The What's For Dinner Thread - Feb '09(recipe index in OP)

1 can chickpeas, rinsed and drained
1/3 cup lemon juice
2 cloves garlic, minced
3 tbsp. tahini
2 tbsp. olive oil
handful of parsely
1/2 tsp. ground cumin
salt and pepper to taste

Blend all in a food processor until smooth, adding a little water if needed to get the misture moving. Place in bowl and garnish with olive oil and paprika.

Dinner tonight will be an oriental beef stir fry. Not sure what we'll have with it. Maybe I'll make some fried rice. Hmmm. It will depend on what we have on hand. My kids are out of school today, so it's bound to be a crazy day here.

I do want to post the recipe for the dessert I made yesterday. So, here you go. For anyone wanting a quick and easy dessert, this is it!

Lemon Crumb Bars

1 pkg. lemon cake mix
1/2 C. cold butter
1 egg
2 C. crushes saltine crackers
3 egg yolks
1 can (14 oz) sweetened condensed milk
1/2 C. lemon juice

In a large mixing bowl, beat cake mix, butter and egg until crumbly (I used a pastry cutter for this). Stir in the cracker crumbs; set aside 2 cups of the mixture for topping. Press remaining crumb mixture into a 13 X 9-inch greased baking dish. Bake at 350 degrees for 18-20 minutes or until edges are lightly browned. In a small bowl, beat the egg yolks, milk and lemon juice. Pour over crust; sprinkle with reserved crumb mixture. Bake 20-25 minutes longer or until edges are lightly browned. Cool on a wire rack. Cut into bars. Store in the refrigerator.

WFD: grilled chicken, salad ( aerogarden lettuce again ;) with gorganzola, red onion and walnuts..and baked french fries :)

Didn't sleep well last night and I have a migraine. I think it's because I'm worried about my boy. He came in from Pensacola last night sad, he didn't get to pitch all weekend. He was told that he'll get another shot when they play in WDW and if he doesn't do well they're going to redshirt him for the rest of the season.

Do you prefer fresh or frozen? I always have the frozen lemon juice on hand, but do you use fresh in your recipes?? Just wondering because both Glynis' and Becky's recipes used lemon juice today.

Ann- I also use fresh as much as possible. I don;t have a juicer, I just squeeze my 1/2 lemon after rolling it around on the counter.

Ingredient
Season: available year-round
How to prepare: Juice lemons at room temperature to yield more juice. If your lemons have been refrigerated, heat them individually on high in the microwave for 20-40 seconds. Then roll the lemon firmly on the countertop soften it.
Substitutions: 1 medium lemon yields 2-3 tablespoons of juice 5-6 lemons will yield 1 cup of juice.

Hello everyone.

Congratulations Lauren, Tom, and Andrew!! What a perfect looking little boy, with a perfect name. Andrew must be so proud.

Ann- I love my little wooden lemon reamer, it gets every last drop of lemon juice and it's easy to clean. If I'm not using the zest, I'll zest it anyway first and freeze that. Lemons are 3 for 2 dollars here, I'm sure it's about the same for you. I like to get my moneys worth from each lemon. I do think they make some really good quality frozen lemon juice, but I don't know if you can get that retail. On the food network I just say Giada make an eggplant hummus with cannalini beans, it looked really good. I don't know if it was a new show or a repeat. At some point I'm going to look for the recipe.

It's raining and gross here today, so we are having spaghetti and meatballs. For all of you northern girls, I saw crocus' yesterday while I was cleaning my yard, spring really is on it's way! I'm feeling a little off today, so I'll see you all tomorrow- I think it's just shock from seeing the sun 2 days in a row.

We are having our own issues with the time change. Alexis had a tummy ache this morning, only after Chris pulled into the school parking lot. She called me & I told her to make her go. I get a call about 10:30 to come get her. I tried to talk her into staying when I got there, but no go. Brought her home, gave her gas-x, then she wanted to eat! Inhaled a waffle & some of the lemon soup. Then she agreed, she was fine & "agreed" to go back to school!. :upsidedow

I had planned on fixing chicken enchiladas for DD today. She is worried she might get the "pink slip" today.:scared: But now it's late & I've haven't even started the chicken.

Kat, Kyle is fine, I hope Mom feels better too! :hug:

I was awake most of the night with IBS pain, rich foods on Saturday & worry about DD probably caused that.

Lauren - Thomas is just so beautiful.

And I love his name.

Its the boys middle name after my dad.
My dad died 9 weeks before I had him and i did think about naming him Thomas.
But I had already told my Dad his Grandson was going to be called Matthew so we stuck with it and gave him Thomas as a middle name.

We had 3 boys born in to family in the 6 months after my dad passed and they all have Thomas as a middle name.

My dad was well loved.

I think that's a wonderful legacy! My grandfather's name was Hunter, and all of my siblings have used that name in his honor with one of our sons. We have an Ian Hunter, a Jacob Hunter and a Chris Hunter.

If by fresh you mean in a bottle, that's what I use. I've never tried using frozen.

Spent the weekend on the couch with a nasty cold. :sick: Still feeling a little crudy today, much better then yesterday, but came in to work for half the day.

I really hope she was able to get the medication situation worked out. It's no fun to be in pain.
