The What's for Dinner Thread - August 2014 (recipe index in OP)

Morning girls and Happy Monday!

Sorry I kind of bailed since I got home. I was so totally swamped since I have been back. Our Church Charge Conference is November 9th, but the conference book has to be in the District Superintendents had 10 days before the meeting. I had 3 days to get payroll out, bills paid, bulletin finished and the Conference book finished. Welcome Home Ellen!! But I am proud to say I got it done. On Thursday night I worked till 8:30 - plus there was a finance meeting that night and they decided I deserved a nice raise for 2015. Didn't even have to ask for it. Wow, I was thrilled!!

Brandi ~ Oh sweetie, you are lucky there were pictures on FB - most of those were posted by my kids. I am just not savvy enough to know how to get pictures on here. :rotfl2: :lmao:

PIO ~ Welcome home - where is your trip report? I can't wait to read this one, since the other one is finished. I loved it by the way!!

Kimmer ~ Where are you? I miss you!!

We of course went to the Rutgers/Nebraska game on Saturday and it was so hot. The temps were high 80's and we all got sunburned. I just can't believe it - the last week of October and we needed sunscreen. Yesterday it was close to 90 and I guess we broke records all over the state. Today it is back to 60's and it feels great. Oh the joy of living on the Plains.

WFDT ~ Stuffed pork chops (wild rice and raisins), roasted brussel sprouts, sweet potatoes and peach cobbler.

Wow you have been busy and always are! I have no idea how you keep up.

David and I had a great weekend in Tennessee, and made it back home safe and sound, and will take all week to catch up on sleep.

I posted some pictures on Facebook.

Last night for dinner was pork chops (david) and a huge salad.
 
We're into the mad dash countdown now! I really need to get Fran to give me her clothes to pack. Once I finish breakfast and coffee, I'm going to try and get her to do that!

Ellen - I'm glad you survived your busy days. I'm so glad that I don't really work anymore, dealing with deadlines, raises and all that stuff is just too much for me. Congratulations on the raise!

Well dinner did not happen as planned. We ended up having black bean burgers wrapped in lettuce

Today is a hard hard day. We are having a funeral today for a 17 month old baby. She was born with many problems and some are saying it is a blessing but man it was hard seeing that tiny coffin. Just doesn't seem right. We are serving 250 for lunch so the ladies are busy in the kitchen. It is a beautiful day out - a bit cold - but the sun is shining and for that I am very thankful. Squeeze and hug the ones you love - you just never know!!

Ellen - It's so sad to say goodbye to a precious young one. My best friend from University lost her 4 year old to a congenital disease. It was such a tough time and I hope no parent ever has to go through it EVER.

I'm so stuffed. I need to stop eating carbs and sugar and lose some of this extra weight I'm carrying. :(

I can honestly say that I love life and having David by my side is the most precious gift God has given me. We always have fun no matter where we are or what we are doing, life is just too darn short.

Oh your day sounds heartbreaking, for a tiny baby to go is hard on the heart. She is being taken care of now and all her problems are gone. Prayers for the family. {hug} my friend. :hug:

Dinner sounds very fall'ish how was the soup?
 
I think you saw the post on the TR. Not done yet, but closer.

Tonight is drive through for us. No more cooking for me until after we get back.

Have a wonderful time and can so understand that drive thru part.

Do you try and empty the fridge before you leave? David and I are always cooking at the last moment to try and use everything in the fridge, even if goes in the freezer for when we return.

next trip in 16 days.. We will fly after work on Friday... to Cleveland, go to Rock in ROll hall of fame on Saturday, meet up with 200 other Aggies, and go the watch party for the A&M vs Mizz game Saturday evening, and Sunday we are going to the Texans vs. Browns game, the bright and early Monday fly back and go straight to work! Talk about a long weekend to recover from! UGHHH But it will be fun.

So what all did you have at your mom's?

Your next trip sounds like so much fun. We are going into Lincoln on Friday for our game with Perdue and then we are home for 3 weeks - Thank goodness as I really need to be home for awhile.

We are having our Trunk or Treat tonight. I have never taken part as I am usually in the Kitchen, fixing the meal that follows, but tonight Doug and I are decorating our trunk and handing out candy. We live in the country so never ever get trick or treaters. We usually go into Jay and Elizabeth's and hand out candy so they can take the boys out. But this Halloween is on Friday and we are headed to Lincoln as we are playing Perdue on Saturday. So at least this way we can still party with the boys. I have bought all sorts of decorations and tons of candy. It should be a great time!!

We bought plenty of candy, and I even convinced David that we needed our own bag... so we have a huge bag of mixed candies to pass out and a small little bag for us. Speaking of sugar and carbs.
 
Brandi - Mum made an Indian Egg Curry with okra, stir fry beef with bittergourd, mushrooms with greens with oyster/soy sauce and a broth soup. We had it with basmati rice. Her food is always delicious!

Ellen - I just go cold turkey. I'm not having any pasta or bread. I did have a little rice last night but normally I cut out the rice and noodles as well. With the sugar, it's just a matter of not having any added sugar. I tend to eat fruit and vegies so there is natural sugar in my diet. I don't have soda or dessert.

Kimmar - Enjoy the Yachtsman. I'm totally envious.



I'm still not in the kitchen routine yet. So, we're doing another take-away for dinner tonight. We're hitting the local hamburger joint for dinner.

Hey ladies! I'm not sure we'll be having "dinner" tonight. On our first flight we had some spinach tortellini for I guess lunch. We both just had some brisket in a tortilla at the Centurion Lounge at the DFW airport. I called mine a burrito since mine had beans. She called hers a taco since she added lettuce and no beans. We have another flight at 8PM to our final destination. Maybe they'll serve us food on that.

I also have a box of Velveeta shells and cheese in my suitcase. I forgot the Keilbasa! I also have a complimentary chair massage in 10 minutes! Love this lounge!

We don't have that much in the fridge other than condiments to get rid of. All our meat is in the freezer until I'm ready to cook it, and if we have veggies that go bad, I just toss them. If you saw my fridge, it would be tough to empty it!

PIO ~ Your dinner sounds amazing as usual. Aren't Mom's the best?! To this day I miss my Momma's fried chicken. I try to make it just like her and it never ever tastes even close. Enjoy!!

Brandi ~ Doug always makes me buy Halloween candy that he/we like, as if there is any left over he gets it. :rotfl2: No sense buying it if you won't even eat it. :rotfl:

Trunk or Treat was a huge success last night. It really helped that the weather was perfect, no wind and high 60's. I got my trunk decorated and they swarmed in. I had a bag of 95 pieces of candy and had to run into the church and get some of the candy I have in my office. One person kept track and they have 157. So I call that a success. We had a nice dinner and fellowship after so a great night. I had a ball looking at all of the outfits. There were only 2 Elsa's which really surprised me and one Olaf.

WFDT ~ Beef stroganoff (thanks Kat), roasted beets (I don't know why but I ALWAYS have beets when I have stroganoff), lettuce salad and bread and jelly.
