I did not end up making the chili and cornbread last night so it looks like that will be tonight's dinner. :sunny: Yesterday the girls just had some mac & cheese and DH made himself a burger.
 
Well, we're heading to my parents this afternoon, so it will probably be takeout from someplace.
 
I have parent orientation this evening and a day of cleaning the house and trying to get some work done (I have a small ebay business)...FMIL is coming this weekend so I will be having pizza delivery tonight...I have just moved to the "country" from the burbs and not many places deliver around here...BUT I finally found a good place that delivers :cool1: ...where I am originally from (10 min outside of NYC) every place delivers...I guess I am spoiled...and now I am being a babbling idiot!!!

Tonight I am making pizza. I am making the sauce from the leftover roasted tomatoes and garlic from last night's dinner, and then topping with fresh mozzarella and basil from the garden.

Since DH is out of town, and my kids don't like to be adventurous, I decided to go easy on myself. I'm making Pizza Meatloaf Muffins, green beans, baked potatoes, and for dessert................fresh peach pie! I just picked a ton of peaches off our tree, and it's either make a pie, or start canning them. I just don't feel up to canning, and I already have pie crust in the freezer, so that seems to be easiest. I know the kids will be happy!
 
I've got Glynis' pot roast in the crockpot. I'm making mashed potatoes, corn, squash, and homemede bread to go with it.

I'd love your peach pie recipe Glynis. :) I have to make 4 pies for DD4's preschool bake sale & I don't do pie. I'm a little scared. It needs to be a fruit or pumpkin pie with homemade crust. My last attempt at pie crust was a disaster. It was hard as a rock.

That's what I would normally do, but they said no store bought crusts. I think that's ridiculous. When they see my homemade pie crusts they're going to change their mind about homemade being better. :rotfl:

But hey, how are they really going to know if I bought it or made it? ;)

That is unbelievable!!! :furious: They should be very greatful to the parents for donating their time and "store-bought" pie crusts.

Buy the one that is not preformed and crimp it yourself...it will look homemade and no one will know...pecan pie is pretty easy...I do not have a recipe though...

I agree with this! You are technically making the crust yourself when you bake it - before that it's just dough, so you're only buying the dough, really. :)

The only "rule" for a bake sale I've ever heard was "no nuts" due to allergies, but to not accept pies with premade crusts is a little much.

If you can only do fruit or pumpkin pies, apple's pretty easy. I used to have an apple tree (golden delicious) in my yard growing up, so we'd make one at least once a year. Firmer apples like granny smith are good, too.

Apple Pie

Slice about 6 apples (peeled) and toss with 2 T flour, 2 tsp cinnamon, 1/2 tsp. salt, 1/2 tsp. ginger, 1 T lemon juice, 1 tsp. vanilla and 6 T sugar. (We usually use a large freezer bag). Pur into prepared pie crust and drizzle with 2 T honey. Dot top with 6 T butter. Top with second pie crust. Brush crust with beaten egg and vent. Bake 1 hour at 400 degrees.

Today we had turkey breast, with cranberry sauce, Stove Top stuffing and spaghetti squash.

This is what I would do, my piecrust is a disaster!

We had a New England boiled dinner last night. Tonite I made a homemade vegatable soup and we had leftover roaasted chicken and gravy, stuffing and mashed potatoes.

I'll post the peach pie in a while. Got to go to the other room to get it.

I used to make homemade crust all the time, and it never tasted good, and was always hard and heavy. Now, I only use the Pillsbury rolled kind. It tastes better than my homemade. If they are insisting on homemade crust, you might want to try a pie with a graham cracker crust. I've got quite a few pie recipes for those. If you want them, let me know and I'll post them.

That's what I was thinking. With the premade crusts, and your own pie plates, how will they ever know?
 
We're trying the baked corndogs and steak fries tonight. It sure is hard to coat the dogs with that batter, but they're looking good. So far, it's not melting off. Maybe we'll have some fruit too.

I have a FANTASTIC pecan pie recipe. In fact, a brother in law swears that he decided to propose after tasting this pie, so he could have it always! If you want, I'll post that with the peach recipe.
