Well no Chicken Pasta Parmesan for us tonite, we got sidetracked. Modern technology - Kyle came home with his new PC(IBM ThinkPad) from school, they use it for ALL schoolwork. Of course Mom had to play with the new toy:woohoo: . It replaces notebooks, written homework assignments, etc. It's so neat, they rent it for $250 per year.....anyhoo we ordered pizza!! I'll do the chicken tomorrow in case I don't post in the AM.

Becky thanks for the curry roasted potato recipe! I fixed them tonight, they were yummy. I'll post a pic of dinner later.
 

Here's a pic of tonight's dinner. I started wanting to fix Becky's potatoes & then figure out what would go with it. So I thawed out some halibut & had planned just to pan sear it with lemon. I also fixed had fixed some mustard greens. At the last minute I decided to fix a coconut curry sauce for the fish. After tasting I decided to plate it all together, a la Emeril style!

:) Sure, I think you could just leave it out, I don't put in quite as much as it calls for either, cilantro can be overwhelming! (If you like basil, you could try using that instead...maybe...?)

Hi everyone. I'm a bit of a lurker here but I just had to delurk to share this.

I copied some of the recipes from this thread and finally got around to making one tonight.
We had the Buffalo Chicken Lasagna and wow that was just fantastic!
My husband was raving about it, said it was definitely a keeper :thumbsup2

I was a little worried how it would turn out since our Safeway here only had super crazy hot wing sauce, but I just put a little less than the recipe called for and it was perfect :)

So thank you so much to whoever posted that recipe. And also thanks for the easy to use index on the first page. Definitely a brain saver ;)

Next on the list to try this week is the baked hunter's stew.

Such an adventurous week for us :rotfl:

Sheryl- I have the potato recipe but my kitchen has been closed this week. Any more pictures and my guilt level is going to be enormous!

I never cooked last night, stressful day! Today I am going to clean this house and take the kitchen back :rotfl2:. I'll try again for that easy grilled hamburgers. I have got to because Erica gave me a lot of peppers from her garden and I want to make onions and peppers to top the burgers so no deviating for me ;).

Incidentally, Harry Potter keeps calling me. I should have kept moving yesterday but I was almost finished with Book 3 and, you know what happened then.....on to Book 4!

Oh, and TIA to all ya'll NOLA ladies for "hopefully" blowing some of your gulf moisture our way--looks to break our heat wave this weekend. Even if the temps get in the mid-90s, we'll be getting some relief!

I have defrosted some tomato sauce (no meat). We will have that over some sort of pasta, salad and eggplant parm. I bought one of those premade eggplant parm side dishes from the deli counter.


Another east night for me. We are going back to get weighed in tonight at WW...:scared1: ...I have not been following as good as I should have been...

All of you with heat issues........glad to take some up this was....it was in the 40's last night and right now it is a balmy 59 degrees, lol. Such is life in Maine!!

Dinner tonight will be Haddock.....not sure how I will cook it yet....maybe with a lemon sauce. We will have fresh green beans and cous cous with it.

Kathy--according to our weather man this morning, whatever Tropical Depression is in the gulf right now won't reach hurricane status--I surely wouldn't hope for a hurricane for ya'll just so we'd get a little relief! Hopefully, there isn't another storm brewing out there in the gulf. As much as I love the friends we've made that are Katrina transplants, wouldn't want that to happen again!

Wendie--How amazing is it that we live in the same country and your temps are 50 degrees cooler than it was here yesterday!

Lauren, Good luck at WW! But I'm going to just pretend that I don't own a scale for now!

I really need to get myself back to the neurologist for a neck & back checkup. I've been having a lot of pain & numbness, (not anything new for me, just getting worse) even swimming as been causing it to flair up. So keeping the weight off is getting tougher.

For dinner tonight we'll have last night's yummy leftovers, if I can stay away from it for lunch that is!
