I didn't take pictures but the Okonomiyaki recipe is as follows:
- 1/2 head cabbage, finely sliced
- 2 carrots, grated
- 3 stalks spring onions, sliced into 0.5 cm thickness
- 2 boiled potatoes (Place in cold water and cook for 20 minutes), diced
- 1 cob corn (cooked for about 4 minutes with the potatoes when the water was boiling), corn removed from the stalk
Mix all the vegetables together.
For the batter, mix the following together
- 3 large eggs (or 4 medium ones)
- 1.5 cups of plain flour
- 1 - 1.5 cups of fish stock
I added enough stock so that the batter was probably a bit thicker than whipping cream.
Add the batter to the vegetables. It should coat the vegetables completely and not pool at the bottom, which is why I make it a bit thicker.
Heat a pan on medium heat with some oil in it.
Place about 2 spoonfuls of the vegetable mix in the pan and press down with a spatula. I use a large pan; so I can pretty much get 3 patties in my pan.
Cook for about 3 - 4 minutes and then turn over. Cook for another 3 - 4 minutes on the other side.
Sauce:
- You need okonomiyaki sauce or tonkatsu sauce which I got from the Asian grocer.
- You'll also need some Kewpie mayonnaise for this. It's a brand of mayonnaise but I think it is runnier than the mayo we would get from the supermarkets. Check your Asian grocer if they have an alternative.
On each of the cooked patty, pour a little okonomiyaki sauce over it and the squeeze a little mayo on top.
