A little tip on the spaghetti: if you find multitasking hard when cooking, as I o sometimes, you can get the sauce all ready and then just leave it on low and THEN cook the spaghetti. That's what I did. While I was making the sauce I got my water going. When the sauce was done, I cranked 'er up and then dropped the pasta.


Good tip, thanks! As for the bread, oh well! I'll think of something. My kids most likely wouldn't have eaten it anyway with tomatoes and "green stuff" on it. I'll probably just make some breadsticks. Or generic garlic bread.
 

Thanks to those who had suggestions on how to spruce up turkey burgers to be edible. Unfortunately, my children now have them on their Most Hated List, so I could coat them in chocolate and they wouldn't eat them (yes, I know that would be disgusting, but you get my point...I hope).

Last night, we had grilled bratwurst, carrots and pasta with chives from my garden. Today, it is 100 degrees with who knows what percentage humidity, so there was no cooking, even though the AC seems to be working okay. We had takeout from the local clamshack. It was good, but in retrospect, a big salad probably would have been better.
 
I just made this for the first time. It was DEEE licious! :teeth:

Layered Fiesta Casserole

Serves 6

1 - 1 1/2 lbs. lean ground beef - I used 1 1/2 pounds.
1 - green pepper, chopped - I only used a 1/2
1 - red pepper, chopped - I didn't use this
1 - 16oz jar of Thick and Chunky Salsa. I used the mild type.
1 can (14 1/2 oz.) diced tomatoes, undrained. I also used a can of mixed diced tomatoes and chilies, about 12 oz. also undrained.
1 - pkg. (10 oz.) frozen corn, thawed. I used a can of corn, drained.
12 - flour tortillas (6 inch)
1 1/2 cups Shredded Sharp Cheddar Cheese.

Preheat oven to 375F. Brown meat with peppers in a large skillet, stirring frequently, drain. Stir in salsa, tomatoes and corn. Bring to a boil. I cooked the ground beef in a fry pain and then put the beef and other ingredients in a large sauce pan to cook up everything.

Spoon 1 cup or so meat mixture onto bottom of a 13x9-inch greased baking dish. Top with 6 tortillas, overlapping as necessary. Spoon half of the remaining meat mixture over tortillas, top with 3/4 cup of the cheese. Top with remaining 6 tortillas and meat mixture. Cover with foil.

Bake 25 to 30 min. or until heated thoroughly. Remove from oven, uncover. Sprinkle with remaining 3/4 cup cheese. Let stand 5 minutes or until cheese is melted.

About 400 calories per serving. I served it with Lipton's Fiesta Sides Taco Rice and applesauce. Easy and fast to make and really good! :thumbsup2

Tonight we are having leftover Jambasta. Oh man, that stuff rocked!! I skewed the original recipe a little, and it was still awesome. I will post the recipe later on.

I made mine a little different. My stomach cannot "stomach" really hot and spicy foods, nor shriimp (even though I LOOOVE it), so here are the things I switched.

*I left out the hot peppers and added 1 huge green bell pepper.

*Instead of andouille sausage I used smoked turkey sausage. Since I didn't put shrimp in it, I diced the whole pack instead of half. And I stirred it INTO the pasta, not on top.

*I don't cook with beer so I just used 2 cups of chicken stock.

*My husband and I don't like tomatoes (the actual tomato, not sauce or soup, etc.), so I added at 15 oz. can of tomato sauce instead of the crushed tomatoes.

*Since the heavy cream is added to "cool off" the spicyness (is that a word?) I only added a few tablespoons because mine wasn't hot. Oh and I used half-and-half instead of cream.

Ok, I think I got it all. Seriously, it was so yummy I thought my husband was going to have a foodgasm!! :)
 
We had a huge storm here yesterday and lost power not too long after I started cooking the ribs and potatoes. I finished them after it came back on and served with a salad. They were good, even though the cooking time was really off. DH was ecstatic because this is the kind of meal he loves.

The storm actually came in handy because it gave us a chance to test the generator. Now I want one that will run my ovens and furnace because if this happens in the winter, we are the last to get our power back.
 
I don't make homemade spaghetti sauce because every time I try I don't like it. I love Ragu Chunky Tomato Garlic & Onion so I stopped trying to make it myself. Well, I found a copycat recipe for Ragu so I thought I'd try to do it again and see what happens. I'm also going to make meatballs and a salad.
 
Tonight we're having the Ritz Parmesan chicken from this thread! I've heard such good things about it, I'm hoping I do it justice. We'll also have steamed broccoli as a side dish!
 
I'd like to have the knockoff Ragu recipe if it is good.

Tonight we're having grilled pork chops, Italian pasta salad, and broccoli with cauliflower. If the kitchen is cool enough I might throw together a batch of brownies.
 
I have no idea! Tonight & tomorrow may be pizza nights because I've spent the day (and will be there tomorrow and Saturday as well) in my aunt's hot kitchen helping her cook (she owns a catering company). I have zero desire to cook anything. WHEW it is HOT! It isn't air conditioned and with those ovens going it is brutal.
 
We had a flood under the sink and two plumbers spent all day there, so we ordered Chinese- I ordered steamed shrimp and veggies with black bean sauce. It's on its way! Then since I'm *off* this evening :cheer2: I'm going to visit my nephew and to look at some sales at Target! Yay! :cheer2:

Tonight I am making homemade pizza. I have some little individual crusts so me and my hubby can have exactly what we want on top :)

Last night I made a potato/onion package with garlic and butter to cook on the grill. Grilled some drumsticks marinated in italian dressing, along with corn and a dilled cucumber salad with onions. It turned out really good!

Tonite my DD and her family is going to the Festival of Mt Carmel, so DH and I are going to have leftovers. I have plenty in the fridge, so it will be a "free" night for me!

I'd love the recipe for the avocado sauce, if you don't mind. It sounds so yummy!
