The What's For Dinner Thread - August '09(recipe index in OP)

Good morning! I'm posting from the ARCTIC!!! Seriously, I don't know how it could be any colder!!! The snow they were predicting for yesterday morning, finally hit us at about 8:00 last night. We ended up with a couple of inches on the ground, and it looks pretty, but cold! I'm hoping we've seen the last of it for a while. However, the forecast for Halloween is a cold rain. Yuck! Not fun trick or treating weather! Hopefully, I can talk the kids into going out fairly early.

BRRRRRRRRRR! I don't do well with cold.

My roast turned out very good the other night. Thank you Laura.
DS's party was alot of fun last night. Not sure what will be for dinner tonight. Something very quick and easy because we have a baptism preparation class to attend.
 
And the 9 yo fangs have come out, my sister is ready to give her to anyone who will take her! :rotfl:

I'm feeling a bit better now that I'm back on track at the gym, today was my first day going back but I already feel better!

I'm glad your ankle has healed enough so you could go back. I usually have to drag myself to my zumba class, but I am always happy afterwards that I went. :hug: for you today.

Gretchen -- I'm sorry you're still not feeling well. The flu is brutal. How is Hailey doing?

The skating costume is done. Caili wore it for her competition on Saturday. I just did the beading. There are a couple pictures on FB, although they are kind of small. Becky took them, and I pulled them off her Flickr page, but they don't look as good as they should.

Glynis -- I hope the rain stays away for you. I am keeping my fingers crossed here. There is rain in our forecast, but they aren't sure if it is going to be during trick or treating hours.

Lauren -- I hope Riley made out okay at the vet.

I forgot to multiquote everyone, so hello to the rest of you and I'll come back later.

Dinner is after gymnastics, so the kids will probably have breakfast food, and I can either have the leftover soup from the other night or wait until the kids are in bed and make myself something else.

Going to be a long day today, going with my BFF and her youngest son to see the Michael Jackson movie. The child is absolutely obsessed with MJ, we are getting there early enough so that we can get seats so he can get up and dance. :rotfl:

Dinner will be either out or whatever I can find in the fridge.

They have been trimming trees in our neighborhood all day. Noisy & my oak tree should be next!:scared1: I'll have to go out there & try to keep our tree from being butchered.

Tonight is back to healthy eating! Tuna steaks, bok choy & maybe some soba noodles.

It is another gloomy cold and drizzly day here. It is supposed to snow again tonight but for now it is just plain nasty out. I am so not ready for this much winter yet. We got no summer and now no fall. It is going to be a very long winter here on the plains.

I am off today. I have quite a few vacation days yet to use before the year is up so today is the day. I am going through my recipe box. I clip recipes and then they just sit around. So I have bought a notebook and will get them organized. This has been on my "to do" list for quite awhile. I really am excited to get this done, then I can work through the good ones. No one else could ever understand this but I know you ladies will. :rotfl2:

I really wish I could get the mixer and oven started, but as you all know it is Wednesday and date night. And I am NOT messing with date night - if you remember a few weeks back. :scared1: So I guess I will just plan the rest of the weeks. I can't wait.

That chops looks so good! I love my pork chops fried, favorite recipe is Paula Deen's so it is wickedly good.....but soooooooo bad!

Good Morning....been having computer issues this AM and now gotta run to get ready. meeting a friend for breakfast then taking Riley to the vet. Thank you for all of your kind words yesterday.

Any Riley news?

ARRRRRGGGGGHHHHH!!!!!! I've tried three times to post and my stupid computer has locked up each time! I still feel like crud so I didn't take any notes and my brain can't hold onto a thought but for a second so I'm missing so much, please forgive me.

Tomorrow I go back to work and I'm sure my desk will be swamped so don't be concerned if I can't check in tomorrow.

How are you feeling today?

Gretchen- my sister is a respiratory therapist in the NICU/PICU at Children's. She said it is really busy there right now, flu is starting to pick up here. We were not on the list of Stated that had widespread outbreaks but recently schools have been closing to try to contain it. It is heading up here!

If I was flying with kids right now I would think twice. I know that you cannot protect them completely but closed up for a few hours in a small area would be what caused me to cancel.

Nancy Make sure your insurance company is aware of Buddy's family history that may sway the appeal in your favor.


I called the medical review board office and they are contacting the Dr. for a letter of medical necessity. It will then be reviewed.The disease that he wants to check for is neurofibromatosis. I guess it is not easy to detect but that is what I read online. We decided that if the Dr needs the test we will have it done. He is going for a bone scan next week, tomorrow he meets with the neurosurgeon. He is frustrated that he needs to take so much time out of work but I told him I would rather he lost work because he was proactive than he lose work because we waited too long.

I forgot to post how good dinner was last night. I used a rub of sage, granulated garlic, sea salt ans pepper as well as some rosemary. I let the herbs sit for a few hours before roasting. YUM! The red squash was like a cross between sweet potatoes and butternut squash. I used SF maple syrup and nutmeg in that. Steamed haricots verts and a baked potato and gravy for Buddy.

Tonight we are invited to Welby's for a steak dinner. She wants us to try the meat from her Angus. It is raining and miserable here so I asked her if she wanted to put this off, she is grilling, but she said that she is out there all year long. I had to prepare Buddy, Nola crashed into her table today and she said she looks like someone walloped her little self :sad2:

I heard about the weather you all are having out west. We are just supposed to get tons of rain starting tomorrow night.
 
It just got really nasty out, we are having shrimp scampi and rissoto, it's the perfect night for it.

Ann- Pork chops are so easy to fry. Sometimes I just brush them with dijon mustard and cover them in bread crumbs. Glad Luke had a fun birthday.

Nancy- Good luck with the test review. I know it seems like a lot of money, but even if you have to pay it's worth it. (Of course not paying is great too) I hope the steak is good. The lady that runs 4H has cattle and I want to find out if they raise them for food or pets. I know their pigs are off to be slaughtered so if they also slaughter the cattle I'd love to buy some. Of course that means I'll never be able to see them alive.

Kathy- Thanks for the Riley update.

Glynis- Make sure you keep the snow by you, we're just not ready for it here.

Ellen- You don't want to see the pile of recipes I'm going to try someday. I have them organized in folders by catagory. I could live until I'm a hundred and never try them all.

Sheryl- I love spoon bread, mind sharing your recipe? I sometimes make the one from The Crystal Palace in the Magic Kingdom, but it's a bit pricey to make.

Alright, enough stalling, I need to finish dinner.

Getting ready to leave for the theater. My friend just called me, she was on her way to the Halloween store at the mall and was afraid she had bought the tickets at the wrong theater. :eek: I told her to stop and get the tickets before she went in to the mall! She did get the right one. :rotfl:

I also got a visit from the girl scout cookie fairy! :woohoo: One of my co-workers is the cookie mom for her DD's troop and she came by with them today. They have new ones call Thank U Beary Munch, they are really good.
 
Here is the recipe I have promised:

Grandma's Cabbage Bread (Runza's as they are called in Nebraska)

1 medium head of cabbage - shredded fine
1 large onion - chopped fine
2 pounds hamburger
salt and pepper to taste

Brown hamburger and onion till just done. Do not over brown.
In seperate pan steam cabbage till soft. drain
Add hamburger mixture to cabbage and salt and pepper to taste. Let cool

Now at this point I differ from my Dad and Grandma. They made homemade bread with recipe I can post if you are interested. I use frozen bread - 3 loaves - I know, I know but it is just so much faster. ;)

Cut each loaf into 6 peices. Flatten as much as possible (no holes). Place 1 large spoonful of filling on flattened bread. Bring corners to center and pinch seams closed. Place each square - seam side down - on a greased pan and bake at 375 for 20 -25 minutes or until nice and brown.

Grease tops of each loaf with butter as they are removed form oven. Serve hot and they can be frozen.

These are so good. I hope you enjoy them. We have a chain resturant called Runza here in Nebraska that makes them in all sorts of different flavors. Swiss Mushroom, Pizza, cheese and BBq. My favorite is still the original that I make. They really do freeze well and reheat great. Enjoy!!
 
Ann, I used the Paula Deen recipe but I didn't have buttermilk, so I used milk & egg.

Robin, Would you post the Crystal Palace recipe please?
I didn't follow a recipe, just sort of winged it. I used a package of Jiffy corn muffin mix, a can of creamed corn, 2 eggs, 1/2 package softened cream cheese, 1/2 stick melted butter, 1/4 diced green onions, 1/4 shredded cheddar cheese. I browned up a little bacon in my cast iron skillet took out the bacon turned off the heat, then tossed in the green onions. I threw the bacon grease & the green onions into the batter. Crumbled the bacon & added that to the batter. Poured the batter in the cast iron skillet, baked at 325 degrees until browned on top.

Wow no wonder it was so good, think I put enough fat in there & on my hips! :eek:


I started making adr's for our Mardi Gras trip! So far I have Tony's, WCC breakfast, The Wave dinner, Ohana Breakast, & Chef Mickey's breakfast. Wow I just realized I have 3 breakfasts! Guess I'll be making some changes.

Any suggestions anyone? We'll be staying at WLV the 1st 2 days, then BLT for 3. Anyone try WCC for dinner or Chef Mickey's?
 
We've been to WCC for lunch and dinner and really enjoyed both. When is Mardi Gras?

I'm not sure either but Johnny & I were thinking of making a long weekend trip for Mardi Gras too! Anyone have DVC points to rent?:flower3:

Dinner tonight was Porterhouse, baked potatoes & roasted fresh beets.

I did my ADRs for December yesterday......
