Good Morning. We are having meatloaf, mashed taters and vegetable medley and probably corn. I wanted something easy since I will be getting the housr ready for Thursday...the taters are boxed...shhh, don't tell! ;)

KAthy- I don't do much shopping anymore either. We are taking most of the family to NYC to see the Radio City Christmas Show, and making a weekend out of it. Buddy is taking us all to Del Frisco's for dinner and is getting train tickets as well.

That sounds awesome, I've never been to NYC!!

Laura and Becky - seriously, have you guys considered applying for The Next Food Network Star?

Aimee - We've tried to encourage them and even have a name for their show - "The Liam Sisters". No doubt in my mind they would easily win!!:thumbsup2

Pack?!? Seriously?!? (Insert long sigh here). Now I feel woefully inadequate. ;) I haven't even gotten the suitcases out. The plan is to do laundry on Friday and run my final errands and pack for all 5 of us on Saturday. The two therapists who are going with us are planning on spending Saturday night with us so they won't have to get up so early in the morning on Sunday. Ah to be young. Last year they literally rolled out of bed, brushed their teeth, and climbed in the vans in their pajamas. Then they promptly fell asleep and stayed that way until we stopped for brunch.

I am working today through Wednesday, so my plan is to try and fix something for Thursday each night along with whatever dinner I fix for the family. Tonight I plan on putting the sausage dips together (a mild one for the kiddos, and the hot for the adults) and I may start slicing/grating the six pounds of cheese for the mac and cheese.

I have no idea what we are having for dinner tonight. Something with ground beef since that is what I have defrosted.

Hi guys,

I wanted to share a recipe I made this weekend because it was super fantastic!

CHICKPEA AND ROMAINE SOUP with toasted noodles
In Spain, this soup would be made with fideos, a type of thin pasta. This recipe uses vermicelli instead.

Ingredients:
4 tablespoons extra virgin olive oil, divided
1 onion, medium dice
2 cloves garlic, minced
½ teaspoon turmeric (I left this out)
1 teaspoon paprika
½ teaspoon cayenne pepper
1 cup tomatoes, chopped (I used 1 can plus the juice)
2 cups canned chickpeas, drained and rinsed (about 1 18 oz can)
4 cups canned low-sodium chicken broth or homemade stock (I used 2 cans)
1 cup water
1 teaspoon salt
1/4 pound vermicelli, broken into small pieces
1/2 head romaine lettuce (about 2/3 pounds), shredded (about 5 cups)

Directions
Heat 2 tablespoons of olive oil in large pot over low heat. Add onion, garlic, turmeric, paprika and cayenne; cook, stirring occasionally until onion is translucent (about 5 minutes). Stir in the tomatoes and cook 5 minutes. Add the chickpeas, broth, water, and salt. Bring to boil and reduce to a simmer.

Meanwhile, in a large frying pan, heat remaining 2 tablespoons of oil over moderate heat. Add the vermicelli and cook, stirring occasionally, until golden (about 5 minutes). Remove browned pasta with a slotted spoon; add to the soup along with romaine. Simmer until pasta is tender, about 5 minutes. Serves 4-6.
 

Thanks You. I asked Kady if she would like to make pies with me and make her own for our guests. She was thrilled! She likes to bake but gets bored if I try to use a mix, so this will be perfect!

Well, the Hello Dolly Pie is pretty "mess up" free! There's really nothing to it! Kind of like the Derby Pie.

There's just nothing like making your own stuff from scratch to make a kid feel 10 feet tall! I love cooking with my kids!!!
 
Well, life just seems to get more and more hectic for us, here in Utah!

The kids have school today and tomorrow, then on Wednesday, we'll make the pies for Pie Night. We have Thanksgiving with my BIL's family on Thursday, and it now looks like we'll have a funeral on Friday. Last night, at midnight, my 97 year old grandmother passed away. I was really sad for a while, but then I got thinking: she's been without her husband for 17 years (which really made her mad!), she's been bedridden for the last 4 years, she has been drifting in and out of "reality" for the last year, and just recently, she developed bed sores all over her back side. In a way, I'm really relieved that she was able to slip away peacefully! The only down side, is that my mom didn't get to say goodbye to her mother. My mom has diabetes, and is on dialysis 3 times a week. Her immune system is compromised, and the nurses at grandma's nursing home wouldn't let her in for the last couple of weeks due to a flu outbreak there.

I did talk to my mom, though, and she seems to be doing ok. I'm just waiting for my dad to call. He's going to let me know if they need me to come down to help take care of things there. If that happens, I guess we'll be doing Thanksgiving with my folks. It's all just up in the air.

I have no idea what's for dinner tonight. I need to see what I have in the freezer. Possibly meatloaf muffins. We'll see!

It takes me forever to decide what to pack, so that'll take up most of the day. Gotta pack for cold and warm weather!

Oh Glynis, I truly know how you feel and I'm so sorry for your loss. I was relieved and kind of happy for Mom when she passed because she was going to be with Dad and her quality of life was so poor. I didn't get to say good-bye to Mom either. The hospice people all told me pretty much to expect that. They said more times than not a person will pass when they are alone and not in the presence of family. Feel free to PM me if you just need to talk, I am here for you. I will keep you and your family in my prayers.:hug:

I am busy doing a thorough clean for Thurs...am I the only one where the house looks like a disaster (like a tornado hit) while cleaning or am I just unorganized? :rolleyes1

We are close enough to take day trips. My Sis IL and I used to take a bus trip twice a year, head straight to the 1/2 price ticket booth and get tickets for a show. Dinner after and then home that night. We did not care what we saw so we had a great time.

Buddy has never been and I told him how much he would love the show so He decided we would all go. He loves Christmas so we thought this would be nice. Dan and Jeff work downstate so they can join us after they get out. Dan will choke when he sees how much he has to pay to park :eek:.

With the schedule you have you have nothing to apologize for. We left New Years Day and I was exhausted trying to manage the Holiday, the packing and the cleaning. I said Never again so close to a Holiday! Now don't overdo.

I don't know if you are not organized, but I am the same way. I tend to pull everything out so by mid clean the house is upside down :upsidedow. I eventually dig my way out but it is not pretty!

Honestly Lauren, I clean so infrequently that I don't remember what the house looks like while I'm doing it. :rotfl: Lucky for me our Thanksgiving is at Kenny's sister's house. The first year we did the combined family gathering, my sister and I offered to help her clean and she said that a dirty house was one of her family traditions. :rotfl: :rotfl:

I think that sounds like fun! I have been to the Radio City Christmas show once in NY and twice when it was performed in Myrtle Beach. A friend of mine gave me tickets the first year and I took Hailey. She was 2 and loved every minute of it. I took her again the following year and I think my parents enjoyed it as much as she did. They no longer come to the area. :sad1:

Thank you for making me feel better for being so disorganized. I used to be super woman and able to accomplish so much in a day it now boggles my mind. However that was more than a couple of years ago and now I am not quite as spry. I was so sore last night from everything Kenny ordered me to soak in a hot bath. Bless his heart, he really does try to take care of me. He can't help in the kitchen, but when I got in my car this morning, I discovered he had taken it sometime this weekend and filled it with gas.

My feelings are: as long as the house is somewhat in order, it looks cleaner than it is...and, as long as I can find what I am looking for, the disorganization is not that bad. You sound the same. That was really nice if Kenny to fill your tank. :love:

I hope when I said I was packing I didn't make you feel bad.:guilty: My friend, I only have me to worry about. Johnny & Kyle take care of their own, I just make sure everything is clean for them to choose from.

I couldn't accomplish half of what you do if I worked full-time. I keep thinking.....it won't be long until I have a skky berry martini in hand.:flower3:
