The What's for Dinner Thread - August 2014 (recipe index in OP)

Happy Tuesday all!!

PIO ~ Oh man I can't tell you how much I loved the food.........and the Naan, OH.MY.GOODNESS. I can't wait to take Doug there as he will love it also. While I was in Lincoln I bought some different sauces to make some also at home. I can't wait!!

It is a true fall day out today. As I was doing dishes last night I looked out to the yard and saw some leaves on the grass. Yep, fall is here. The trees are just getting a hint of changing colors. They should be beautiful this year with all of the rain and cooler weather.

WFDT ~ Chicken fajitas, Spanish rice and homemade tortillas and of course all the fixins.

Ellen, I assume you mean Corvettes and not WWII Veterans. :rotfl2: Not my favorite car, but they are pretty to look at. I especially like to see the evolution of the body style. I like the late 50s best.

Last nigt we had pork chops, stuffing and gravy. I was tired and had to run to the store for the gravy packet so I grabbed salad from the salad bar as our veggie.

Tonight is band night so dinner is drive through.
 
Ellen, proud of you, nice to see you branching out. I like Indian food, but I really really like Lebanese food, oh the sauce, to roasted meats, the bread. Yummy....

Last night for dinner was taco salad, and I used the morning star crumbles, I know I was cheating with processed food, but I just did not feel like making everything. But it was a huge bowl of veggies, and I combined some homemade salsa with some homemade ranch like dressing (almond milk) to make the dressing, it was really good.

Hi everyone. That's two very busy work days down this week and one more to go. Is it sad to admit that I'm looking forward to the Mad Dash in a couple of weeks time only because it means I get to escape the Mad Workplace for a little bit?

Good morning all............

.............and today is a much better day than yesterday. I just have to tell you all - you don't realize how much you use internet until you don't have it. I got to work yesterday and I had no internet at all. My IT guy was about 100 miles away and not back in town till around 4. So I twiddled my thumbs pretty much all day yesterday. I figure that at lest 85% of my job is on the internet. Yesterday was bill and pay day and I couldn't even access Church Windows to do that. Oh my there were a few unhappy people. But I came back down and then talked to Century Link for over an hour to get the new modem that Dave put in up and running and Waalaa I have internet again. Thank goodness!!

Alison ~ I knew you didn't care for them - and yes they were corvettes - but I just couldn't believe how many there were and you are right, it is neat to see how they have changed over time.

Brandi ~ I know - Indian food from a meat and potato girl. :rotfl2:
I will have to try Lebanese food. There seems to be all different places in Lincoln. We all have decided that we are going to try new places. We have put different restaurants in a bowl and each weekend we are going to pull out 3 places and that is where we will eat over the weekend. We have found we tend to eat at the same places, so this should be fun.

PIO ~ There is NOTHING better than Mom's cooking. Oh how I miss it. :sad1:
So are you packed yet for your trip? It is coming up quickly.

Doug and I (and 5 other adults) took our Middle School UMYF to Kearney to see the Skit Guys. Oh my goodness what a hoot they were. They are best friends from High School that travel the country with their Christian humor. They did a bit about Adam & Eve in the Garden that I belly laughed at. They are on UTube if you all are interested. They were great and even the kids thought they were good.

We have to get packed tonight as we are headed to Lincoln again tomorrow. We play Illinois on Saturday. It is a night game - doesn't start till 8, so I have volunteered to stay home with Lilly. Her bedtime is at 8 and then I will just watch it on TV. The rest won't be home till around midnight.

Ellen - My worst nightmare right now is no electrics! I don't know how we would survive. No internet, no ATM banking, no mobile connectivity, no television......:scared1:

WFDT? Dinner tonight was take-away. Its school holidays here and the boys were home on a Friday night. So, we decided on burgers, japanese and fried noodles. Yup. All 3 of us wanted different things. Thankfully the local strip shops has a great range of food places that we could all pick up what we wanted.

We're heading to the market tomorrow morning. I've been running down my freezer stores and have probably taken it down a little too far. I figure we can probably get a few things to last the next two weeks. Is it sad to admit that I'm looking forward to going to the market??
 
WooHoo.........It's Friday!

PIO ~ Absolutely not! Right now I seem to go to the grocery store almost every day. But when I don't do that (And I really don't like going every day) and actually plan my meals and have a list I truly like doing the shopping. My biggest yuck is getting home and putting it all away. Man I hate that job :rolleyes1

Doug and I are leaving work at noon today. Before we leave for Lincoln we are going to get our Flu shots. I really want to have them (for all of us) before we leave for Chicago. Big city=many more people!! Have you all gotten your yet? If not - Don't forget! This years strain can be really nasty.

After our shots we are headed to Lincoln for the game tomorrow. GO BIG RED!! We play Illinois. It is suppose to still be in the high 80's - man I am getting tired of these hot temps. Yesterday here it was 93 - that is just way to hot for this time of year. All the kids are coming to Matthew's so it will be so much fun. We all have tickets so will go our separate ways. Marty & Stephanie are doing BD's tailgate and Matthew's branch of the Bank is doing their tailgate also. I am staying home with the littles - it doesn't even start till 8 and that is just way to late. But I am kinda bummed that I will miss out on the tailgates. They are so fun and especially with my kids are in charge.

You all have a great weekend and we will talk on Monday.

I haven't had a flu shot in a long time. The only time I had one, I was so sick for that winter almost immediately after I had the shot. It was terrible.
I haven't been back for a repeat experience and have just been working on keeping my food 'wholesome' as possible. And taking immunity boosters seem to work as well.

It's our football finals weekend this weekend. The two teams are the Sydney Swans and Hawthorn Eagles. Funny you mention Big Red....Sydney's colours are Red and white.

Pumpkin Filo



It's Vegetarian Weekend for the Diners! I couldn't quite go vegan but here's what we had for dinner.


My starting ingredients:






  • 1 kg or 2 lbs pumpkin, diced
  • 1 medium onion, diced
  • 1 x 400 g tinned chickpea, drained and rinsed
  • 160 - 200 g Feta, diced
  • 1 egg
  • 1 teaspoon cumin
  • ½ teaspoon nutmeg
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 2 tablespoon oil
  • ¼ cup water
  • Sesame seeds


You'll also need Filo, thaw according to instructions, and some melted butter or olive oil for the pastry.






Heat the oil in a pot and fry the onion until translucent.






Add the oregano and spices and stir until mixed through.






Add the pumpkin and the water.






Cook on a low heat for 10 minutes. Stir occasionally to stop the pumpkin from sticking to the bottom. Remove from heat and cool for 30 minutes uncovered. The mix should be moist but not wet.






Add the chickpea to the mix.






Break the egg in and mix thoroughly.






My DH is lactose intolerant so I reserved some of this mix aside for him. I added the feta cheese to the remainder and mixed it through.






On a clean surface, place one sheet of filo and brush with olive oil or butter. Because my DH is lactose intolerant, I used olive oil. Next time, I'm using ghee. Top with another sheet of filo.






Place some of the mix along the long edge, about 1/5th of the way up.






Fold over and continue to roll the filo until you get a long cigar roll.






Place on a baking tray and arrange it so that you start to make a snail's shell. Continue to make more of the cigar rolls and continue to form the shell on the tray. There are about 4 (or was that 5) rolls in this shell. Brush the top with some oil and sprinkle some sesame seeds over the top.






Bake for 40 minutes in a preheated oven at 180 C.






I made a shell with about 2 rolls for my DH.






Cut the snails into quarters and serve with a salad.

Busy weekend for us.

Thursday we had deep tissue massages. Heaven.
Friday we went on the tall ship
Saturday was a watch party for the Texas A&M alumni group
Sunday was NFL foot, we went to see the Ravens beat up on the Carolina Panthers.

Now it is Monday and back to work. Whew, I am still tired from the weekend being so busy.

Last night for dinner we had Butternut squash, Red bell pepper, cucumbers, tomatoes, and tofu mousse.

PIO ~ Sorry to hear about the flu shot. I have found that since I have been getting the shot I hardly ever even have a sinus infection anymore. They are predicting that this year could be terrible. I have never been very lucky and I won't take the chance. Matthew is just like you though, he swears that the flu shot makes him sick.
Your meal looks amazing. I wasn't home, so I didn't cook anything. Maybe this week I will make up for it. :rotfl2:

Brandi ~ I loved seeing you and David on FB. You looked like you were having a great time. I agree, sometimes we need Mondays to rest up from the weekend. :thumbsup2

Our weekend was a mixed bag of fun and complete down time. These late night games really play havock on a body. Lilly bug and I had a ball. We made a picnic and went to the park. Oh my, if you ever need a boost in life spend time with a 2 year old. They are priceless and there is no way you can be in a bad mood. What fun we had!! The rest of the family left early afternoon as Marty and Stephanie were in charge of their tailgate and Matthew and Doug left a bit later as he was helping with his tailgate. Lilly was in bed by 8 and I watched the game - We WON!! I was in bed sound asleep when they got home around 1 am. So needless to say everyone was pooped yesterday. We did get up for Church and then went for breakfast. We did nothing the rest of the day - NOTHING!!

Last hot day today. It is suppose to rain later tonight and then into the 70's the rest of the week. We are to get to the high 80's today. I am so over this hot weather.

WFDT ~ Beef stroganoff, Harvard beets, and bread (I got the best bread at the Farmer's Market this weekend) and jelly.

I know what you mean about the down time, David and I need a weekend just to catch up on things we are letting slide.. But I think it might be after the holidays before we can catch up. With this much football taking up the weekends I have no idea when we can kick back!

PIO - David and I have not had a flu shot in about 15 years. We decided a while back that it just was not worth it for us, they are free for us, but we pass anyway. I must say that we are pretty healthy so until times change, we will stick with what is working for us. I have heard that if you start taking them you have to continue taking them, but if you have not been that it is better to wait until you really need one.
 
I don't think I've ever had a flu shot. My chiropractor of many years ago said he had evidence that they caused Alzheimer's. He was kind of crazy, but I I liked him and he seemed to have some good information.

We didnt end up making any dinner last night which was going to be my vegetarian dinner. I'm thinking of making it tonight, but Fran wants something with meat in it. I was going to make sausage in a roll for the meatloaf night, but Fran has to get a crown today so I had planned something mushy for tonight. Well see how things go.

Seems everyone had a busy weekend. Some busy with leisure and some with greuling work. I was in the greuling work category. We still have a lot of stuff to get out. One room is full of books and other stuff. There are still lots of clothes, but I'm not sure we're taking a lot of the stuff. Much of what's left is going to be sold in our estate sale. Today I hope to finish up moving our kitchen contents. I didnt make room for all my serving platters at the new house so I need to do some rearranging in my laundry room pantry.

I have been in the give it away mode for the last year and half I would say. I am getting rid of more stuff and not bringing more back in. I am not sure what happened along the way, but I just don't feel the need to bring home anything from the places we visit. I guess Pictures are enough for me.

But I would love to be able to pretend I was moving and just take what I needed or wanted. This is a wonderful opportunity you have to go thru everything and decide to keep or sell.

PIO - Filo or Phyllo dough are both made with butter so that would put it in the 'No' column. But, if I wanted it I would use it, I am trying to make better choices and to watch my intake, but I had sugar this weekend.... :eek:

The Filo pastry here is made with oil. Is it made with butter there?

They do recommend that you brush the sheets with butter; but I used olive oil instead. I think it's a little strong for the filo and will try normal oil next time. DH thinks I can use ghee instead.
 
Morning friends,

Sorry I was MIA yesterday - computer problems again. I think this time it is fixed right and will have no more problems. Oh what a pain!!

I am again playing catch up with not having a computer yesterday. At least this time it wasn't in the middle of bill and check writing. We have a conference here today so the church is buzzing. I am going to hide out in my office and hope no one sees me. :p

WFDT ~ I am helping with Faith Friends and we are having Spaghetti tacos. Doug is grilling himself a steak.
