Kathy and Tink- you both have me hungry for seafood!

I actually did not have to do much yesterday. No jockeying tractors yet!

Glynis- I love your family wedding celebration! When my DH was a kid weddings were always at his Grandmas, and they lasted about 3 days. Big family picnics and lots of fun. We could not do this when we got married, (he is still whining) but we rented a hall and invited all, kids all welcome!

Today I think some of us are helping Dan again- I am so sick of moving things! I have to move some of my things to make room for some of my Moms things, we are trying to keep the things she treasured with us so there is a lot of switching out going on.

Buddy is helping a friend cut today. I think that he is going to be seriously short for help. Tonight I am going to cook pork chops and something.

We are so fortunate (and spoiled). My seafood guy Roscoe (quite a character) is fantastic. I usually get an extra pound each week and freeze it for the winter- today I got some fresh "picked" crabmeat to sock away also for some winter crabcakes. We usually have shrimp every week during spring and summer (fried or steamed with Old Bay usually). We ate out earlier this week at Sanitary Fish Market on the water (didn't see any dolphins go by this time)- shrimp cocktail, soft shelled crab, trout, shrimp, scallops and oysters! Leftovers for lunch and still crave more... My aunt has the fisherman come right up to her dock to get her seafood but I do drive about a mile for mine. :rotfl:

Oh my, you have me drooling!

Hi, everyone! It's been a busy couple of days here. My nephew got married yesterday, so Alan and I spent the day with family. After the ceremony, we had a fun "wedding luncheon" that was great. Turkey, ham, salads, chips, salsa, lots of desserts. It was so much fun! Instead of a traditional reception, the bride and groom decided on a casual barbecue at her dad's house. It was a ton of fun. Hamburgers, hot dogs, pasta salads, fresh vegetables, brownies, cookies, and of course, wedding cake! It was really perfect for them, as neither of them are "dressy" folk!

Today is our town's celebration. We started off the morning with a parade, games in the park, and a town barbecue. We had steak sandwiches, and Polish sausages for lunch. Since Alan has to leave tomorrow to go back to the mine, we are going out to dinner tonight. The kids will be having mac and cheese. Poor kids. Actually, they love the stuff and would eat it all week long if I'd let them. I don't know where Alan and I will go, but it should be fun! It will benice to spend some time with him before he leaves again tomorrow.

Sounds like you had a really fun weekend...:cool1:

Nancy, you are making me exhausted just reading this...you need a vacation! :)

I forgot to say what we are having for dinner....left overs from yesterday. I have some burgers still to grill...we are getting jersey tomatoes now so a nice big juicy burger is calling my name!

Have a great day all!

Good morning everyone!

Lauren - Sounds like y'all had a wonderful day, thanks for the invite!;) We set another record heat temperature yesterday, no grilling in our near future. I'm not going to complain about the heat any more, it could be worse, so far no tropical stuff to worry about.:scared:

Tonight will be Cajun Chuck Steaks in a Mushroom/Wine Gravy, buttered noodles and eggplant sticks. YUMMY!!

Sounds like everyone is having a fun and (especially Nancy) busy weekend!!
Kris is working on the spec house today, and I am trying to get things back together after being gone late Friday and then all day yesterday!
Friday we had to make a run to calais which didn't get us home until 2am, and then we had to be at the photo shoot in cape elizabeth for 9:30....these two things are literally on opposite ends of our state, and we are right in the middle (sort of, lol). We did have a gorgeous day on the coast yesterday and the photo shoot was fun.

For supper we will have a quick meal of beans and hotdogs, I will make a half batch of biscuits to go with it along with a salad with my farmers market fixings, lol.

I forgot to take pictures of the baguette with cultured butter and the cold cucumber sauce that went with the salmon.

Today we are having more fish. Spicy and greasy Rhode Island style calamari, fried clams, fried haddock, cole slaw and potato salad. I am making Laura shuck the clams as we speak! I am a mean tyrant chef in the kitchen, and make her do all the dirty work.

So, Alan and I went to a yummy Thai restaurant last night, Lemon Grass. It was our first time there, and we loved it! Alan had a kind of sweet and sour chicken dish, and I had a spicy curry. It was great! We will definitely go back!!!

Alan leaves at 2:00 today to go back to the mine, so it's just me and the kids. I'm thinking an impromptu trip to visit my mother might be in order. It would be nice to have another adult around to help me corral my kids! Anyway, dinner tonight will be Honey pineapple chicken in the crockpot. Don't want to heat up the house. Salad on the side. Got tons of tomatoes in the garden that I need to use up. Maybe some summer sqash, too!

Awesome pics again Becky. I'd be happy to fill in for Laura anytime:laughing: Now you know we MUST have pics of the spicy, greasy stuff!!

You know that I need that recipe, please.

I would also stand in line to help in your kitchen :worship:, and I heard that you bite, but I can't tell who told me :ssst:

Would you share this recipe?

I forgot to tell you what we had for dinner last night. I had one very happy husband....tuna sandwiches!!!!!!!!!!!!!!!

Tonight we are having grilled Pork chops in yoshida sauce, broccoli, baked potatoes, green salad, and a chocolate wacky cake for dessert. I have some caponata that I bought at Costco for an appetizer.

Kady is not a sweet eater so when she asked me if I would bake her something chocolate I was thanking Laura for the recipe. I have some dairy free chocolate chips from Trader Joes' to top it, and a dairy free chocolate frosting.

I have had an easy day today. One trip to Daniels and grocery shopping after that. Sounds like summer is in full swing and everyone is busy lately.

Hi Nancy, the sweet potatoes are super easy!

Roasted Curried Sweet Potatoes

2 lbs. sweet potatoes, peeled and cut into 1 inch chunks
6 tbsp melted butter
1 tsp. sweet curry powder (madras)
1 tsp. kosher salt

Oven 450 degrees.

Mix the salt and curry into the butter, then toss the sweet potatoes in it.

Place potatoes in a single layer on a baking sheet and roast, turning once, 20-30 minutes, or until tender.

Tip: line your baking sheet with non-stick aluminum foil for easy clean up!

Greasy photos coming next. Take your lipitor before looking!!!

OK, you were warned! This is the greasiest meal ever to make its way into the disboards! I did not even take a picture of the cole slaw! All grease, all the time, coming up!

Here is our appetizer: spicy and greasy rhode island style calamari:

Then, some skillet cornbread (replaces the planned potato salad):

Fried haddock:

Fried clams (these were AMAZING! Best clams ever):

No more fried food for a while, though...

Yeah, the pores on my face feel like I did an 8 hour shift at McDonalds. The food was really good though. I would definitely shuck those clams again.

Sheryl---I think it was you who asked me how to do my drop biscuits...rolled out style...................I had said to reduce the milk to half a cup but when making them tonight I realized I read my grandmothers handwriting wrong and it is to reduce the milk to 2/3 cup to make them rolled and cut biscuits instead of drop.

Sorry about that!!!

Becky and Laura-----good eats for sure in those photos!!!!

Nancy---Buddy is a happy man I bet......hehehehe...I can just picture him all happy and smiles with his plate of his fav tuna sammy's...lol;)

Glynis--I would like the recipe as well!!!

OK, be warned, this is my first attempt at posting a pic, it came out very dark and looks burnt. These are the eggplant sticks I've been doing thanks to Laura & Becky. Kyle had a friend over and they gobbled them up, they're very, very good!!

OMG, I just realized I posted this after Becky's awesome pics. They look terrible in comparison.:sad2:

Becky and Laura You are safe at least for no dethroning tonight.
:rotfl: We had hot dogs stluffed w/cheddar and wrapped in biscuits and potatoes.

Kathy Your eggplant sticks look really good. :thumbsup2

As long as they tasted good, that's all that matters! Did you like them? I've seriously not ever been able to make them taste right.

I wish more people would post pictures. I was talking with a friend of mine yesterday, who is sometimes on these boards, and when I said I posted dinner photos here, he was flabbergasted. He could not believe that 1. I am so weird as to photo my food, and 2. anyone would be interested in seeing it.

Nancy You had me nervous for a moment I thought this tread was going to get the big Poof. Glad to hear Buddy got his favorite sandwich not ;)

I am so not a computer or camera person.:sad2: DS just told me to use the camera next time and not my cell phone to take the picture.

The eggplant sticks have been great every time I've made them, using the recipe Laura posted!!!

Nancy - I'm so glad you made Buddy happy last night.........with his tuna sandwich!:rotfl2:

Good evening everyone.

Sheryl - Congrats on the state approval for Mario. I know it will be such a relief to get the project started. :cool1: :cool1:

Janice - Welcome Home! I hope you love your first stay as a member.

I haven't visited since Friday afternoon and I think I have caught up. If I miss anything important, please forgive me. I am exhausted. Saturday I helped a friend get ready for her niece's (more like her daughter) wedding reception. I met her at the reception location Saturday morning at 8:00 and didn't leave until it was time to run home to shower, change and get back. Also, NO AIR CONDITIONING!!!!! Let me tell you friends, I am too old, too fat, and too far into menopause to spend a day in the deep south in August in a place with no AC working my fanny off. I was soaked through to my skin.

She asked if Kenny and I would forgo the ceremony and go back to the reception hall to get the last minute things ready. Of course I agreed, but I shouldn't have bothered to fix my hair or face before returning. By the time the wedding guests arrived, I looked like I had been on a run. My makeup was gone and my hair was damp and stuck to my head. The only saving grace was it was out of town and I didn't know anyone there.

I woke this morning sore all over and with a headache. Too out of shape for all that heavy work. :sad2: Oh well. I spent the day shopping with DS. His birthday was last week and his birthday money was burning a hole in his pocket. He wanted me to take him to the mall so he could get some new clothes for school. :rolleyes1 I guess this means we are now leaving the "girls are yucky" phase.

Tonight's dinner was Becky's tomato and brie pasta. It was wonderful and no, I did not take a picture. First and foremost, mine did not look as good as hers and second, I am completely ignorant as to how to post a photo.
