We had a roast in the crockpot with green beans & potatoes. Seasoned it with onion soup mix and let it cook all day. Wonderful smells and taste.
 
mmmmmm....y'all had some good dinners tonight! We just had hotdogs and Mac 'n cheese. I'm thinking stew for tomorrow though
 
Tonight I am making vegetable soup and cornbread. It's cooling off a little and I just love veggie soup this time of year :)

We never had the hot dogs last night. I made the stew and cooked some fresh sweet corn, so we had that. No one was very hungry.

I got some red and yellow peppers yesterday, so I think I will make stuffed peppers this evening, using ground turkey. I'll add some mashed potatoes and a green veggie sliced tomatoes and cucumbers.
 

We have a lot of leftovers here so it's gonna be a smorgasbord I think. There ought to be enough variety to please everyone!
 
My sweet and sour chicken turned out yummy. I stir-fried some chicken, took it out then cooked my veggies. I added water chestnuts, baby corn, and some pineapple. Then a put in the S&S sauce. Oh boy, it turned out awesome!! It made me want to watch Lilo and Stitch or Magnum P.I., or something Hawaiian, LOL! :)
 
We are going to my mother's boyfriend's birthday party tonight. So we'll have pizza, salad, ice cream and cake. No cooking for me tonight. :cool1:
 
The chicken and dumplings I made last night was a hit (the recipe posted on this tread)...the dumplings were a little disappointing...not like my Mom's. SHe makes them nice and fluffy. I have to get the recipe from her...I will make them separate from the crockpot and just add them when its time to serve...DFi and DS8 loved it though...

I am make Sausage, Peppers, Onions and Potatoes tonight...now I just need to figure out if I am making subs or pasta on the side...I am thinking subs...

Tonite will be apricot pork tenderloin, yellow rice and spinach salad. The tenderloin recipe is quick, easy and good. I'll post the recipe when I get home from work. ;)
 
Oh my gosh!!!! Whoever posted the chicken pot pie recipe on page 3, you are amazing!!!! That was the best chicken pot pie in the world!!! DH raved about it, and my kids actually ate without complaining! There was a lot left over, so DH requested it for lunch today! Thank you, thank you!

Tonight for dinner we are having Cheesy Tuna dinner (from this thread). It sounds yummy! We'll also have steamed broccoli on the side. No dessert for us tonight!
 
Tonight I am making a strata with roasted tomatoes, roasted onions, sausage, pesto, etc. Plus a hearts of romaine salad and some sliced tomatoes from the garden.
 
I have some chicken stir fry, so I think I'm going to make that with italian salad dressing.

I usually marinate it but I forgot. I'm also making au gratin potatoes and corn.
 
Quick, easy and delicious:

Apricot Pork Tenderloin (can also use pork chops)

1 pork tenderloin or 4 pork chops
1 Tbsp. olive oil
salt & pepper
1 c. apricot jam or preserves
1 c. catalina or russian salad dressing
1 packet onion soup mix
1 clove garlic, minced

Season pork with salt and pepper and brown in olive oil until well browned. Mix together apricot jam, salad dressing, onion soup mix and garlic. Place pork in a foil lined baking pan and cover with sauce mixture. Bake at 350 for approx 40 minutes or until internal temp is 160.

Dislifer, I like grilled bologna sandwiches! I haven't had one in ages. I need to make some soon. The kids would love it too! :)

Tonight we had a variation of shepard's pie. I had leftover roast and veggies. It turned out pretty good. :)
 
HI, all!

I am extremely busy as this is my first week back teaching but I will share my embarrassing dinner with you all. And I will go grocery shopping this weekend and get back on my salads and fish and healthy stuff.

My dinner was two hot pretzels, a strawberry daiquiri and a handful of olives.

All eaten in front of excel, word (and a little DIS, shhh.)

This weekend I want to make some kind of healthy chili or stew that I can freeze to eat later in the week.

Any recipes?
 
We will have leftover veggie soup and cornbread tonight. Hey LuLu, you can freeze this one :)

My Mom used to make them for us! I usually don't buy sandwich meat for DH, and he is thrilled when I do. Fried bologna sandwiches for him.....at least four....on white bread.....
 
I think I am making something with chicken...make chix and broccoli stir fry...DFI requested this. He started the Atkins Diet...claims it is the only thing that works for him so I am trying to cook for him and me and my son...this is something we all love...rice on the side for us and maybe a salad.

The APRICOT ROAST PORK sounds great. I make a chicken dish with almost the same ingredients...kind of like the POLYNESIAN CHICKEN on the boards...
