.

Add the remaining 1 T of olive oil, the mushrooms, salt and pepper. Stir occasionally until lightly browned, about 5 minutes. Add the garlic, shallot and red pepper flakes. Cooking until the shallots soften. About 2 minutes.

Add the pasta, squash and 1/2 cup of the reserved pasta cooking water to the skillet. Cook, stirring, until heated through, 1 to 2 minutes. Stir in 1/2 cup parmesan, then stir in enough of the remaining water to loosen. Stir in the oregano and season with salt and pepper. Top with the remaining 1/2 cup parmesan.

ENJOY!!!
 
Tonight I'll be taking some leftover meatballs and make grinders along with some fries. Easy peasy.

We went out for dinner tonight. A bunch of us decided it was time to celebrate our *mumble* *mumble* anniversary from when we started university.


I'm in a little food coma right now. I do have food porn and hope to upload them tomorrow or Monday.
