We ended up going out to eat with my in-laws last night so I didn't make the pasta. Tonight I am making BBQ chicken sandwiches and steak fries.

WFD at your house?

Hi Nancy, the sweet potatoes are super easy!

Thanks for the recipe, I am definitely adding these to the list this week!

Becky and Laura-----good eats for sure in those photos!!!!

Nancy---Buddy is a happy man I bet......hehehehe...I can just picture him all happy and smiles with his plate of his fav tuna sammy's...lol;)

It is 8 AM and I am craving fish and chips :lmao:, this is going to be one long day!

As to Buddy, he came in tired and hungry, so when I told him I made tuna he was thrilled :confused3. I offerred to make his sandwiches but was reminded that I don't do it right, something about not needing the mayo and tomato to reach all corners. I did not tell him the mayo was homemade though until after he ate :rotfl:

I am so not a computer or camera person.:sad2: DS just told me to use the camera next time and not my cell phone to take the picture.

The eggplant sticks have been great every time I've made them, using the recipe Laura posted!!!

Nancy - I'm so glad you made Buddy happy last night.........with his tuna sandwich!:rotfl2:

Kathy- I could not find the eggplant pics, but would love to see them. Marisa has been asking me to make them. As to the cell phone :rotfl:,

I haven't visited since Friday afternoon and I think I have caught up. If I miss anything important, please forgive me. I am exhausted. Saturday I helped a friend get ready for her niece's (more like her daughter) wedding reception. I met her at the reception location Saturday morning at 8:00 and didn't leave until it was time to run home to shower, change and get back. Also, NO AIR CONDITIONING!!!!! Let me tell you friends, I am too old, too fat, and too far into menopause to spend a day in the deep south in August in a place with no AC working my fanny off. I was soaked through to my skin.

She asked if Kenny and I would forgo the ceremony and go back to the reception hall to get the last minute things ready. Of course I agreed, but I shouldn't have bothered to fix my hair or face before returning. By the time the wedding guests arrived, I looked like I had been on a run. My makeup was gone and my hair was damp and stuck to my head. The only saving grace was it was out of town and I didn't know anyone there.

I woke this morning sore all over and with a headache. Too out of shape for all that heavy work. :sad2: Oh well. I spent the day shopping with DS. His birthday was last week and his birthday money was burning a hole in his pocket. He wanted me to take him to the mall so he could get some new clothes for school. :rolleyes1 I guess this means we are now leaving the "girls are yucky" phase.
OMG you have me exhausted and I am just reading about your day! You are one fabulous friend, let me tell you! I know how you feel about age and weight catching up...I am feeling every on of my 50 years, but even 5 years ago I was not falling apart :scared:. And then you went shopping with a boy who has discovered girls! You really need to take a day off I think!

Nancy---Buddy is a happy man I bet......hehehehe...I can just picture him all happy and smiles with his plate of his fav tuna sammy's...lol;)

:rotfl2:You ladies make my day every day!

Tonight we are going to have hamburgers on the grill with fresh cucumbers, tomatoes and onions. I think I may make a potato salad as well. Buddy came home with fresh onions, potatoes, heirloom tomatoes and cucumbers as well as melons and some yellow watermelons. Yumm!

There was no corn but maybe he can get some today, our friends grow the best produce in the state, I think, and if I can't get sweet corn from them I will go without!

Morning all--sorry I've been MIA all weekend, but work took over. Dinner hasn't been anything spectacular anyway, frozen pizza, and out to local joints twice. Tonight will be something with ground sirloin as it's defrosted in the fridge. It's supposed to be 107 here today, so whatever I cook, I"ll be keeping the oven OFF!

Morning all---Ross is at theater camp from 9-4 this week...he is in Robinson Crusoe......he will find out his part at auditions today.
I will run errands at some point, and if I am feeling very nice I will go visit my mil.......
Dinner tonight will be pork chops done someway and then someside dishes....right on the ball aren't I?!!? lol....I picked up a blueberry chutney at the farmers market that I might put on the chops before I broil them...I will let you all know...........Have a good day all!!

Nancy---your veggies sound awesome!!

Hey All! The DIS is slow today for me...Ughhhh! Forgive me for not replying to all that I have missed.

Kathy, I couldn't see your pic either and would also love to.

We are having sausage peppers and onions tonight. I will probably make pasta as the side and maybe salad or sauteed yellow squash.

We finished our stairs. Tom is so excited that he did a great job with the carpet that he wanted me to show all of you. I do not have a before pic but basically the stairs and balusters were the unpainted wood and no carpet.

I just need to clean them up a bit (some paint ran a bit):

Have a great day all!

Good morning everyone!

My eggplant pic got messed up cuz I was messing with photobucket and deleted it, but I found it and it should be visible again.:sad2:

Lauren - The stairs & carpet look beautiful!!

It's red beans & rice Monday!!

Kathy- no apologizing for those sticks! They look good to me :thumbsup2.

Lauren- the stairs and carpet look beautiful. All these projects going on make me feel like I should take out a paint brush, some of my rooms really need it. Not until September though, I can't manage that kind of thing with a little one around any more.

Try to stay cool to all of you in the sweltering heat. It gets hot here, but nothing like the temps you are experiencing.

Wendie- if you visit MIL I bet you will need something to cool off!

Count us in with the over 100 degree temps! I can't believe how hot it is!!!

Alan left yesterday to go back to the mine. Things are not looking good there. It's been 8 days, and there is no sign of the miners. They drilled a hole and dropped a camera where they thought the miners were, but no sign of them. It's getting harder for the families to keep their hope up!

Dinner tonight will be leftover Honey pineapple chicken. It was really good!!! Here's the recipe:

Honey Pineapple Chicken

3 pounds chicken breasts
2 Tbsp vegetable oil
1 can crushed pineapple undrained
1 C. brown sugar, packed
1/2 C. honey
1/3 C. lemon juice
1/4 C. butter, melted
2 Tbsp. prepared mustard
2 tsp. soy sauce

In a skillet, brown chicken in oil in batches on both sides; transfer to a slow cooker. Combine the remaining ingredients; pour over chicken. Cover and cook on low for 3-4 hours or until chicken is no longer pink. Strain pan juices, reserving pineapple. Serve pineapple over the chicken.

Wendie -- Blueberry chutney...YUM! One time in Maine I had crabcakes that were served with blueberry chutney, and they were the best crabcakes I ever had. Shh...don't tell my mom.

As usual, Becky made too much food yesterday, so I have leftover haddock in my fridge. I am going to make fish tacos with it.

Whew, I think I've caught up now! ;)

Wendie, I saw the revised recipe for the biscuits. No problem, I didn't cook a darn thing all weekend!!!

We ordered out all weekend! A new delivery fried chicken place opened nearby, so of course we had to give that a shot. Last night was an Outback night.

Lauren, You can tell Tom that we approve of his work! Are you ready to rent him out!;) Seriously, I love the carpet, very pretty!

Kathy, So glad to see you giving the food porn a shot! :thumbsup2 Looks good, but yeah I know I don't want my shots coming up right after Becky's!!!

Probably a red beans & rice Monday here! Gotta go see what's in the freezer

Have a good day friends!

What new chicken delivery place??? How was it????

Scooters Chicken Delivery! Opened on Barataria, it's a brand new franchise starting here (this is the 1st store). They have fried chicken & strips, whole rotisserie. It was very good, the biscuits are especially yummy, cheesy with some type of honey glaze. The green beans were verry good too.

Thanks, I'll have to check that out!!!

I am just making a pizza tonight. The usual margharita kind. I was supposed to make fish tacos, but I ate a black bean burrito for lunch so did not feel like more tortilla food. I pawned the leftover fried haddock off on my parents, so I don't have to feel guilty about not eating it.

Tonight was supposed to be my husband's monthly Geek meeting so I didn't have anything planned for us. He finds out yesterday that is has been moved to next week. So it will probably be Subway for us :guilty:

WFD at your house?

Morning all-

This is Ross' late night for karate, and Kris is working super late as he is replacing 16 windows in a house this week (the people are on vacation so he can work late, and he has a dock to do wed night, so he loses a window night then) so he won't be home for supper, looks like supper will be soup and grilled cheese for Ross, and I will make Kris a fried egg sandwich, for me, I will have a lean cuisine, or something like that.

Hope everyone has a great day!

Thanks all for your nice comments on the stairs. Tom is really proud.

Sheryl, Congrats on your remodeling news!!! Tha must be a big relief for you!

Kathy, your eggplant looks yummy...thanks for sharing!!!

Gretchen, your weekend made me very tired.

Lauren- the stairs and carpet look beautiful. All these projects going on make me feel like I should take out a paint brush, some of my rooms really need it. Not until September though, I can't manage that kind of thing with a little one around any more.

Thanks Nancy! We are going to be tackling a list of renovations around here...Tom just ordered a digger for his lawn tractor and I think outside work will take over... I do not have patience to do this stuff but I guess I am learning...:)

I wish more people would post pictures. I was talking with a friend of mine yesterday, who is sometimes on these boards, and when I said I posted dinner photos here, he was flabbergasted. He could not believe that 1. I am so weird as to photo my food, and 2. anyone would be interested in seeing it.

I will try to take more pics...I really love yours...

**************
Andrew and I are going to see my Mom today so dinner will be quick. I was going to make a swedish meatball type meal over noodles and fresh green beans. Depending what time we are getting home, it may turn out to be hamburger gravy which is equally as good and will be a little less fattening if I drain of all the fat...I gotta lose this weight before Disney.

Have a great day all!

Good morning ladies!

Tonight we're having Chicken Pasta Parmesan, basically a chicken & pasta dish in a creamy parmesan sauce with bell peppers. Sides will be corn and a salad.

Have a great day!
