The What's For Dinner Thread - Feb '09(recipe index in OP)

Hi All!

All this talk of corned beef...I can't wait till March 17th! Hope I am up to cooking by then, if not we'll find a take out place.

Andrew is a March baby too! 3/10...did I tell you guys that he is now taller than some of my friends? He is really shooting up and already grew out of the mens size sneakers that I just bought him and almost out of the jeans. Oy!

Sheryl, You are all in my prayers. I am glad you are going for another opinion...maybe another doctor will see things a little differently.

Anyway, Tom brought Chinese food home tonight...God bless his soul. I LOVE chinese food and was so not up to cooking.

OK, the doctor update:
I have a sinus infection thingy going on but the OB will not prescribe for that...I would have to go to my GP. I was so not doing that today so he told me to take Mucinex, tylenol, Zyrtec and do the Neti and steam. I did all of the above and took a nap and feel a bit better. Hopefully I can sleep a little better tonight.

So, now the story goes...the baby was bigger than they told me 2 weeks ago. he was not really sure of the size since the report was in grams but they told me the baby was in the 65th percentile and he was actually 76th...:scared1: Soooo, now after I go for my last growth ultrasound this coming friday, he may want to do a C Section.

He also checked me out and I am 2cm dilated, 66% effaced and the baby is in the -1 position. Don't ask me what any of this means...

So that's my story and I am sticking to it! ;) Now, lets go route on Kris Allen! Yay!

So the basic is youse are having a Big beautiful healthy boy !!

Good times.

At one of my scans the doc was measuring and he said " wow, your baby has a very big head "

not really what you want to here a week before you due date.

DH was worried he was gonna come out with a football head...I was just worried about him coming out !! :eek:
 
I just got home from the hair salon and have to make dinner. I am having....potato pancake topped with poached egg! No root vegetables on the side though--no time. I am roasting some tomatoes instead. Laura and I are really on the same wavelength tonight!

That's what happened with Kyle, he was so big he started struggling so they did a c-section right away and my 9 1/2lb boy,that was supposed to be a girl, was born.

DH is at the Providence College basketball game tonight with DSS. Luke just spike another fever of 100...thanks for Motrin!

My dinner tonight was an extra Filet of fish McD's put in my bag at lunch, and a bowl of coffee ice cream with some heathbar on it. Dinner of champions.

I am heading to bed as soon as DS does. I am nursing a cold still too.
 
Lauren I had a c-section. I didn't think it was bad, of course I don't have anything to compare it too. I bounced back pretty quickly since I was just shy of 36 when Alex was born. See how long I had to wait for the big head boy? Big head means more brains. They don't necessarily use them;)

Scotlas My husband saw one of my ultrasounds and mistook a leg for another part :rolleyes1

Ok going to get ready for catching up on my shows I never finished Greys last week :confused3

Lauren, Caili was 9 pounds, nine ounces, and I didn't need a c-section. The ultrasound doctor did make me nervous at the last scan, because he said she was big, but the delivery went well...in fact the doctor left because she thought it would be a while and the nurse had to go running after her because Caili was not waiting for anyone. Caili did not have a big head though, she was just a solid little thing. It must have been all the tumbling and kicking she did.

Lauren - Please don't be alarmed by this, it is VERY rare. Kyle had a huge head which lead to his diagnosis of craniosynostoses. His soft spot on the top of his head closed prematurely causing disfigurement in the head which meant at age 2 months he had skull surgery to remove part of his skull to create a soft spot which actually just gives the brain and head room to grow normally.

Here is my dinner photo. I think maybe because I ate so late and was rushed, I just did not like the potato cake. I ate the egg and the tomatoes though.

Yes, everything really does shut down on Mardi Gras Day around here. Some grocery stores & some fast food places were open today, but that's about it. Come on down!

We didn't totally vegetate in front of the tv today. DD called to invite us over for dinner & to see the new tile floors they had installed. Dinner was delish (she & I made it together which was fun) and their floors look great. I have to go look up the Giada recipe she used for meatballs they were yummy!

Here's the recipe DD used today. She did this with ground turkey & they were sooo good, moist, light & flavorful! She didn't have smoked mozzarella, but used fire-roasted tomatoes in the sauce. We also added basil & oregano.

Bucatini All'Amatriciana with Spicy Smoked Mozzarella Meatballs

Intermediate Serves:
4 to 6 servings Ingredients
All'Amatriciana Sauce:
2 tablespoons olive oil
6 ounces pancetta, diced
1 yellow onion, finely chopped
2 garlic cloves, minced
Pinch crushed red pepper flakes
1 (14-ounce) can crushed tomatoes
1/2 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/2 cup grated Pecorino Romano
Meatballs:
1 small (6-ounce) onion, grated
1/2 cup chopped fresh flat-leaf parsley, plus 1/4 cup
2/3 cup grated Parmesan cheese, plus 1/4 cup
1/3 cup Italian-style bread crumbs
1 large egg
2 tablespoons ketchup
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
8 ounces ground beef
8 ounces ground veal
2 ounces smoked mozzarella cheese, cut into 16 (1/2-inch) cubes
1 pound bucatini or other long pasta
Directions
For the sauce: In a large heavy skillet, heat the oil over medium heat. Add the pancetta and cook, stirring constantly, until golden brown, about 5 to 7 minutes. Using a slotted spoon, remove the pancetta and reserve. Add the onion and cook for 5 minutes. Stir in the garlic and red pepper flakes and cook until fragrant, about 30 seconds. Add the tomatoes, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and the cooked pancetta. Simmer, uncovered, over medium-low heat until the sauce thickens, about 15 minutes. Stir in the cheese and season with salt and pepper, to taste.

For the meatballs: Position an oven rack in the lower 1/3 of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

In a large bowl, combine the onion, 1/2 cup parsley, 2/3 cup Parmesan, bread crumbs, egg, ketchup, garlic, red pepper flakes, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the beef and veal. Using your hands, combine all ingredients gently but thoroughly. Shape the meat mixture into 16 (1 1/2-inch-diameter) meatballs and place on the prepared baking sheet. Make a hole in the center of each meatball and place a cube of mozzarella inside. Reform the meatball so that the mozzarella is completely covered with the meat mixture. Bake the meatballs for 15 minutes until cooked through.

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and place in a large serving bowl. Add the meatballs and sauce. Toss gently and season with salt and pepper, to taste. Sprinkle with the remaining parsley and Parmesan.

I am 5'4" and my BFF two sons, 13 and 15, are a full head taller then me. The older one wears his fathers shirts all the time, can't wear the pants anymore, they're too small. The 13yo wears bigger shoes then his older brother.

Dinner tonight was a 7-11 hot dog and then I came home and had chicken strips.

I've only looked over the last page or 2 so I apologize for what I have missed.

This morning I went to the Endo doctor & it seems the nodules in my thyroid are bigger so I may have to have it biopsied when I get back from Florida.
I'm trying to do all the research on the houses I 100% want to see next week.
I tried to add some exercise back into my routine for a variety of reasons & hope I feel some effect quickly.

Kat & Sheryl, don't think I will need the recipe for this weekend I think Greg & I are going to bale out of the Mardi Gras party....just not in the mood & I get picked up for the airport 5am Sunday.

Little comic relief, I was in such a way that I canceled my cut & color last week. I couldn't stand my bangs so I opened Maria's Salon & "trimmed" them myself....I do know one thing for certain being a hair stylist will never be my calling. Now I have to hide from my stylist until they grow in a bit:eek:
Off to make some tea I have a sore throat & headache again!!!!
 
Aimee -- I am glad you are getting to spend more time than expected in the parks. That is always a good thing! We always enjoy AK. One of our funny stories from the last trip happened at Rafiki's Planet Watch. We had never been there before, and Caili had a grand time going around petting all the goats. The girl loves goats. Well, some dumb person brought his park map into the animal area (no paper allowed) and dropped it. The goat Caili was petting saw it and immediately started eating the paper, so Caili was running after the animal yelling, "Goat! Goat! Goat!" as if the goat was going to stop and give her the paper. So I had to wrestle the paper away from the goat. Becky still regrets not having her videocamera.

Update on the "Resort Saga"...we did switch to WL today!!!!:cool1: :cool1: :cool1: We all love it here, so now I am really excited. This vacation is much needed for us all.

WL is our favorite resort. We :lovestruc it.

Hey all! Just a quick note to let ya'll know that we made it back safely last night. We had a nice time. Weather was a little cool for the beach, but it was beautiful and sunny. And the kids wore their dad down, and we drove over to WDW on Sunday for a day at MK. We already had tickets, so it actually was one of the cheaper options on our list of things we could do.

Leaving my mom some Zatarain's Jambalaya for dinner tonight--our little way of celebrating Fat Tuesday! Now it's off to work I go!

We had a GREAT day again - this time it was EPCOT. The parks are pretty full - 80 min wait for Soarin which I would never do but I had two first timers with me who have to see it, of course. We had dinner at Tangierine Cafe, my favorite - I love the lamb platter.

Ended our day with coconut pie and coffee at Perkins around midnight. I have an 815 meeting, then conference until noon, then we check into the All Star Sports and head to Animal Kingdom for EMH until 8pm :cool1:

NOLA girls, you should be proud at how well your area is represented. We passed LSU people constantly - and today had lots and lots of beads and such being worn. Guess they are out of school this week? :confused3

Dinner will be breaded chicken cutlets, rice and carrots. I have alot of lettuce to use up so we will have a salad too. I will also make the meatloaf that I was supposed to make yesterday and have that tomorrow. Andrew and I have hair appointments late in the day so that will be easy to re-heat.

Thanks for the birthday wishes for my husband and the Mardi Gras info for next year. I also managed to find a 2010 calender and found Ash Wednesday, so it looks like the northeast and LA will be out at the same time. That's going to be one busy week. Oh well, it's the only time we can go.

Lauren- My husband had to take mucinex and it made him very thirsty, thought you might like to know in case you get thirsty for no reason. I had a big baby too, 9 pounds even. She was pretty long and hated to be swaddled or curled up. I think it felt good for her to finally be able to stretch out. She has always been in the 50th for weight and 80-90th for height. She does not get that from my side of the family. Good luck with Andrew's shoes and clothes. My husband is 6'6" and I can't find him shorts anywhere. His work boots are a 13 and can be tricky to find.

Kathy- I think we are all just remembering our kids being babies, I bet Lauren's to busy to worry. Besides, it's to late to back out now!

Becky- I love how the tomatoes look roasted on the vine. I'm going to try that with my cherry tomatoes this summer, so they should be ready around August.

Some kind of chicken for dinner tonight, I'm not sure what.

It's finally warm enough today to take the dog for a nice walk so I'm off to do that. My winter funk earned me an extra 15 pounds, so it's time to stop using the weather as an excuse. I'm sure I'll come up with another one.
