I haven't posted much on this thread, but I was so pleased with myself tonight I just had to share with someone, DH doesn't get the big deal LOL! I made shrimp for the first time. I have always been very intimidated by seafood especially shrimp so this was a huge cooking milestone for me :cool1:

Anyway we had shrimp scampi, rice and steamed broccoli!

Wow! I'm terribly impressed! I've never worked up enough courage to cook shrimp. I'm afraid I'll overcook them, or undercook them! I'm just a big fraidy cat!
 
Ok, for all you pot roast lovers out there, I'm going to post my recipe! It's incredibly easy, and DH says it's the best tasting pot roast he's ever tasted! I've tried so many recipes, but this is the one I'm sticking with:

2 boneless chuck roasts (2.5 pounds each)
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope brown gravy mix
1/2 cup water

Place roasts in a slow cooker. In a small bowl, combine mixes and water. Whisk together. Pour over roasts. Cover and cook on low 7-8 hours until tender.

I always add some carrots and onions with this.

Very yummy!

I'm heating up a bag of frozen Garlic Chicken Voila. I don't have any vegetables left in the house, except what's in that package. I'll have to grill a couple of chicken breasts too because DH (the carnivore) says there's not enough meat in it.


Well then Zandy595 you should get a kick out of me!!!....Chinese Food, candy from the vending machine, grilled bologna sandwiches...hehehe!!! :) Tonight we are having Lean Cuisine Paninis (delicious!!!) with a veggie and a salad!
 

My husband has his monthly geek meeting tonight, so I made enough chicken teriyaki last night so I'd have some for myself tonight.

I am so saddened to read this. I am the OP and I never thought there was a cliigue on here. I still don't. Please post your dinners and your recipes. Everyone is welcome here. :)
 
Tonight will be meatball hoagies. Reminds me I'd better go make the meatballs before work!

I never got this vibe, TigerKat - I'm not sure what bothered you, but everyone's welcome to share recipes. I love reading all the recipes - I don't usually read the screennames until later. If you're still interested in sharing recipes, you are most definitely welcome. Heck, I posted an all call for recipes that freeze well earlier - I'd love to get some more suggestions if you're still around. :)
 
I have a London Broil marinating in McCormick marinade and I will make some type of starch and vegetable...I have zucchini and spaghetti squash that I need to cook...I think I'll do some type if rice...

GLYNIS, that recipe for the roast sounds awesome...I printed the recipe so I can make it some day soon.

There is a real Fall nip in the air today. Because of that, I'm making a pot of soup. We will be having Enchilada Chicken Soup with Cornbread muffins. It's so yummy! If you want the recipe, just holler!!! This recipe is so simple even non-cooks can make it!!!!!

I wasn't part of this thread from the beginning and never got that vibe. Sometimes people make comments about my recipes and sometimes they don't. Regardless, they're out there whenever someone wants to try them. I've also found other great recipes here. I'm kind of shocked you find a recipe thread cliquish. We don't often talk about much other than what we're having for dinner. ;)
 
It's nothing fancy - but yummy -- and easy! We are having white pizza. I take Tyson precooked diced chicken breasts and "brown" them in a frying pan with lots of garlic. Then I use a Boboli crust, use alfredo sause, topped with the chicken/garlic and mozz cheese and have a salad on the side.

I have copied the pot roast recipe -- we are on the go most afternoons, so finding time to cook has been a real challenge.

Oh...and someone mentioned they were having meatball hoagies -- we are doing the same tomorrow night -- meatball subs. My husband grilled hotdogs yesterday and bought sub/hoagie rolls instead of hot dog buns :) so I had to find a use for them!
 
I'm so glad the weather's getting cooler here, it makes me want to cook again. Tonight we're having vegetable pad thai, with fresh basil and limes. Mmm, I can't wait! :thumbsup2
 
I think my remarks yesterday regarding the "cliqueshness" were a direct result of the kind of weekend that I had, it's nearing the 1 yr anniversary of my dad's death, the closer it gets the more depressed I am. My mom is in the advanced stages of Alzheimers and I'm an only child. I apologize for taking my bad mood into the thread. I look forward to sharing recipes with all of you. SORRY!! :guilty:

Today I am just throwing some chicken with Shake n Bake in the oven and making Rice a Roni on the side along with string beans. I got called into work for this evening so I needed something really easy. :sunny:

:grouphug: :grouphug: I'm so sorry that you are feeling depressed! I hope you can feel free to turn to us here to let us know how you are feeling! I still have both my parents, but my beloved FIL died 6 years ago. It's still hard, since I loved him dearly!

I hope you feel better soon!

I'm going to try to make Arroz Con Habichuelas for dinner tonight. I want my SIL2B's recipe, but I haven't heard back from her yet. I found a recipe that looks like it might be close to her's. Hope it's edible. :rolleyes: :teeth:
 
Ok, for all of you who wanted the Enchilada Chicken soup recipe, here it is:

Enchilada Chicken Soup

1 can fiesta nacho cheese soup, undiluted (you can use cheddar cheese soup if you don't like things too spicy)
1 can cream of chicken soup, undiluted
2 2/3 C. milk
1 can chunk white chicken, drained
1 can enchilada sauce
1 can chopped green chiles, optional
Sour cream

In a large saucepan, combine the soups, milk, chicken, enchilada sauce and chiles, if desired; mix well. Cook until heated through. Garnish with sour cream.

I like to make a batch of cornbread muffins. I make them mini size, and the kids put them in the bottom of their bowls with the soup on top. Very yummy!
