Tonight we are having leftover spaghetti and meatballs, salad, and bread. Oh, the sundried tomatoes in the sauce was AWESOME!

Tonight we're haveing Creamy Cajun Chicken & Pasta, which is posted here, salad and garlic bread.

The ribs last night were yummy. I do think that next time I would add a little liquid smoke to the bbq sauce mixture to give it a little smoky flavor

Melt in Your Mouth BBQ Ribs

2 Sides pork spareribs (about 6 lbs--I used half that) separated
1 (28 ounce) can chunky tomato sauce
1/3 cup brown sugar
2 tbsp red wine vinegar
1 tbsp Worcestershire sauce
1 tbsp reduced sodium soy sauce
1 tbsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/4 tsp cayenne pepper

Place the sparerbs in the bottom of a slow cooker. In a med. bowl, whisk together the remaining ingredients. Pour mix over the spareribs. Cover and cook on low for 6-8hrs or High for 3-4hrs.


Tonight will be Curried Peanut chicken with couscous and black beans. Once again a new recipe--will post if yummy!
 
I'm going to a restaurant for a coworker's retirement party. My dh and kids will probably get a pizza or something... Then tomorrow night we take off in our new camper until Monday... I see lots of grilling in the next few days.:woohoo:
 

Lauren, have you tried the limoncello with cream (non fat half & half works too), 2/3 limocello to 1/3 cream it is totally addictive!!!

Glad to know your kitty is going to be fine. I completely understand. We don't have a cat because DD is highly allergic, but we feed four who appear to have been dumped in our area. They live in the woods behind our house and like yours, keep the mice and snakes away. One of the four is finally getting close enough to touch.

Thank you! At times we could have about 17 outside :crazy: ...some are fixed. After the wedding I am going to start trapping them to neuter release. Most we cannot get near but there are a couple that are friendly. Midnight is a lover girl...we will be sitting on the patio and she will jump into our lap. Then look at us in the window when we go in. :upsidedow



Still no more test results back from Mom. They gave her some new meds for the ulcers. Thank you all for thinking of her.

No word from the vet yet re: Sey. He should be coming home today.

I think we are doing chinese tonight...Andy boy has another basball game at dinner time.

lucas - did you try the corn on the cob recipe last night?

No, I didn't make it last night cause we had "the big salads" and left over pizza. I think I will make the corn tonight and probably another salad. I have to be good because of the damage I did in NOLA last week. :eek: :rotfl:
 
Tonight will be crock pot Hawaiian Pork roast.

It sounds really good and I needed something easy for tonight.
 
liamandcaili, Thanks for the tips on brining chicken. Of course, I went off & looked it up myself, but tried to do a quickie version of a wet brine. So I've probably ruined a perfectly good chicken! I soaked it for about an hour, BUT I forgot to wash it off before putting it on the can!!:scared1: I didn't realize it until I saw your post & the chicken was already on the grill. I'm getting ready to go baste it with a sweet baste of lemonade,limocello & rosemary sauce. We'll see if I can counteract the salt!

I hope it was good!

Tonight is a skating and soccer practice night (I will be SO happy when soccer is over!!) so I am probably having leftover pizza or whatever else I can scrounge out of the fridge when we finally get home.

I've never made ribs before but I just bought some boneless pork ribs last weekend and am hoping to make them soon. Would this recipe work with boneless meat or is it better for boned ribs?
 
We ended up eating out on the run last night, so tonight will be the beef and bean skillet with green beans on the side.

DH comes home today!!! Now it's time to buckle down and get the car ready to drive to Disneyland!
 
For dinner tonight, we are having lime tortilla encrusted tilapia, scalloped potatos, and squash/zucchini. I will be getting in late from church/work and LOST season finale is on at 8pm - the tilapia is a Costco frozen item, potatos are boxed (EEK!), and zucchini/squash is easy to just boil up and drown in butter.

I am not proud of this meal choice but it'll be yummy and easy!

Aimeedyan- I use Costco prepared foods and they are good. Sometimes it cost more to do it yourself, and I don't always want to do that.

I have no idea-yet again- what I am going to fix for dinner. A gal I know is coming over later on for some perennials and she has never been here before. It occurred to me that the pollen that I know so well may not look familiar to her, so I better clean it out! I may just toss burgers and dogs on the grill again :confused3
 
Morning Y'all,

I sure miss a lot here in the evenings! But there was no pulling me away from the TV last night! :cool1: Apollo won Dancing! And on Idol, Blake & Jordin gave some wonderful performances!

My semi-brined, beer can chicken came out fine! It wasn't too salty at all. The baste was good, but it didn't pick up the lemon flavor as much as I hoped it would. DH thought it was the best beer can chicken I've done!

amieedyan--not sure on the bone-in vs. boneless--that was my first attempt at ribs, so I have nothing to compare it to.

I do ribs in the crockpot all the time! I've used both bone-in and boneless, and they turn out great no matter what. I would watch the cooking time with the boneless, otherwise you may end up with shredded pork, instead of ribs. Still good, though.

Use them! You'll love them!
