The What's For Dinner Thread - Feb '09(recipe index in OP)

Good Morning!

Quick check in and hopefully I can get back on later. I have to catch up with housekeeping stuff.

Had a great time at the boardwalk...it was the most crowded that I have ever seen it. Met up with SIL and her family and had a great dinner at the Shrimp Box...it's on the water where all the fishing boats come in.

Tonight will be chicken stir fry and brown rice. I am starting eating better today and exercise. I would like to lose about 30 - 35 #s for our November trip.

Glynis, what cute pics of the baby...he melts my heart! What a beautiful clan you have. You have some really creative crockpot recipes, I wish my DH was not so picky. (Well, he says he isn't but I know what he likes and doesn't)

Our central air is not working right now, which was not good last night. The company is getting a call today. We have been waiting two months for them to figure out what is wrong with the heat system they put in. They put us on a temp. one zone system while they trouble shooted. We found out last night that they did not connect it to our A/C. :headache:

Not sure what today is going to bring. I think I may end up at my parents for dinner with DS. It is my parents weekly " therapy " as they tell me. ;) They are such good grandparents. I may go to Babies R Us today. I need to start getting ready for our little girl. With DS I had so much stuff from my shower. I have all the big things we need but I only have two pink girl outfits that my DM has bought.

I was in bed last night thinking how great it was my surgery has been brought forward when suddenly it hit me........OMG.......MY SURGERY HAS BEEN BROUGHT FORWARD !! :eek:

Ann -- It's wonderful that your parents are so involved. I know my two love the time they spend with their grandparents.

Thanks for all the congratulations for Liam. I, for one, am hoping he has a good season this year. He didn't enjoy playing for the team he was on last spring.

It's Monday, so it's a skating night. Since I don't have leftovers from the weekend, I'll have to think of something else that is quick.

I spent the weekend off the computer. I tried to scroll back, but if I missed anyone I apologize.

Here are some photos. On Friday I made the craziest dinner. We called it heart attack on a plate. Here is John's. It's a garlic rubbed toasted baguette, topped with camelized onions, sauteed spinach, seared sliced tenderloin, a poached egg, shaved parmesean, and some truffle oil:

Here is mine. I had bacon instead of tenderloin:

This was tasty, but really rich. We ate less than half. I think the flavors might work as an appetizer--like a mini puff pastry shell stuffed with the spinach, onion, and bacon, topped with a quail egg.

Here is Saturday's dinner. Seafood fra diavlo. It was GOOD.

I served it with macaroni and cheese (the fancy velveeta kind :laughing:), and green beans.

Since my parents and sister were not around, I invited my brother to join us for dinner. He is such a picky eater! He hates all vegetables. When he saw that I was blanching the green beans in the (gasp!) same water that I planned to cook the macaroni in, he FREAKED out! Sometimes I think my Mom got the wrong baby handed to her in the hospital. :confused3

Tonight I am making crispy flounder, sliced tomatoes, and a salad.
 
Becky, the seafood FraDiavlo looks heavenly and right up my alley!!! But the velveeta shocked me coming from you.:rotfl:

Laura, my parents just amaze me the way they balance 21 grandchildren ranging from 26 to 2 1/2. My little guy is the youngest. I know being the only daughter makes things a little diff., but I know they were just so thrilled for me when I finally became a Mom.
 
This sound yummy and easy (big plus) and i think the boy would like it but hes not big on any spicyness...did it have any kick ?
And could i leave out the pepper without loosing taste ?

I LOVED the sleeping wee bairn pics,you should get a frame to fit them all and put them together...that would be so cool.

The applesauce chicken was so easy! It really didn't have any kick with just the pinch of red pepper. However, you could totally leave it out completely and it wouldn't affect the taste at all.

Thanks for the picture idea! I think that's what we'll do for Alan and my dad for Father's day! I was racking my brains trying to think of something, and that will be darling!

Becky - Your brother just makes me laugh! If my brother had someone willing to cook for him, he would get down on his knees and kiss your feet! He married a girl who didn't know how to cook at all so he has to do all the cooking, and all he knows it tacos and spaghetti!

Thanks for all the comments on the kids pictures. I think they are a pretty good looking bunch! Katie is pretty self-conscious right now. She's in that awkward pre-teen stage, and has been getting some rough teasing from a so-called good friend. I took her swim suit shopping this weekend, and when we found one she liked, she almost burst into tears saying, "This doesn't make me look fat!" I about cried!

Well, after a gloomy weekend, the sun is out today and it's supposed to be about 60 degrees today. Not quite the 80 of last week, but I'll take it over the 40 we had yesterday!

Dinner tonight will be a Florentine casserole. New recipe, and I'm eager to try it! I'll let y'all know if it's any good!

Now, I'm off to get dressed and run to the store to pick up string cheese, milk and bread, among other things!

That's how much I need to lose, too. I'm pondering the benefits of WW. I don't do well on my own...

Sadly, the only time I've been successful in losing weight has been when I was in a flare and didn't eat for several months. :confused3 I start eating again and gain it all back. :sad2:



My sister's wedding saga continues for those interested. For one, TX is getting drenched in heavy thunderstorms ALL week. My yard is a swamp already and it's just Monday. Same with the area that the wedding is in. The outdoor, on a slope in the middle of backyard, wedding. My mother said that even if it's not pouring come Sat, it'll be a big puddle of mud! Since you have to walk down the hill to get to the site, I told her it'll be one huge slip and slide! :rotfl:

To add to the drama, my sister now wants me to spend my Fri afternoon decorating her reception site. I decided I'm not going to. We are spending 2 nights in the area so we can do some touristy stuff on Friday; I had planned to hit the outlet malls all day (I've been saving :yay:) and DH is golfing. My mother told me she won't let me decorate, that if my sister wanted me included, she'd have used me in a more respectable manner than setting up tables :laughing: I feel a teensy bit guilty but she has a bridal party helping her :confused3 I would also really feel weird spending the afternoon with the girl's that "made the cut" to stand by her on her wedding day and though I act like I'm over it, I'm not THAT over it.


If I can find an umbrella, I'm grilling flank steak with avocado relish. Think we'll also grill some asparagus to go with it and some mashed potatos. Mom will hopefully be home for dinner tonight so I wanted to do something a little nicer than our normal weeknight meals.
 
After making pigs of ourselves last night, going to keep it light tonight, I'm thinking seared tuna over arugula with pepper jelly viniagrette.:goodvibes

I know you frequent Zea's, is your pepper jelly vinaigrette like theirs? I tried their bottled product (got it from Rouse's) and it was awful. Do you make your own? If so, would you be willing to share the recipe?

Hi everybody! I keep starting posts and then never finish them. What's up with that?

Anyways, I had a decent weekend and I got some things accomplished, like booking a moving truck. Then my dh says oh maybe we should go with a different company. I told him I can't deal with that until next weekend. This job drains me to the point that my life is put on pause between weekends. I have just enough energy to get through the week while doing nothing at home.

I'm a bit grouchy today. First thing in the door is a full page memo about how we don't have things done and our rooms are messy...*sigh* 43 more school days once this one is over. Not that I'm counting or anything...

Have a good afternoon. I'll post again tonight, hopefully in a better mood!

Dinner tonight will be Quiznos. I have to run errands in the city.

Just a quick check in, I had a really nice time in New York and came home to wonderful weather. My internet went out again, and they just left having "fixed" it again. We'll see how long that lasts.

I'm sure I missed a ton in the past 10 days or so, I won't even try to catch up. Hope everyone is doing well.

Dinner is grilled chicken, brown rice, and a veg.
 
Glynis -- Katie is at such a tough age. I think I probably would have burst into tears myself or even more humiliating for Katie, given her a big hug. If you figure out the secret to dealing with those pre-teen issues, let me know before Caili gets there.

Aimee -- I have to say, your sister has a lot of nerve. Go shopping and do not feel guilty!

Kathy -- How is Kyle doing?

Robin -- I am glad you had a nice trip. The weather turned out to be a lot nicer than originally forecast.

I still haven't figured out dinner...I probably should be at the store, but as you can see, I'm not.

Tonight we are having Liver and Onions, roasted new potatoes and Harvard beets.

Cute story **** Doug and I were very young when we had our girls. I was a SAHM so money was very tight. I could get a container of liver for around .49 cents. I could feed the four of us for very little. We used to have liver 2 -3 times a month. My girls thought it was steak. They used to ask for it. :rotfl2: Now that they are older they won't touch it. :confused3 Go figure.

Haha! Well, it had parmesean, cheddar, and montery jack too, but nothing holds mac and cheese together like velveeta! It makes the sauce so creamy. What can I say? :laughing:

I absolutely love liver!!! My mom fixed it at least twice a month, growing up. She knew I didn't like onions, so she'd make mine with bacon, and everyone else got onions. I still really enjoy it! Alan hates it, so I don't cook it unless he's going to be gone. I do order it at a restaurant every now and again!

I have not been successful losing weight on my own. I never could do the WW plan before either, I was manipulative with the points. The Core, now "Simply Filling" plan works for me, but mostly the accountability of meetings keeps me in line. Go on over to the WW thread on the Wish board, it is really informative and supportive. I made my goal last Monday :yay::yay:

Dinner is American chop Suey. I needed something quick because I have WW but now Nola is sick so no WW for me, I'm afraid.
 
Contrary to everything we've been told my doc says wrapping the rib cage actually makes the rib hurt worse in many cases, depending on where the fracture is. He gave Kyle some pain meds to take at bedtime and told him to use heat instead of ice from now on and no more wrapping/taping.:confused3
