I was really tired today so we just crashed in front of the TV with panini--turkey, cheddar, apple, honey mustard, bacon. They were good. I have the other half of mine to bring for lunch tomorrow. And now it is time for bed!
Nucpharm29, the squash is super easy. Here is the recipe:
One butternut squash, halved, peeled, and cut into 1 1/2 inch chunks (or cheat and buy the pre-peeled chunked stuff!)
1-2 tbsp. butter, melted
salt and pepper to taste
1 1/2 tbsp. honey
Toss everything together and bake in a 400 degree oven until tender and carmelized on the edges, about 40 minutes.
