Morning all, I decided not to take the muscle relaxers while I am at work, they just make me lose focus, and very lethargic....

My mother's kitchen is opened again. We had egg curry, gai lan with oyster sauce, a stir fry vege and chinese soup for dinner with rice. I'm so glad she's home. The surprise for the night was DS. He seems to have acquired the curry taste somewhere this year. He was happy to try some of the egg curry. I was rather surprised because that curry was rather spicy. He really enjoyed it!

PIO ~ Glad Mom is back home. Did they have a nice time?
That's funny about DS. My SIL Marty did NOT like anything spicy when he first got into the family but now he can keep right up with me. I love it!!

Brandi ~ Focus girl. NO really I hate that disconnected feeling. I sure hope you are starting to feel better. Have the bruises appeared yet? Do you remember the night Liam was born - Marty, Stephanie and I were T-boned as we left the hospital. I had bruises and soreness I never knew even hurt. Bless your heart, please take care.

The sun was shining as I came into work this morning but it is now cloudy, windy and sprinkling again. The farmers are having a fit! They are behind about 2 weeks getting the corn and beans in. Not good at all!!

I was so excited to share last nights dinner with you all. It was a real keeper and oh so good. But I left the recipe at home and I don't think I can remember all of the measurements. But I will get it and will share. I think you all would like it.

WFDT ~ Tacos, refried beans, rice and homemade tortillas.

It is cold, rainy and windy here this morning. As I was getting ready the furnace came on. It is that cold here - only to reach low 40's. I have washed all of my sweaters and winter things and found I needed to bring a few things out again. Oh well, as they say April showers bring May flowers. Yea, that's true if they don't get froze in the mean time. We are really watching the temps!!

WFDT ~ Penne pasta with butternut squash, and a nice green salad. This is a new recipe - if it's good I will post it.

Definitely! I will share it! I think it's from a Cooking Light magazine.

Chicken Curry Corn Chowder

- Two medium onions, chopped
- Two celery ribs, chopped
- 1 T butter
- 3 cans of Chicken Broth (6 cups needed)
- 5 cups frozen corn
- 2 t. curry powder
- 1/4 t salt
- 1/4 t pepper
- dash of cayenne pepper (to your liking, really!)
- 1/2 C all purpose flour
- 1/2 C 2% milk
- 3 cups of cooked chicken, diced
- 1/3 C minced Cilantro

-In a Dutch oven, saute onions and celery in 1 T of butter until tender.
-Stir in broth, corn, curry powder, salt, pepper and cayenne. Bring to a boil.
-Reduce heat, and simmer for 15 minutes.
- In a small bowl, whisk flour and milk until smooth. Whisk into pan and bring to a boil, cook for 2 minutes
- Add chicken and cilantro. Heat through.

We are safe today. Just cloudy. It's all east of here. This definitely isn't the end of the storm season though. May and June and notorious for storms like this.

I had one night of eat what I wanted, but I am back on the vegan train since Saturday morning, still no Caffeine or oils, of fats, or diary. I had meat Friday night but not again....

I am not sure what I want to do. I leave in 10 days for Bermuda so I think I will try and eat some nice seafood and see how I do...

Work is great so far... I am excited about it.

Mysterious bruises and pains, that I had no idea where they came from... Yes I get to see those everyday it seems.

I am getting better everyday, I feel like the light at the end of the tunnel is getting brighter!
