I was really tired today so we just crashed in front of the TV with panini--turkey, cheddar, apple, honey mustard, bacon. They were good. I have the other half of mine to bring for lunch tomorrow. And now it is time for bed! :)

Nucpharm29, the squash is super easy. Here is the recipe:

One butternut squash, halved, peeled, and cut into 1 1/2 inch chunks (or cheat and buy the pre-peeled chunked stuff!)
1-2 tbsp. butter, melted
salt and pepper to taste
1 1/2 tbsp. honey

Toss everything together and bake in a 400 degree oven until tender and carmelized on the edges, about 40 minutes.
 
Tonight I made southwestern chicken chili from Cooking Light Magazine along with cornbread. The chili was really good and quick to make. I added some shredded Mexican cheese on top.

Cooking spray
1 cup chopped onion (1 medium)
1 cup diced green bell pepper (about 1)
2 garlic cloves, minced
1 pound skinless, boneless chicken breasts, cut into 1/2-inch cubes
1/4 cup chopped fresh cilantro (I used parsley instead - no cilantro at the store)
1/4 cup strong brewed coffee
1 tablespoon chili powder
1 teaspoon brown sugar
1/2 teaspoon ground red pepper
2 (15-ounce) cans kidney beans, rinsed and drained
1 (28-ounce) can diced tomatoes, undrained
1 tablespoon masa harina or finely ground cornmeal
3 tablespoons water
Chopped fresh cilantro (optional)

Heat a Dutch oven over medium heat. Coat pan with cooking spray. Add onion, bell pepper, and garlic; cook 5 minutes or until onion is translucent, stirring often. Add chicken to pan; cook 5 minutes, stirring often. Add cilantro and next 6 ingredients (through tomatoes), stirring to combine; bring to a boil. Cover, reduce heat, and simmer 10 minutes.

Combine masa harina and 3 tablespoons water in a small bowl. Add to chicken mixture, stirring well to combine. Simmer, uncovered, 10 minutes. Garnish with chopped cilantro, if desired.
 
It's raining canines and felines here this morning and I want to go back to bed.

Tonight we are having leftover black bean chili with some tortilla chips.

Rain on the way here too. We should be seeing it late this afternoon, but it is raw and overcast now. My DGD has her birthday party at Libby Lu this evening, and my DD is really not feeling well yet, so I am going to give her a hand. She has pizza from Sbarro for the girls and theor mom's after the party. DH can have leftover soup and sandwiches.


Last night was DGD 5th birthday. DH and I took her to Red Robin to celebrate her special day because we wanted to give DD time to rest and not worry that DGD was not having her day stand out.
 

Well I just received a $25 gift card to Landry's restaurants from Sunshine Rewards :sunny: . We have to go shopping tonight and finish up dd Halloween costume as she has a party this week. Also she has a few friends with bdays this week so spending too much on that. So for us it will be Rainforest Cafe or Joe's Crab Shack. $25 won't cover the whole bill but it is a nice start. Gotta love those reward programs. :goodvibes
 
I think I'll grill some burgers tonight. Our rain has finally stopped and now it's supposed to be in the 80s todays, so grilling I will be!

liamsaunt--thanks for the recipe--We're going to have a "trial" thanksgiving as well and that will go great!
 
Hopefully things will be getting back to normal for me, I THINK my Mom is being released from the hospital after 10 LONG days! Keeping my fingers crossed.

Tonight will be hamburger steaks and onion gravy with mashed potatoes and corn!

It is going to rain tonight and I am fighting off the beginnings of a cold (figures!), so I am making soup tonight with chicken stock, lots of garlic, ginger, scallions, udon noodles, sesame-chile oil, maybe a little soy sauce, some cilantro, and a poached egg for each bowl.
 
Easy dinner here tonight - hot dogs, baked beans, and corn.

I know this is a little off topic, but does anyone have a KitchenAid 9-Cup Food Processor? How do you like it? I'm thinking about buying myself one for my bday.

DS8 has an orthodontist appointment at 4:45pm...so we will get a bite to eat at a local diner...

OT: Has anyone here or anyone you know had a palate expander? THat is what DS is in the process of getting and I am horrified since he does not like pain and the thing looks like a toture device... :confused3

I didn't have one, but my stepsister did.. Like anything orthodontic, it might be sore after they first put it in and everytime they adjust it. Keep some children's Advil on hand. :grouphug: for your DS
 
Thanks for the info and hugs Zandy! I am sure that he will be getting lots of hugs from me tonight!!! Did I mention that he doesn't like pain??? I will be needing something for my nerves later as well? Do I hear Vodka??? :)

Another wet and drizzly day here! I'm making Hawaiian Ham Bake tonight with brown rice on the side. I wish I could get my kids to like brown rice better! I guess if I just keep offering it, and not making white rice, eventually they may decide it's ok, right?
