The What's for Dinner Thread - August 2014 (recipe index in OP)

Beer Cheese Soup


I tried this one yesterday/last night. It was a big hit.

I did modify it some by substituting celery for onions. Also I topped it with crumbled bacon. Served with soft pretzels.


This is something my hubby would go for in a minute... I wounder if I could modify this for me?

I think we decided on Low Carbs dinner for March. I think this one was so Brandi could do something and also because a couple of us are going lo-carb at the moment.

This goes with what I was going to suggest. I was going to say let's do gluten free, dairy free and refined sugar free. That way you guys can give me some ideas! :lmao: I actually made a great dinner last night on this plan. I'm not omitting dairy, but I'm not going hog wild with it. Just allowing myself a little cheese every so often. Like for breakfast I made an omelet with the leftover roasted vegetables from last night. I used a slice of provolone to give some flavor and creaminess.

Tonight we are going out for dinner. I want to eat fish where ever we go.

Well it would be nice to see some weight loss. Other than that, I'm coping. At least by allowing some dairy I'm not super depressed and feeling like my life is ruined. I'm going to go eat and apple with some blue cheese for my lunch.
 

Beer Cheese Soup



Prep time: 10 mins

Cook time: 8 hours

Total time: 8 hours 10 mins


Serves: 5


Ingredients

  • 32 ounces chicken broth
  • 16 ounces beer
  • ¼ cup cornstarch
  • ¼ cup butter, melted
  • 1 cup carrot, diced very fine
  • 1 cup white onion, diced very fine
  • 4 ounces cream cheese
  • 8 ounces Sharp Cheddar Cheese, grated
  • sea salt, about 1 teaspoon
  • black pepper to taste


Instructions

  • Add chicken broth and beer to slow cooker, and whisk in cornstarch until smooth. Add melted butter.
  • Add carrots and onions to slow cooker, stir.
  • Cook on Low for 8 hours.
  • Add cream cheese, let the cream cheese melt for 20 minutes before adding the sharp cheddar cheese.
  • Stir in cheese, and season with salt, about a teaspoon is what I used, add gradually to your taste. Add pepper to taste.
  • Ladle into bowls, and serve immediately.

Looks like Low Carbs might be a good theme. Hopefully it will work for Ellen as well.

You know for me when I started I did the 6 week detox. And it worked for me for 1 reason, it had a time limit. I knew I could do anything for 6 weeks. At the end of that 6 weeks, I felt great, my skin looked so shiny and tight and refreshed, my hair looked fluffy and shiny, and I lost like 20 pounds. That was the motivation for me to continue to do it.

Now I have added some things back in and there are days where I eat what I want no matter what it has in it, but I go back to clean eating the next meal or the next day. Maybe the best way for you to do this is but a time limit with some realistic expectations.

2 weeks and 3 pounds, 1.5 pounds a week is lot of weight to lose in a week. But that would require being strict.

I don't want you depressed or anything, so if it makes you feel like, then you should not do it. Trust me your life will never be ruined... No matter what you eat. You have a loving wife, an amazing family (born into and friends). We are all part of your support system and here to help you no matter what.

I have a huge confession to make to all of you. I have started Nutrisystem. I was on the plan about 5 years ago and really loved it. I hit my goal and was able to maintain for over 2 years and then I went through menopause. My Thyroid went bezerk and you all know I have had a few heart problems. I gained almost 30 pounds almost over night (thanks to my thyroid). They caught it and now I am on medication but the weight stayed. I was stupid enough to think that once I got it regulated that the weight would go off - NOT!!! So I have (as you all again know) tried everything - I am with a fitness trainer 3 times a week and exercise daily. I feel so much better, but the weight just won't budge. So I am trying Nutrisystem again. I had such great success with it before so I am really thrilled to get back on plan. My only concern - TRULY - is not being able to connect with all of you. My meals are planned every day, so there will be no cooking for me every night. I have made the decision to take Sunday's off and cook. That was probably the hardest thing for me last time, as I love to cook and bake. So I will be cooking on Sunday's - totally on plan but not on the NS food.

So there ya have it. I love you all and you are all the best part of my day, but I won't be able to - at least for awhile - be able to post any dinners you all would be interested in. I still would like to pop in and say hi though!!

I am taking off a bit early today as Ethan has a wrestling tournament in Kearney at 5. Then tomorrow and Sunday we will be at tournaments. So there will be a lot of sitting this weekend and waiting. Wrestling is sort of like track - you wait for hours (literally) for 3 minutes of action. Oh well he loves it and we love being there for him.

Ellen, That is no excuse for not being here. No one is eating what I cook on here, but I come and say HI all the time, so I better see you here, and I better get updates on the family! Ha Ha you know I trying to give you motivation, please take it that way!

I really hope that NS works for you. I can so understand what you are going thru. I have been working out and eating right and doing everything to the letter and I have not lost anything in months. It get discouraging, but I keep plugging along. Please share any secrets you learn along the way.

Ellen - Good for you for getting back to a system that works for you. And you know that this thread is more than just what you're eating for dinner so I hope you will keep checking in....and telling us what you're having for dinner. It's all about giving us ideas! And I love hearing about your life and the family check-ins.
 
Ellen, you MUST keep checking in here! We would totally miss you. Besides I'm curious what a nutri system diet feeds you and what does Doug do if you are getting meals deliver each day?

We ate Thai/Japanese. I had tuna sashimi, beef satay, egg flower soup, and pad thai.

Tonight is supposed to be stuffed peppers.

I don't know why they call it egg flower soup, it's just egg drop soup. I guess when you drop the eggs into the broth they make "flowers" on the soup. That's all I got. :confused3
 
Good morning.
Last night, we headed into the city to enjoy Moomba celebrations and the fireworks. We went in with a friend of DS and his mother. The friend had just got a new camera and the mother asked if we would give him some pointers. We had a great night doing not a lot! I need to unpack the pictures from the camera.
WFDT? I have no idea.

We're going to make pita pizzas. It's not exactly low carbs; but it'll be fine.
