Lauren - I'm sure Andrew will be fine, I know that's very easy to say.You're a worrier like me - I'm a nervous wreck because Kyle is on a bus to Monroe, I'll be OK when he calls and says he got there safely. My situation is very different though, Kyle is much older. Have a drink and let Tom give you a massage - you'll feel like a new woman!

She usually just serves as is. When cooked right, the eggplant is almost creamy inside of the crunchy exterior crumb, so it really doesn't need a sauce. They aren't dry (except when things go wrong and the eggplant mysteriously disappears and all you're left with is crumb...I don't understand how that happens.) DS does dip his in ketchup (he has an egg allergy, so when I make the sticks, I substitute a Tbsp vegetable oil for the egg) but he's eight. I wouldn't recommend going with his food preferences. He once opened up his peanut butter and jelly sandwich and spooned half a cup of yogurt into the middle of it and ate it. :eek:

We have embellished the sticks a couple of times. We made eggplant bruschetta a couple times by making the recipe as is, except the eggplant was cut into rounds rather than sticks, and once cooked, the rounds were topped with fresh mozzarella and tomato and run under the broiler for a couple minutes until the cheese melted. That was good. The sticks were also a nice substitute for meat in fajitas. DSis discovered that.

Hi Y'all,

Didn't get to post yesterday. The electricity was out a couple of hours & then my internet was down a few more. We really had a lot of rain, the canal across the street got scary high & something on my roof around the fireplace must have gotten messed up. I had to do the pan & bucket thing, luckily it was inside the fireplace so walls or ceiling damage. Anyway, dinner was Domino's pizza.

Well, DD has decided that even though we'll have to celebrete her Cinco de Mayo birthday tomorrow, she want's my Chicken Enchiladas. I'm also going to try & make an easy version of Tres Leches Cake using a cake mix instead of from scratch. (I'm not a baker, but we had a really amazing version of this last year at a local rest. that I'll try to replicate.)

So, I'll be working on getting all this together for tomorrow. Tonight we have to eat at Golden Corral to celebrate DH's Grandma's 90th birthday. Maybe go out for some margaritas after to celebrate DD's b-day.

Dinner for us tonight will be a Beef and Bean Skillet. Green salad on the side with cookies and ice cream for dessert. I tried an amazing cookie recipe last week that I'll share! If you like pancakes with lots of syrup and butter, you'll love these cookies!!!

Here's the cookie recipe. It's from the mystery series by Joanne Fluke that I'm reading. Very good books, by the way!

Short Stack Cookies

DO NOT preheat the oven - dough must chill before baking

1 1/2 C. melted butter (3 sticks)
2 C. sugar
2 large beaten eggs
1/2 C. maple syrup
4 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
4 C. flour
1/2 C. granulated sugar for coating the dough balls

Melt the butter and mix in the sugar. Let it cool and add the beaten eggs. Add maple syrup, soda, salt, and vanilla. Mix it all up. Then add the flour and mix thoroughly.

Chill the dough for at least 1 hour (overnight is fine, too).

Roll the dough into walnut-sized balls with your hands. Roll the balls in sugar and place them on greased cookie sheets, 12 to a standard sheet. Flatten them with a spatula.

Put oven rack in the middle position. Bake at 350 degrees for 10 to 12 minutes or until nicely browned. Cool on the cookie sheets for no more than 1 minute, and then remove the cookies to the rack to finish cooling.
 

Dinner for me is whatever I pull from my dorm freezer...probably a philly cheesesteak sandwhich, or a pizza.
 
Lauren - yell for Tom and tell him I said you need wine or a strong margarita immediately!!!!! Several, if possible. I must have missed the bank robbery part of your fine domestic history earlier, because I actually yelled out loud when I read it. I can't believe the Father-of-the-Year committee hasn't been knocking on his door.

Wendie - sorry about your son's injury. I was on crutches three different times when I was in the eighth grade and my history teacher nicknamed me "Grace", so I chuckled when I read that in your post. I am still quite graceful, so don't think he is going to necessarily grow out of it.

Nancy - see above advice to Lauren (especially before your guests arrive). Red wine will put a lovely glow to your cheeks ;)

Lori - We were able to take DH's niece because we also invited his sister. We just got back and had a great time. The weather was sunny but hazy due to the smoke from the Georgia wildfires and was really hot, but we didn't get rained on during our trip.

Tonight the kiddos are with friends, so DH and I are having grilled shrimp with sauteed zuccini and yellow squash.

Kathy - I know you want food details, so I am including that in my next post.

Kathy, this post is for you, my WDW food report.

Day One:
Our first culinary adventure was while we were still in South Carolina. I decided to pick up some Krispy Kreme doughnuts for us to have for breakfast the first couple of mornings. We don't have a KK in our town, but there is one in Charleston, which is right on our way. I could have made other arrangements for breakfast, but during a conversation I had with DH a month ago I found out he had never had a "HOT" glazed Krispy Kreme doughnut. :eek: This was after a serious debate where he insisted that heating them in the microwave was the same thing. Now girls, any of you who have had a hot, freshly made KK glazed doughnut know that is blasphemy. I was determined to show him the error of his ways and had my fingers crossed the entire way to Krispy Kreme.

When we pulled in, the "HOT" sign was on, which I took to be a good sign for the rest of this vacation. We went in and as my friends, I am sure you weren't planning on asking how many of those hot doughnuts I consumed myself since friends don't keep count :rolleyes1 , but I will tell you DH ate two in the store and another in the car. And, more importantly, he agreed that I was right; there is nothing like a hot, glazed doughnut freshly off the line. I don't know what was sweeter, the glaze on that doughnut or actually hearing DH admit I was right in front of witnesses. ;)

We were supposed to have dinner our first evening at Raglan Road, but due to a series of really bad storms along the interstate in Georgia and over a 45 minute check-in nightmare at OKW :headache: , we weren't able to make it in time. Instead, because were tired and hungry, we went for something relatively quick, the food court at POFQ.

DN had the mac and cheese with carrots and as she said, "a measly little cookie for dessert". She ate the carrots with some ranch dressing and ate the cookie, but she said the mac and cheese was "too cheesy" and wouldn't eat it.

DD had the cheeseburger and fries and ate maybe three bites of the entire thing, but she normally doesn't eat much on travel days. I think she gets a little motion sick in the car, but since she can't tell us, it is just a guess.

SIL had the pot roast with mashed potatoes and some sort of greens (collards or spinach, maybe) and said it was wonderful. She said the roast was very tender and had a great flavor. She and I both ordered the carrot cake for dessert and we shared with DN since she only had a "measly little cookie". All three of us liked the carrot cake.

DH had the chicken and shrimp creole which he said was "ok". He said it had very little flavor and looked a lot better than it tasted.

I had the rotisserie chicken / BBQ rib combo plate with mashed potatoes and corn. The chicken was really good - tender and juicy with lots of flavor. The ribs had a good flavor but were very fatty. The corn was normal WDW corn, meaning out of a can and the mashed potatoes were good. The portion was enough that I could share some with DH but was not the portion size I have seen of the chicken/rib combo at Cosmic Ray's.

We got these meals to-go and ate them in our villa. We do that a good bit now during our trips since you can no longer get take-out from Olivia's at OKW. Because there really isn't a large selection at Goods Foods to Go, if we are looking for a quick meal for the kids and the adults can't stomach the thought of another burger or chicken strip, we will head to POFQ and get the meal to-go. We really like the food court there and the cast members have always been really helpful.
 
OKWMom, great report so far!

Love your explanation of the Krispy Kreme debate. I had to chuckle because you expained it so well and it is the same debate I always have with my co-worker. She has never had a HOT Krispy Kreme - but insists she has because she has bought cold boxed ones from Publix and microwaved them.
 
Okay, now I need a hot KK! mmmmmmmmmmm.........

For dinner tonight, I'm trying the baked pork chop recipe. It sounds delicious and is in the oven now. We are having wild rice and cauliflower to go with it.

Tomorrow, Carrielee and I have to be at the zoo from 10-4 for her orientation. So, I'm doing a crockpot chicken/dressing dish that is SO easy and REALLY good. With that we are having a squash casserole and copper pennies.

I think I'll have to try the eggplant sticks. I'll have to call them something else, though, or the girls won't eat them. Any ideas?? :rotfl:

Tigerkat, the porkchops were AWESOME! I'm not a fan of porkchops because: a) we had them too much growing up and (b) my mom seriously turned them to rubber she cooked them so long. I have now found a recipe with porkchops that I'll eat. I made a mistake at the store and grabbed a red wine instead of a white, but it worked out just fine. The girls loved them, too. I think I've found another recipe to add to my "tried and true" ones. Thanks so much!

Melanie- I knew that they were going to be good but after reading your rave review I have to pick some pork chops up tomorrow when I shop. I have one I cut out of the paper that looks very good as well. I'll post it.

The supper was so good that I called my dad to tell him about them. Since he suffered through my mom's miserable cooking as well, I thought it only fair to share such a delicious and simple recipe with him. He's coming over tomorrow and asked me to save him a bit. ;)
