Tonight I am making smoky chicken patties (recipe on page 1). Not sure what we are having with it.

Well DH has to work tomorrow, so we're doing our Labor Day grilling today. Baby-back ribs and burgers, baked beans and potato salad. Not sure about dessert yet?

Thanks, I am doing much better. The bruises are still there, turning a pretty green and purple color, but other than that I'm doing better :)
 

We will be having pasta salad with frozen country fried steak patties on onion rolls. Lunch is leftover meatloaf sandwiches.
 
DH is out of town today. I don't usually like to cook while he's gone, since my kids are not adventurous eaters. However, I like the look of the Mexican Lasagna recipe posted here. So, I think I'll try that. If the kids don't like it, they can have cereal for dinner!

Glynis: You sound like me...my kids are so unadverturous too and they're not too young anymore!!! So, if they don't like it around here...cereal or yogurt!!!

Yup. I refuse to make 2 separate dinners: one for me and DH and one for the kids. If they don't like what I made, they can make sandwiches or cereal! Most of the time, they don't want to go to the trouble, so they'll try what I make. Of course they grumble, but eventually they eat it! Why didn't anyone tell me that parenting was this hard?

It's very tasty..I think it's the sun dried tomatoes and wine that give it so much taste.... I realy tweak it...Add a little more of this a little that too it ,including hot peppers...The Spinich Sun dried tomato wine mix is really good in Orzo,which I serve wth this..Using Parmigiano Reggianno instead of parmesan really kicks up the taste..The Parm. Reggiano is expensive but one small block of it lasts me a month
 
I made a pot of Chili...As I had no shredded cheese I added a block of cream cheese at the end ..It was yummy...DD who hates chili even liked it
 
We had chili tonight too. Shredded cheese on the side, sour cream, and Fritos. I like to layer mine in the bowl. It is sooo good! :)
 
All you chili makers, I have a question - does anyone have a recipe for authentic Texas chili? I usually just do the ground beef/turkey with seasonings, onions and tomatoes thing - it's okay, but ever since I saw the Bobby Flay Throwdown, I've wanted to try my hand at authentic Texas chili.

Since I gained a few lbs in WDW, I spent the last few days eating scallops, fish and turkey broiled with salad for dinner. Today I'm back where I was before I left for vacation, so I'm going to start adding back in some "regular" food - a little more variety.

Lindsay, I'm sorry to hear of your fall and glad you're getting better (if more colorful as well ;) )

I am definitely planning on making some of the great WDW dishes I tried during this trip, this fall. Particularly the filet mignon and mac and cheese at Jiko. It was fabulous and the recipe's pretty simple except for the red wine sauce.
 
We had a homemade chicken pot pie with mashed potatoes and cranberry sauce. Thick sliced tomatoes on the side. It was so good!
 
I kind of made up a recipe. I sauted cloves of garlic in olive oil and added chunks of boneless chicken breast. I browned one side of the chicken and then flipped it and added a full bag of frozen organic spinach. Then simmered this until cooked through. On the side I made a box of Annie's mac and cheese but it was different than the regular Annie's mac & cheese it was Gemmelli (sp?) shaped pasted in a creamy garlic sauce. So, I put a few spoonfulls of the macaroni and cheese on a plate and topped with the chicken and spinach. Almost everyone liked it...my son didn't like it (probably because of the spinach).

This afternoon was a BBQ in celebration of the life of a 22 year old who just died of leukemia. He was one of our Scouts a few years ago. It was actually very lovely. We told lots of stories and laughed a lot.

Tonight we went with my mom to Red Robin. She wanted to catch up with our DS who just started college the other day.

Tomorrow morning we're going to visit DH's parents and let them do the same. And we'll be back home for dinner. We have steak, baked potatoes, corn on the cob, watermelon and slaw planned. It'll be a feast! My sweet and sour slaw is to die for!

I'm also making DH throw some burgers on the grill. He leaves for New York on Tuesday, so I figure I'll pop them in the freezer and have a couple of good meals for nights when DD and I don't want to cook. :thumbsup2
 
Tonight we are having the roasted garlic rosemary lemon chicken on page 1. I will make some rice to go with it.

Tonight's my son's birthday so tradition in my house is that you get to pick your birthday dinner. So, he picked pizza! That's ok by me!!! :)
