The What's For Dinner Thread - Feb '09(recipe index in OP)

Sheryl - I'm hugging you long distance!:hug: :hug: I wish I could be there to hug you in person! At the very least, I'd take you out for ice cream (that's my cure all!)

Bethany - Good luck dodging those pencils and scissors! That's part of the reason I got out of teaching! Having kids was the main reason.

Becky - the soup looks so yummy, not to mention the game hens and the SQUASH!!!! Super yummy!

Laura - Hooray for Caili! 2 levels is amazing! I trip over my own feet just watching ice skating, so tell Caili she's my hero! When is Liam's birthday? We have the twins birthday coming up on March 21, and I'm trying to come up with one party idea that both of them like. Not looking so good, right now.

Lauren - I'm glad your sugar and BP are good. Keep it up!

Ann - Having never been to either resort, I'm absolutely no help at all! I do enjoy reading the resort saga though. Makes me feel a part of things.

Scotlass - Enjoy your pancakes! My kids begged for them for dinner last night, but no such luck!

Dinner tonight is quick and easy. Fish sandwiches. We'll have a green salad on the side. I'm going to a birthday luncheon today and am making corn risotto to take. We'll eat whatever's left with dinner tonight.
 
Thanks for all the well wishes for Luke. He is like a new kids today. Amazing how even one day of meds makes a huge change! He is eating for the first time in over 24 hours...I treated him to Mickey D's.

Update on the "Resort Saga"...we did switch to WL today!!!!:cool1: :cool1: :cool1: We all love it here, so now I am really excited. This vacation is much needed for us all.

Kathy, thanks for the advice on my banking question. I made the change today and feel like I have some peace of mind. 2.75% is much better.;)

Lauren, take it easy Mom. How did you make out with furniture?

Lauren, it sounds like maybe you have a sinus infection. I hope they can give you something to clear it out. John gets those at least once a year and I know that they are really painful.

I have to use up the asian vegetables I opened up last night for the soup, so right now I am planning to make vegetable fried rice, and also a piece of chicken that I have sitting in a honey-soy-ginger marinade.

I just realized that I never put up the photos from Sunday's dinner. Here is the maple roasted acorn squash. I love this dish and it is so easy. When I was a vegetarian this is what used to be my main course at Thanksgiving.

Here are the cornish hens. They were cooked in a bourbon-maple glaze. My father really liked it. I thought it was only OK. Of course, my sinuses were killing me on Sunday so it was hard for me to eat anything.

Here is the bacon-fondue-scallion-potato casserole. I thought this was delicious. I have some leftover that I am going to turn into a crispy potato pancake and top with a poached egg for dinner....maybe Thursday.

Finally, here is a small pizza I made to go with the Oscars Sunday night, since I ate very little at family meal. I still have a bunch of this left in the fridge. I'm not used to cooking for just one! :laughing:

DROOOOOOOOOOOOOOOL!!!!!!!!!!!!!!! That squash looks amazing!! and that fondue..WOW!

WFD: nothing too exciting..probably just grilled marinated chicken, peas and rice or baked fries...
 

Hey all! Just a quick note to let ya'll know that we made it back safely last night. We had a nice time. Weather was a little cool for the beach, but it was beautiful and sunny. And the kids wore their dad down, and we drove over to WDW on Sunday for a day at MK. We already had tickets, so it actually was one of the cheaper options on our list of things we could do.

Leaving my mom some Zatarain's Jambalaya for dinner tonight--our little way of celebrating Fat Tuesday! Now it's off to work I go!
 
Glynis -- Liam's is the 14th. It will be funny if Lauren's Bean is born on the 7th...we'll have a WFD kid birthday each week.

Stephanie -- Welcome back!

I changed my mind on dinner because it is too cold to go to the store. I am going to have the leftover potatoes from Sunday (made into a potato cake) and some roasted winter vegetables.

I'll get there. Just making a change in decisions has helped some. Things are not going smoothly getting home care set up for Bob. So I've decided to get a 2nd opinion, just to settle my mind that this surgery is the only option. So I probably won't be doing this as soon as I thought. That has set aside some of my fear for now, but will probably complicate life if I put it off very long. I've realized my funk is really because I'm just plain old scared of this surgery. I'll have to work through that.

Bethany- Thanks for the info, that actually works out great for us. We are going president's week and the week after so hopefully the week after will be a little slower. I do miss the years we were able to go for long vacations in January though. Last year even January was a bit crowded.

Kathy- Wilderness Lodge is great, it's so relaxing there. Sometimes we just walk over from Fort Wilderness and get a coffee, next year I think we might go to Artist's Point for our anniversary. Sometimes we are fortunate enough to stay there. If we aren't able to stay at the comtemporary villas, I'm having a tough time deciding between WL and Beach club villas. (We stay on my parent extra DVC points, I'm a lucky kid) Beach club will probably win out because we enjoy walking around world showcase at night.

Laura- That's my birthday too. I always had corned beef for my birthday dinner because it was always on sale then, I eventually grew to like it.

It is a pretty resort. You will love it!

One of our funny stories from the last trip happened at Rafiki's Planet Watch. We had never been there before, and Caili had a grand time going around petting all the goats. The girl loves goats. Well, some dumb person brought his park map into the animal area (no paper allowed) and dropped it. The goat Caili was petting saw it and immediately started eating the paper, so Caili was running after the animal yelling, "Goat! Goat! Goat!" as if the goat was going to stop and give her the paper. So I had to wrestle the paper away from the goat. Becky still regrets not having her videocamera.
Sheryl -- I know it is tough to climb out of those funks once they start. I was in a bit of a winter funk myself after Greg left, but I am starting to feel better. Liam's birthday is coming up in a couple of weeks, so we are all looking forward to that, and Caili's skating coach told Caili last night that she is ready to move up two levels, so I am really happy for her

I love pancakes for dinner and used to make them on Sunday's. I also made crepes on Friday during Lent, my Mom loved both. Buddy hates breakfast for dinner and he cannot figure out a way to disguise pancakes as some sort of dinner so I very seldom will have them any more. He will toss his eggs in two pieces of bread and call them sandwiches but no dice for pancakes :confused3

I know that it always seems that you need to get the surgery done as soon as possible but I believe I would be doing the same thing you are doing. I would be afraid and I would want to make sure that this was the only alternative. When you have so many others you need to consider the decisions take on an even deeper gravity, I don't blame you for feeling a little blue right now. I do hope that both you and Bob feel better. Buddy is still under the weather, this cold things seems to be lingering.

Dinner is in the oven, roasted chicken, roasted carrots and potatoes, peas and gravy.

We're renting DVC in October so we'll be staying at Beach Club or Boardwalk Villas but I think on our MK day we'll go over to WL, can't you take a boat there? I'm pretty sure it's the only resort I haven't seen besides the values, haven't seen any of those either.

My mom's birthday was March 13, and Alan's is March 18. With St. Patrick's day in there, we have a lot of special meals in March. I always cook the kids favorite meal on their birthday, so for the twins, it means 2 entrees unless they choose the same thing. For my mom's birthday, we do salmon patties, or pork chops; Alan chooses his favorite meal, and there's Corned beef and cabbage for St. Patty's day. March is a big food month for us here! I'm just glad that Easter is not in March this year. When it is, it's almost overwhelming!

Wow, we have a lot of March birthdays! My husband's favorite meal is corned beef. It was the only thing his mother could cook and not destroy. I can't stand it though. I used to make it for him, but then there was the time he ate the whole thing in one sitting. I didn't want to be charged with manslaughter, so I stopped serving it.

My dinner tonight was breakfast-food inspired. I made a potato pancake out of the leftover cheesy, bacon potato bake from Sunday. I topped that with a poached egg (Becky's idea) and served broccoli rabe and roasted root vegetables on the side. Here's a picture (no, I did not come close to finishing it!):

Hi All!

All this talk of corned beef...I can't wait till March 17th! Hope I am up to cooking by then, if not we'll find a take out place.

Andrew is a March baby too! 3/10...did I tell you guys that he is now taller than some of my friends? He is really shooting up and already grew out of the mens size sneakers that I just bought him and almost out of the jeans. Oy!

Anyway, Tom brought Chinese food home tonight...God bless his soul. I LOVE chinese food and was so not up to cooking.

OK, the doctor update:
I have a sinus infection thingy going on but the OB will not prescribe for that...I would have to go to my GP. I was so not doing that today so he told me to take Mucinex, tylenol, Zyrtec and do the Neti and steam. I did all of the above and took a nap and feel a bit better. Hopefully I can sleep a little better tonight.

So, now the story goes...the baby was bigger than they told me 2 weeks ago. he was not really sure of the size since the report was in grams but they told me the baby was in the 65th percentile and he was actually 76th...:scared1: Soooo, now after I go for my last growth ultrasound this coming friday, he may want to do a C Section.

He also checked me out and I am 2cm dilated, 66% effaced and the baby is in the -1 position. Don't ask me what any of this means...

So that's my story and I am sticking to it! ;) Now, lets go route on Kris Allen! Yay!
