Today I am making a spicy chicken stir-fry over rice and pot of hot and sour soup on the side. :sunny:

We leave on vacation first thing tomorrow morning so I won't be cooking but here's where we'll be eating:
Saturday ~ road trip so likely fast food or Cracker Barrel
Sunday ~ lunch on the road, dinner at Tony's
Monday ~ lunch at Tusker House, dinner at 'Ohana
Tuesday ~ lunch at Le Cellier, dinner in World Showcase (letting everyone get what they want)
Wednesday ~ breakfast at 'Ohana, skipping lunch, dinner at Backlot Express
Thursday ~ lunch at Pinocchio's Village Haus, dinner at Cosmic Ray's
Friday ~ lunch at Coral Reef, dinner on the road trip home

I hope you all have a great week and I can't wait to see what you all cooked up while I was away!! :sunny: :wave2:

I was planning to make steak and chicken burritos tonight, expecting that we would have plenty of leftover steak from last night. However, DD ate almost the entire steak last night...did I mention that she is four -- almost five -- and weighs under 40 pounds?...so we had chicken burritos (DD claimed very small piece of remaining steak), with rice, guacamole, black beans, cumin corn, and monterey jack cheese.
 
Well, I finally decided to make Mexican Casserole. I haven't tried this recipe before, but it sounds good. I'll let you all know tomorrow!

I'm also cooking up some yellow squash and making a mix of cucumbers and yellow tomatoes from our garden.
 

We had BBQ chicken sandwiches for dinner with some chips. Then DH and I went out for a date night and had movie popcorn and an ice cream cone on the way home. Health food at it's finest. :rotfl:

Tomorrow we are going to a back-to-school party at the home of one of DH's co-workers. We're taking chips and cowboy caviar. For dinner :confused3 we may be eating more of the BBQ, as we have a lot left.
 
We are going to the American Cafe today and will probably just have sandwiches for dinner.

We went to the big cookout for lunch, so we're really not very hungry. We're either doing soup and sandwiches or leftover BBQ tonight with some cowboy caviar on the side. Personally, I'd just like to cut the watermelon that's been sitting on the kitchen counter the last couple of days. It's calling my name. ;)
 
We are having leftover Mexican casserole tonight. It turned out really well.

Here's the recipe:

1-2 pounds ground beef
1 envelope taco seasoning (I used one but should have used more)
1 small chopped onion
1 large can diced tomatoes
1 can kidney beans, drained
2 cups shredded monterey jack cheese
1 bag Nacho cheese Doritos

Brown the ground beef in a skillet with onion. When browned, add taco seasoning and the tomatoes. Cook until heated. Add the kidney beans. In a greased casserole dish, layer the meat, Doritos, and cheese. Repeat layers ending with cheese. Cover and bake for 20 minutes until cheese is melted and casserole is heated through.

Serve with extra chips on the side, and top with olives and sour cream if desired.
 
The kids and I are going to the Red Sox game tomorrow, so we did the family dinner at my parents' house today. For a change of pace, we had...chicken burritos. Yes, the same meal I made yesterday, just in a different house. It was okay, but the best part was Mom's eggplant sticks.

Tomorrow, I expect dinner will be Fenway franks, peanuts, popcorn and maybe ice cream, hopefully to the tune "Dirty Water."
 
I am making a broccoli rice and chicken in the crockpot today. I got the recipe off allrecipes.com, I think. Here's the recipe:

2 pounds chicken tenders or boneless chicken breasts cut in strips

1 1/4 cups uncooked converted rice

1 package Knorr's Cream of Broccoli Soup Mix

1 1/2 cups chicken broth

pepper, to taste

Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.

ETA: I haven't made this before so I will report how it turns out :)
 
We just got a brand new huge gas grill(awesome price at Lowe's!) and we're going to break it in tonight(have errands to do today). I think we'll just do hamburgers and hotdogs, potato salad, and either fried corn or corn on the cob. Not sure about dessert, but we rarely do a Sunday meal without it. :)

DH wants to try to cut the grass tonight. So I think we're going to run to IHOP for a quick dinner.

Lindsay, Thanks for the heads up on that one! I printed it out and was going to make it when the weather gets cooler. I have this thing about crock pots; I think that they are a fall/winter thing! I'll skip this one though...too bad, it sounded like it would be good!
 
Dislifer, I was shocked!! I was so excited, it sounded so good, but it wasn't. :(

Why didn't you like it? Just curious.

PS - for dinner tonight, I just had a grilled hamburger and salad. I haven't eaten real dinners the past week because of my wisdom tooth being pulled.
 
Lulu, first of all, it strangly had no flavor. Also, even though I greased the crockpot, I had a burnt layer on the bottom. My chicken was VERY dry, even though I cooked it for 6 hours. The flavors just didn't mesh well.
 
Today's dinner was so...weird! We usually have the early "linner," but darn, Dsis and the kids were at the Red Sox (whoo-hoo Red Sox), and my folks went to Rockport, so it was just me and DH...we had seared striped bass and jumbo scallops (set off the smoke detector!!) with a blood orange hollandaisse sauce (love, love, lurf! holllandaisse, but the blood orange made it a touch too sweet), cesear salad with homemade garlic croutons, seared green beans, and mac and cheese.

IHOP serves dinner? I am seriously asking, what is thier menu? I thought they just served, well, pancakes!
 
Actually, they do serve quite a variety. Lots of comfort foods like chicken fried steak, hot roast beef sandwiches, etc.

But we had breakfast for dinner tonight. We all chose to eat omelets. I had a chicken fajita omelet and it was pretty good.
