Thanks for the kind words Nancy and for the PM Lauren, you all are so kind. Well I have a few minutes before I head out to a Dr. appt., so here is the Chicken recipe:

Baked Chicken Reuben

4 skinless, boneless breasts
salt & pepper
16 oz can sauerkraut, drained and liquid pressed out
4 slices swiss cheese
1 1/4 c. Thousand Island dressing (I use the fat free)
1 Tbsp chopped parsley


In greased baking pan, place chicken breasts. Sprinkle with salt & pepper. Place sauerkraut over chicken; top with swiss cheese slices. Pour salad dressing evenly over cheese. Cover with foil and bake in 325 oven for about 1 1/2 hours or until fork can be inserted in chicken with ease. Sprinkle with parsley to serve.

I have already printed the recipe and going shopping later and will buy the ingredients....this is just what I like...a recipe that is easy and tastes good! This seems like it would be great for a party as well...

Hi Jenny,

Is this the recipe with the Catalina dressing, onion soup and the apricot preserves? I make a recipe with these ingredients and DFi and DS8 love it...one of their favorites...we call it Sweet and Sour Chicken...

Here's the recipe:

Crockpot Sweet & Sour Pork

* 1 onion
* 1 carrot
* 2 stalks celery
* 1 red bell pepper
* 1 can pineapple chunks, drained (save juice)
* 2 lbs. thick cut boneless pork chops
* reserved juice from pineapple
* 3 T. apple cider vinegar
* 2 T. soy sauce
* 1 T. cornstarch
* 2 T. brown sugar
* 1/4 tsp. ground ginger
* 1/4 tsp mustard powder
* 1/2 tsp. garlic powder
* 1 or 2 dashes hot pepper sauce
* 6 oz. can tomato paste

Cut up vegetables & place in crockpot with pineapple chunks. Season chops with salt & pepper & put in crockpot. Stir pineapple juice, vinegar, & soy sauce together. Add cornstarch, stirring until dissolved. Mix in remaining ingredients & pour over pork chops. Cook on low for 6-8 hours. I thickened the sauce with a little more cornstarch at the end.

Oh my! That sounds delicious! I think that will be on the menu for next week! Yummo!!!

Kathy ~ Thanks for posting the Reuben Chicken recipe. I'm going to try it next week. DS10 doesn't like sauerkraut so I'll have to make his without.

Jenny ~ Would you mind posting your recipe for Apricot Chicken, please. I've always wanted to make that, but never had a recipe for it.

Last night I made chicken picatta and penne with broccoli. It was tasty and fast, and I had the leftovers for lunch, yummy!

I haven't decided on tonight's dinner yet. It depends how cold it is when I get out of work!
 
All these new recipes sound so good ~ I can't wait to try them all! :teeth:

Today I am going to bake up some pork steaks smothered in gravy with mashed potatoes and baked beans on the side. :sunny:

I LOVE that recipe!!! I made it just after DH and I were married. It was our first dinner party with the in-law's. It was a very nice meal, and MIL was impressed!

I am glad I stumbled upon this thread. I love to cook, and I am always looking for new recipes to try. Tonight in our household we are having:

Grilled BBQ Chicken Breasts, Roasted Potatoes (Cut mini red-skinned potatoes into halves or quarters, and toss in a ziploc bag with some olive oil and italian seasoning. Transfer to a baking sheet and bake at 400 degrees until browned),and Corn Casserole (recipe below)

Corn Casserole
1 15 oz can corn, drained
1 15 oz can creamed corn
1/2 C butter, melted
1 pkg Jiffy corn muffin mix
2 eggs
1 C. cottage cheese
1/3 C sour cream
salt and pepper to taste

Mix all ingredients together and put in a greased casserole dish. Bake at 350 degrees for approximately 1 hour, until casserole is set and lightly brown on top. Sometimes I substitute mexicorn for the corn, add a small can of green chilis, and add a handful of cheddar cheese to this. You could add browned sausage or cubed ham for a complete meal.

Sounds good! A friend once made something similar for me, except he added cream of mushroom soup and shredded chicken. It was so good. I think I'll have to try your recipe!

Tonight we had chicken sausage and peppers and onions. Just something simple and easy.

I love corn casserole! :thumbsup2 I'm the only one who will eat it though so it only gets made at Thanksgiving.
 
I made soft tacos tonight and they were nasty. The meat tasted a little off. So we ended up eating sandwiches instead. I hate it when that happens.
 
Some of these recipes here sound good...gotta try the pork in the crock pot! Although sometimes I don't want to try involved recipes such as this because I buy all the stuff, prepare everything, get excited about it...and no one likes it. They just want the standard Shake n Bake pork chops! Oh well! That's whats for supper tonight: Shake n Bake port chops, broccoli and rice.
 
We are having leftover mug pie soup tonight. Boy did it turn out good!! I can't wait until it gets good and COLD outside so we can enjoy this meal even more! :)

Today I'm going to make a pot of chili and some homemade cornbread (or maybe corn muffins, haven't decided yet). :sunny:
 
Last evening we had sausage and peppers over gemelli pasta seasoned with garlic and olive oil. Green salad on the side.
