Hey guys, I just heard from Gretchen, Kenny's Dad passed away this morning. Please keep her and her family in your prayers.:sad1:

Kathy--I have had Gretchen on my mind all day...now I know why........Thank you for passing the information off to us..................

ETA: After 5 days of barely being able to function because of no coffee, I managed to find a substitute. My husband picked up a 6-pack of 8 oz. Diet Dr. Peppers. While they aren't my favorite, and I try to limit my consumption of carbonated drinks, I was able to function yesterday!! I felt like myself again!

Not sure WFD tonight. I didn't make it to the grocery store last night when we got back into town, so all that's in the freezer is a Bertolli's frozen meal. It will do in a pinch.

Boring weekend here, Rick visited for a day and is back in Detroit. BUT....we leave for DL Friday morning. I started packing last night.:yay: :yay: :yay:
YAY! how exciting..I have never been to DL! :( We are tentatively thinking 2009 though, since we already have the idea of 10 days at WDW for October 2008 dancing in our heads ;)

I just finished Book 6 of the Harry Potter series and I keep seeing your Rick every time Hagrid comes into the stories ;). Donny is going to bring Book 7 to me this week...now I know why he barricaded himself in his house for the weekend when it came out!
Well you are one book up on me..i FINALLY read 5 a few weeks ago..but of course now i am taking a class and no time for reading..sigh..i miss those mini-wizards! lol

Dinner tonight is the citrus garlic roast chicken on this thread! Yumm!!!!! I was going to do it for dinner last night, but we ended up celebrating DH's stepdad's birthday. It was fun, but my mouth was set for roast chicken. So, no fiddling around! Today is chicken day!!!! I'll probably bake some potatoes and steam some broccoli to go with it. Nothing fancy, but since the weather has turned downright cold here, this comfort meal will taste really good!
Boy that sounds GOOD! I might have to steal your idea..Greg is working OT at the station today/tonight..but i bet he would be thrilled to come home at 8:30 to the smells of a nice home cooked chicken dinner....lets see if i win girlfriend of the year tonight ...hahah.
 
Gretchen, I'm sorry to hear about Kenny's Dad. My condolences to you and your family.

Last night I made paninis because we got home late and of course had to eat in front of the TV for Monday Night Football since the Patriots were playing. They were pretty good.

I'm kind of tired from staying up to watch the game, so am planning on comfort food tonight--chicken roasted with garlic, shallots, rosemary, and thyme, a roasted winter squash with maple syrup and butter, and roasted potatoes, that I will do in the same pan as the chicken so they get nice and crusty.

Do y'all get e-mails from Allrecipes? I get a daily newsletter type of e-mail which features a recipe. Got one recently that sounds like a very simple "Alice Springs" chicken dish minus the mushrooms. It's called EASY Honey Mustard Mozzarella Chicken, which I'm going to try tonight. Sides will be pasta and sauteed spinach.
 
I think I will make the Frenches onion chicken. I have a package thawing now, so we'll see what I want as the day goes on.

We had a great weekend in Houston! Great Tex-Mex food, shopping at the Galleria & the Astros won the game & opened up Minute Maid stadium for a fireworks show after. It was fun!

I felt good enough yesterday to start cleaning closets to get ready for the remodel. That hopefully will start soon.:confused3 But that's why I didn't check in yesterday & I have tons more to do on that.

Dinner last night had to be easy & low-fat from all the pigging out we did over the weekend. So we had pan seared tilapia, broccoli and a salad. Even that can't make up for all of the eating we did!

Tonight will probably be more of the same type deal with chicken.

The chicken was incredible! My family literally stripped the chicken clean! Not one smidge was left!!! Instead of baked potatoes, I mashed some, and that went over really well, too! Yum!

The funniest part, though, was Leslie's face as I brought the chicken to the table. She squealed with joy and yelled, "We're eating piggy tonight!!!" Nothing we said could convince her that it was chicken. She just KNEW that cooked piggy looked like that! Well, whatever it takes to get her to eat her dinner.

Kathy- I am feeling better, but I cannot put too much pressure on my knee. The ligament that is torn is the one that keeps your leg from going to far forward, but the knee cap keeps your leg from doing that as well. My knee is inflamed because my leg ( or something in there?????) keeps pushing too far and my knee cap is pushing back. Between that and that meniscus thing I just have to be careful until the PE starts on Friday.

I am trying to get winter clothes out and fall clothes separated from summer clothes, as well as sending Kady's clothes to the Princess down the street. I cannot just sit all day so this seems to be a good compromise.

I started reading thru the tips you sent last night...those are better then the guidebook we got! I'll be packing them in my bag! And please tell Leslie- I always wanted to know where "when pigs fly" came from. I didn't know they had feathers too!:lmao:

Gretchen- :hug: I'm thinking of all of you. But I think I know who the "rock" is there and you get an extra little squeeze from me.

Kathy- I think we need to get Marisa in on this monitoring Nancy thing... I think she's too far away to take us seriously. But, I'm thinking we can go over to the disabilities board and copy down some of the wheelchair and ECV rental numbers and PM them to Marisa....;) Maybe if SHE threatened Nancy with them- or better yet! gave them to Buddy to threaten with......yeah, that's the ticket..... and then we can mail sandwich fixins' to Buddy so he won't be punished by the Nana-tized food.:rotfl2: Oh my, I laughed myself to tears with that one.:lmao: :lmao:

And Nancy- Your daily reminder..... Take it easy and stay off that leg! (Once again....sternest face I can muster- then a na-na boo-boo tongue sticking out face):thumbsup2 :rotfl:
