The What's For Dinner Thread - Feb '09(recipe index in OP)

Hey y'all,

I'm so behind I'm not even going to try to keep up. I'm still in my funk & can't seem to get out of it. Y'all won't believe it but I just took the Christmas tree down today. :sad2: I know it's pitiful, but it's finally out. No cooking going on here this weekend. Ate leftovers & went out for not so good Mexican yesterday. We had outback take out Saturday, so I think I'll fix salad with the leftover steak for dinner.

Lauren, So glad you're doing good today! I've been thinking of & praying for you!

Ann, Sorry you're little guy is sick. Hope it clears up fast!

Glynis, Hope Alan is all better & back to work tomorrow! ;)

We are bad examples of New Orleanians, tomorrow is Mardi Gras so everyone is off of work. DH & I will probably sit home & vegitate. I will have to cook something though. Everything will be closed tomorrow except Popeye's which will be sold out by 9:00.

Ack, I wanted to get my grill tanks filled in case we wanted to barbecue. Let me run, they might still be there!

Lauren I wonder if your sinus problem are from the weather systems that plagued us the last two weeks. I know it moved on cause I feel better. Sorry it landed over by you.:hug:

Sheryl I used to work for Pan American life that was based down your way. They were lock a few poor souls in and close up and leave town during Mardi Gras. Hopefully you are able to get your propane filled.

I had my car brought in for service hopefully they will find the problem out and it will be cheap.:upsidedow
 
So I'm out doing the whole "Responsible Adult" thing and I'm doing my laundry. I had planned to do it yesterday when I got home but it was raining. Why wash and dry clothes only to drag them through the rain?

Well we really are back to work. They collected our lesson plans first thing this morning. I still don't have the book back so I can't put stuff in for tomorrow, AND I have my schedule of parent conferences in there so I'm not sure who I'm meeting with tomorrow. Then, in the afternoon, some Important Person came in and observed my class for like 20 minutes this afternoon. We were off schedule too because I had to break up a fight between one of my kids and a 5th grader that he picked a fight with. My kid (1st grade) threw scissors at his face so the big kid choked him. Pretty typical day, I guess.

At least tonight for dinner we have leftover pizza and king cake!

I think I may turn into a big baby again...starting to get a sinus headache and chills. I just put my bathrobe over my sweatsuit, yes I look very pretty right now!!! Looks like my boys got me sick too. Ds got a little pep back and he is much cooler right now.

Stay tuned there maybe yet another resort change tomorrow. We are really considering going to our favorite resort because it has been a while and who knows with the baby and job situations when we will be going again.

Ann I am partial to WL. I love that resort. Last year we stayed in the Villas very nice too. I love sitting on the balcony with my coffee in the morning. I vote with the boy. The boy needs a balloon

Glynis- I'm glad Alan is feeling better. I hope he is well enough to go back to work tomorrow. From one woman who has had her DH home since December, I am so on your side!

I am partial to AKL, something about sitting on the balcony watching the giraffes.....hmmmmmm......balloons....giraffes.....balloons......zebras?????? Cannot wait for the next installment of "As the Resort Turns".

Sheryl- I cannot imagine what you are going through, don't be so hard on yourself. You have not even had time to really process all of the changes your family is going to have to manage so feeling "funky" has got to be part of it. If you just want to talk, I am here.

I finally cooked the chicken and I'm not sure if it is a keeper. It was good but I had to set the oven before I left for WW so it was a little overdone. It was supposed to be caramelized....not burnt. We had it with quinoa and Fr cut green beans, buttered noodles for Bud and Kady.

I diod change it a little, recommendations were in the reviews.

I added onion powder, lemon juice and red pepper flakes. They reviews also suggested a little longer cooking time but I think they were not using skinned chicken.

Delicious! Yummy caramelized legs, kids love these! So quick and easy and no marinating required. Just prepare the sauce, pour over the chook and pop in the oven!   1. Directions:.
  2. Preheat oven to 180 degrees Celsius.
  3. Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.
  4. Pour over the chicken.
  5. Bake in preheated oven for one hour, or until sauce is caramelized.
  6. Could also use wings or pork ribs.

Dinner tonight was pretty good. I baked the salmon with some Lemon Caper Sauce that I got from Wegman's and I roasted the potatoes and some zucchini.

Tomorrow night I have training so I will just grab something from McDonald's or KFC.
 
Wow the Moon Noodle Soup and the Carmelized Chicken Legs look and sound yummy. Tonight was rotisserie chicken in your choice of chicken salad or chicken tacos. I think one of my dinner problems is I feel like I have to make something spectacular every night and I need to focus on more simple meals. I think tomorrow will be grilled cheese and tomato soup!

It's Mardi Gras! I'll be spending the balmy "feels like 8" day at work for 13 hours. Maybe if I'm really lucky I'll catch some pencils or scissors. :sad2: :lmao:

I am off to early appointments today. I am hoping I can get some meds for this sinus thing. It has apparently gotten worse since my head feels like its in a vice and my eyes hurt when I move them. It woke me up last night so I majorly sleep deprived. BP and sugar are still good.

I have ground beef out...i may do meatloaf...quick and comforting.

Sheryl, Hugs my friend. You should have just decorated the tree for Mardi Gras! I hope you feel a bit better today.

Morning all!

Ann- I would pick Wilderness Lodge, it's one of our favorites. We've never stayed at Animal Kingdom, it's just to far from everything. We do enjoy wondering around when we go to Boma for dinner. Also, with the little guy, Wilderness Lodge is great for getting to Magic Kingdom.

Lauren- I have to say, I thought you would have a new family member by the time I checked back it.

I going to try to read back a bit and see what I missed.

Sheryl/Kathy- Speaking of Mardi Gras, do you know when the schools are out next year? We are planning our vacation and part of it is at Fort Wilderness (can't beat the price of staying in my parents RV) and the campground gets pretty crowded then. Just trying to plan ahead.

I think one of my dinner problems is I feel like I have to make something spectacular every night and I need to focus on more simple meals. I think tomorrow will be grilled cheese and tomato soup!


Spectacular is overwhelming. In our house as long as we eat we are good.

Dinner is some sort of chicken. I have two roasters and cannot have them tomorrow.
 
Lauren, it sounds like maybe you have a sinus infection. I hope they can give you something to clear it out. John gets those at least once a year and I know that they are really painful.

I have to use up the asian vegetables I opened up last night for the soup, so right now I am planning to make vegetable fried rice, and also a piece of chicken that I have sitting in a honey-soy-ginger marinade.

I just realized that I never put up the photos from Sunday's dinner. Here is the maple roasted acorn squash. I love this dish and it is so easy. When I was a vegetarian this is what used to be my main course at Thanksgiving.

Here are the cornish hens. They were cooked in a bourbon-maple glaze. My father really liked it. I thought it was only OK. Of course, my sinuses were killing me on Sunday so it was hard for me to eat anything.

Here is the bacon-fondue-scallion-potato casserole. I thought this was delicious. I have some leftover that I am going to turn into a crispy potato pancake and top with a poached egg for dinner....maybe Thursday.

Finally, here is a small pizza I made to go with the Oscars Sunday night, since I ate very little at family meal. I still have a bunch of this left in the fridge. I'm not used to cooking for just one! :laughing:

Ann -- I hope Luke is feeling like himself today.

Aimee -- I am glad you are getting to spend more time than expected in the parks. That is always a good thing! We always enjoy AK. One of our funny stories from the last trip happened at Rafiki's Planet Watch. We had never been there before, and Caili had a grand time going around petting all the goats. The girl loves goats. Well, some dumb person brought his park map into the animal area (no paper allowed) and dropped it. The goat Caili was petting saw it and immediately started eating the paper, so Caili was running after the animal yelling, "Goat! Goat! Goat!" as if the goat was going to stop and give her the paper. So I had to wrestle the paper away from the goat. Becky still regrets not having her videocamera.

Sheryl -- I know it is tough to climb out of those funks once they start. I was in a bit of a winter funk myself after Greg left, but I am starting to feel better. Liam's birthday is coming up in a couple of weeks, so we are all looking forward to that, and Caili's skating coach told Caili last night that she is ready to move up two levels, so I am really happy for her. Anyway, here is a hug for you :hug: and I hope your mood brightens soon.

Robin -- Happy belated birthday to your husband!

Bethany -- I can see why you are looking for a new job.

I think I am making an Asian noodle bowl dish, similar to what Becky had last night, but I am putting fish in mine. That involves a trip to the store, though, so I might see if I have anything else. It is really cold here today.
 
Rogue26- I forget the exact dates, but President's Day and Mardi Gras are going to pack a 1 2 punch next year. They are together in the same week, and the. Northeast has President's Day week off and Louisiana has some or all of Mardi Gras week off. With both areas converging on WDW at the same time, it could be very crowded!

I'm on my lunch. Only 6 more hours left of work today! At least it pays pretty well...

This is my family's favorite meal! No lie! I make it every Friday or Saturday night. This last time, I made the grilled cheese sandwiches, cut them into small cubes, and used them as croutons in the soup. It was nummy!
