The What's For Dinner Thread - August '09(recipe index in OP)

Such a rainy gray day here.

Lauren, you have so much on your shoulders & with every move there is such mixed emotions. If you need some time to regroup take it. I know Riley will be ok but I can't imagine how you feel just know that I'm thinking & praying for you.

Kat, you are marking such a painful time. No worry about not reading back. Be kind to yourself & know how remarkable you are so I thank your Dad....

Aimee, I wish I could enlighten about food & eating. I'm stress eating & nothing fits so if you discover the secret please let me know. How are you feeling?

Becky, dinner looked delicious. I don't know how you cook when your sick. Just amazing:)

Robin, Laura, Lauren, Ann....can't wait to see all the costumes.
I have to make another run to the store for candy, with Halloween on a Saturday & good weather I need a few more bags.


More cleaning & purging today:confused3when it will start I don't know.....still having tea & morning t.v.
Dinner tonight is pork chops.....
 
...sure, no prob....and it was so easy:

Sprinkle some salt, black pepper, and garlic powder on 3 to 3-1/2 lbs. ribs (raw). Place in a shallow pan (like a cookie sheet) and heat in broiler for about 20 minutes, when they begin to get golden. Meanwhile, preheat crockpot for 15-20 minutes. Slice a medium onion and place in crockpot. Sprinkle on 1/4 c. brown sugar (I use light brown, but I guess dark brown is okay too) , 1 oz water, and 2 tablespoons honey. In a bowl, mix 8-10 oz. Stubbs Honey Pecan BBQ sauce, 2 oz. Heinz ketchup, and 2 tablespoons soy sauce. Take ribs out from broiler and place each rib in crockpot, on top of onion mixture, putting half of the ribs and pouring half of the BBQ sauce mixture on top. Add the rest of the ribs and pour the rest of the sauce on top. Cover and cook on 'HIGH' for 4 hours.

I served them with sauteed string beans and red potatoes....yum-O!

Yum! I've never heard of Honey Pecan BBQ sauce, but it sure sounds like something I would like! I'm going to have to go hunting for it, or something similar!
 
Aimee, I am struggling with getting back on track too. Before I went away, I was doing the diabetic diet I did while pg...it really works but I have not gotten back. I also do not have alot of stuff in the house. Its a great diet if you want to hear about it. It is easy to eat on the run too.

Lauren - I would love to hear about the diabetic diet! I need something to help me get through the holiday season! I'm still struggling with the last of the pregnancy pounds, and it's been almost a year since Timothy was born! I really need to take off about 15 pounds to be really happy! Help!!!

I'm glad that Riley is more chipper! I hope the doctor has good things to say today. I'm on pins and needles for you!
 
I have to apologize to all of you. I've been in a funk, the anniversary of Dad's passing is tomorrow and I haven't been good for much of anything. I haven't read back to catch up, I was only able to post recipes with Aimee's help. Again, I'm very sorry my friends.

Lauren - I'm fine with the pics being posted either place.

Don't be sorry, my friend! It's a tough day! I just went through it with the anniversary of mom's passing, so I can totally understand. We are here for you if you need us, and will be here when you feel up to anything more!
 

We are in the middle of a severe winter storm warning! Ick!!! The weatherman says it should start to snow right as the morning commute begins, and it will continue to snow all day and into tomorrow. Yuck!!! I guess our Fall is officially over.

Dinner last night was fun. Just tacos, but the kids really like them, and happy kids make for a happy mom!

We got the rest of our garden harvested last night, and now I have a garage full of winter squash, turnips and beets. Guess I'll need to do something with them soon.

I'm not sure what we'll do for dinner tonight. I don't want to go out with the baby today, so I'll check what we have in the freezer and see if I can get creative. Wish me luck! My creative juices are not flowing very well.

Ellen - I'm so sorry about your son! It takes a long time to get over a broken heart.

Kathy - I hope your tooth holds out until the dentist can see you. I hate tooth pain!!!

Everyone's costumes sound great! We finally got ours figured out:

Katie will be the embarrassing mom, complete with ratty robe, slippers, curlers in hair, and night cream on face.

Jacob has decided to be a wizard. Think a very young Merlin.

Leslie is going to be a blonde Belle in her Christmas dress.

Mary is going to be a Mad Scientist! Frankly, I think she will win for our family. She looks fabulous! I'll post pictures either Friday or Saturday!

We are going to the school's Monster Mash on Friday night, so that's the first time they'll all be in costume. I am making a Cereal (serial) killer costume for Alan, and I'll go as Mrs. Smartee (smarty) Pants. Hope it's fun! I'm still working on something for Timothy. Not sure what, though!
 
Today, my big boy turns 3!!! Seems like yesterday I brought him home.

I have alot of running around to do. We are having a small party tonight.
I have to get DS a haircut and pick up the Carvel Pumpkin cake he keeps talking about since he saw it at the store.

WFD- salad pizza, pepperoni pizza, cheese pizza and a mushroom/pepperoni pizza. Dessert is going to be Carvel cake and eclairs. We are getting the pizza on Federal Hill in Providence at Casserta's. The are a landmark around here.

Maria, someday I am going to become computer savvy and learn how to get my pics from my memory stick to the computer. I hate having to wait till DH has the time to help me. I already filled my memory stick since Emma was born. I need to get a new one.

Where has Ms. Vicki been ??

I just noticed DH changed our ticker ....sigh! Seems so far away.

Ann- Happy Birthday to Luke! I think every year goes faster than the last. I hope he loves his pumpkin cake. I always loved the crunchies on carvel cakes.

Glynis- Stay warm, glad you got your harvest in. The kids costumes sound great, can't wait to see the pictures.

Kathy- Thinking of you.

Lauren- I don't think the grey weather does anything for anyones mood, but it is a perfect meatloaf day. I hope your day gets better.

Nancy- What's red squash, I've never heard of it.

Aimee- Good luck getting back on track. I'm definatly one of those "I'll start tomorrow" people. Will your husband do it with you, that might make it easier. I need to lose weight and my husband needs to gain weight, so it's tricky with lots of calorie filled foods in the house.

Chicken with ranch dipping sauce or shrimp rissoto for dinner, haven't decided yet. I'd rather the rissoto, but again, I have no self control and I love rice.

Maria- I'm with you. a long list that I son;t feel like starting today. It is overcast and gloomy here.

Lauren- you just have too much to think about, Riley was probably the last nerve you are on. Your puppy will be fine, you could not have changed this if you were home. WOuld your sister mind watching him? I know that Gail used to have Debbie stay with her Riley when she was not well and that worked out.

Buddy has never had a weight issue so it is a problem here but not as obvious as the one you and your DH have. He does not need to gain, thank goodness!

Ladies, I just got off of the phone with the lab. The test the Dr ordered is not covered by insurance, it lists at $4935 but the lab will discount it to $3300. I need to talk to the Dr to determine exactly what this is for and then we can decide. All they told us initially was that it was genetic testing and that we would need to decide if we wanted to move forward with it. I need more specifics than that! If the Dr needs it to treat him then it is a no brainer but we need more info. We were contemplating a trip in April and this is more than the trip total.

Nancy, WOW! You really have to investigate.
When I had all my genetic testing last year for the dvts/PE the specialist did 99.9% of the tests (all covered) & then said if one of the tests came back adnormal then he would proceed with the test that wasn't covered.
Keep us posted after you talk to the doctor.

Maria -- I haven't accomplished much yet this morning either. The gray weather really slows me down. I hope we have nice weather for Halloween. Right now, there is some rain in the forecast.

Lauren and Kathy -- I'm sorry you are both feeling blue. Lauren, you have so much going on in your life right now. I would feel a bit overwhelmed. I'm sure Riley will be fine. Kathy, don't worry about keeping up. You need to take some time for you right now.

Nancy -- That is an expensive test! I hope you're able to get the information you need to make a decision.

:hug: I know how you feel. Paul's accident was 9 years ago 10/25. It was a tough day. I felt guilty for not thinking about it so long, and then felt guilty for dwelling on it while I have Rick in my life now. I know those probably aren't the same feelings as yours, but I have an idea of your day.

I'm still feeling sick, but not bad enough to head to the dr. yet. Dinner last night was delicious, not WW at all but oh so good.

Nancy, I'm angry that the test isn't covered! :mad: Just when you think you're going to get some answers, you get this.:hug: I hope you're dr can explain it & maybe try to recode it so that the ins. will pay for it. Y'all are at the top of my prayer list! :flower3:

Hi ladies,

I had a doctors appointment today so I wasn't able to get here this morning. All is well and don't have to go back for 6 months. YEA!!!

Laura ~ You said it perfectly. That is exactly how Matthew feels and I only hope he comes out of this stronger. Thank you so much you were spot on.

Kat ~ :hug: oh honey, I fell so sorry for you. My dear Momma's date will be here soon - Jan 1. I so know how you feel, please call if you need to talk.

Nancy ~ Prayers for you and Buddy. I agree you need to talk to the doctor about this test. It never hurts - NEVER - to ask questions. You need to be informed before you can justify this amount.

marilyn, congrats to your neice....i hope she does not quit.

I had also quoted Laura about this but it's not here. :confused: Oh well, I hope she doesn't either. I think for her it's just a little overwhelming to go from 25 meters to doing 500's in such a short period of time. On top of that I don't think she is swimming with anyone from her summer swim league. She does one in their neighborhood during the summer and they do not have an indoor facility to do the big stuff during the winter. They do more of a keep up the skills thing and don't do any competition stuff. She has lots of friends from school on the summer league and only kids she sees at practice and meets during the winter.

And the 9 yo fangs have come out, my sister is ready to give her to anyone who will take her! :rotfl:

It happened several times. What helped me was going back to the meetings. No meeting means no accountability or me. I am there now. For some reason I am struggling with sweets, it is a constant draw for me...cookies, cake....muffins. All of the Fall comfort food has been a downfall for me.

Aimee- go back to the meetings, make the time a priority for yourself and don;t put anything else or anything in front of that hour. You deserve to give yourself the time to be healthy. When I chose to follow WW it was not to lose weight, I felt lousy all of the time ans did not want to spend the rest of my life feeling that way. The weight loss was a bonus. Your health will improve when you make your lifestyle reflect how you want to feel. YOU CAN DO IT!!!!!!!!!!!!!!!!!!!!!!!!!!

Yeah, I need to go back. I actually enjoy the meetings - it's just I get an invite to lunch and choose that instead of the meeting. :headache:

Most of the stress from last week has settled and so, of course, my gut has settled a little. The connection between my disease and my stress level truly is amazing. I still hurt often but am doing better - not as many Vicodin.

He'll eat just about anything I make, and I typically make Cooking Light stuff, but we are BAD about fast food and dining out. He loves it as much as I do and is not helpful in controlling that :laughing:

DH went grocery shopping today while his wee ones were in parent's day out so we can actually cook at home! We're having shrimp curry, it's from the latest Food Network magazine.
