Oh, I think I just drooled a little bit! These sound so yummy! You can bet I'll be trying these out! Does she serve them with anything to dip in, or just as they are?
She usually just serves as is. When cooked right, the eggplant is almost creamy inside of the crunchy exterior crumb, so it really doesn't need a sauce. They aren't dry (except when things go wrong and the eggplant mysteriously disappears and all you're left with is crumb...I don't understand how that happens.) DS does dip his in ketchup (he has an egg allergy, so when I make the sticks, I substitute a Tbsp vegetable oil for the egg) but he's eight. I wouldn't recommend going with his food preferences. He once opened up his peanut butter and jelly sandwich and spooned half a cup of yogurt into the middle of it and ate it.

We have embellished the sticks a couple of times. We made eggplant bruschetta a couple times by making the recipe as is, except the eggplant was cut into rounds rather than sticks, and once cooked, the rounds were topped with fresh mozzarella and tomato and run under the broiler for a couple minutes until the cheese melted. That was good. The sticks were also a nice substitute for meat in fajitas. DSis discovered that.
