My go to accommodation at Disneyland is Desert Inn and Suites, the motel beside Dennys and opposite the pedestrian entrance at Harbor Boulevard. I have stayed here multiple times over the last number of years.
This year I was pleasantly surprised to see they have now opened a small convenience store. They used some of the space at the breakfast room. In the morning time, during breakfast time, the store is open. At all other times, you have to ask at the main reception and they will open it from the inside and let you in.
It is self service payment with card only, no cash. They opened it around March / April 2025 so not that many people know about it.
