Today is my daughter Megan's 18th birthday!!!:scared1: How the heck did THAT happen???? She and I hung out yesterday, went to Olive Garden for lunch (I had that sinful Fettucini Alfredo) and then we went to the mall and she got the cartilage in her ear pierced. ICK!

Tonight we are ordering in.... Texas Roadhouse (ds is allergic to peanuts so we can't go there and eat- he will have Burger King) and then we will have birthday cake. It's hard to believe that next year she will be at college and it will just be the three of us here (4 if you count the dog). Seems like yesterday I was bringing my little baby home on December 22nd. Sitting up all night beside the Christmas tree, listening to Christmas music. Unbelievable.:sad1:

No idea what's for dinner. I'll go to the store in about an hour, and see what inspiration strikes me.

Nancy - Here's the recipe for the twice baked potato casserole.

5 pounds Yukon gold potatoes (peel, cube, boil, drain well)
2 cloves minced garlic or 1 Tbs. jarred minced garlic
1 medium sweet onion, diced
2-3 Tbs. butter
2 16 oz. tubs sour cream
2 C. shredded Colby Jack cheese, divided
4 Tbs. chives
salt and pepper to taste

In skillet, saute onion and garlic in butter until tender. Mash potatoes very well with hand mixer. Mix in sour cream to desired thickness. Add 1 1/2 C. cheese, onions and garlic. Place in baking pan. Top with chives and remaining cheese. Bake at 350 degrees for 40 minutes until cheese is melted and edges are browned.
 
Glynis - That potato recipe looks great! I have a problem - I'm fixing a ham for Christmas dinner with pineapple bake and broccoli cheese casserole. I'd like to do a potato dish but I'm the only one who likes sweet potatoes (I've tried tons of recipes on the guys and they just don't like them). Do you think this dish would work with a ham? Any other suggestions, anyone??:confused3

Hey y'all,

I had a car accident yesterday. I got up early & went to church with Alexis (weekly mass for her class). Then planned on a busy day to finish up my shopping. Before I even made it to the first store, I had the accident.
stopped at the yield sign looked saw no cars coming. Got almost straightened out into the middle lane & bam. I think they came out of the shopping center parking lot, but the cop ticketed me for failure to yield. He took the word of the 12 yr old in the car, as to where their car was located. She was the only person in the car who could speak English! Really ticked me off. And of course the mother & the two preteens in the car all claimed injury & was taken to hosp. by ambulance.
My neck is messed up, I went to the Urgent Care center & had x-rays, it's just whiplash, but I already had the disks problems in my neck. So I'm not feeling to great, and I'm loopy from the meds.
My car's not totaled but not drivable. Had to have it towed & get a rental. So of course none of the shopping got done.

Here is last night's dinner. It's pasta with some of the leftover chicken from the skewer plate, sauteed mushrooms and peas, and parmesean:

I NEED to finish my holiday shopping! Last night I went on a quest for Pokemon stuff for Liam. I finally found a collector's tin....but when I got it home DH told me that it is the same tin I just bought for him when we were in Florida!:headache: What can I say? All that stuff looks the same to me. So, now he has two orange tins, I guess. I suppose he can trade the cards in this tin with his friends or something.

Plus, I was a complete doofus this morning and picked up another gift for Caili on a whim, which means I have to think of another gift for Liam! I am a stickler about making sure I give each kid the EXACT same number of gifts, and I try to spend the EXACT same amount of money on each. Everything has to be fair and square! When Laura and I were about 5 and 7, one of our aunts pulled Laura aside and told her she liked her the best! I thought that was so mean and I never liked that aunt after that. She's still alive, and I'm still holding a grudge! :sad2: :mad:

I also still have to get a gift for my parents, and figure out something for DH's parents....I don't know why I left everything to the last minute this year. It's not like me to do that.

I think it would be wonderful with ham. You could also try my recipe (I think it's posted) for funeral potatoes. We always serve that with ham and a green veggie.

Oh, I am so sorry!! I have had 2 accidents and both times really took me out of commission for a week or so. I hope the medications help take the edge off the backpain.

Thanks for all the kind words. Visitation will be tomorrow night, Funeral on Saturday. We are still 'negotiating' with his family about celebrating their Christmas. She wants to move it to Sunday night. I just can't take driving that much in 5 days time, so I suggested we just come a little early on Christmas and go to their house first. It's honestly not worth 2 hours in the car to open 3 presents, and we'll be with them tomorrow, Sat, and Tues.

His grandmother, who just lost her spouse, is adament that Christmas still be at her house this year. It'll be hard to be in the house and he not be in his recliner watching the grandkids opening all their presents.

Becky Don't worry about the Pokemon thing. I live with a Pokemon master, there will be cards in there that he doesn't have. If Liam does the card game he will need doubles and triples. I have learned too much of that crap:rotfl:.

I have a splitting headache. I may take a nap which I never do. Thank God I have dinner in the crockpot. If its good I will post the recipe since it was REALLY EASY!
