Oh, I think I just drooled a little bit! These sound so yummy! You can bet I'll be trying these out! Does she serve them with anything to dip in, or just as they are?

She usually just serves as is. When cooked right, the eggplant is almost creamy inside of the crunchy exterior crumb, so it really doesn't need a sauce. They aren't dry (except when things go wrong and the eggplant mysteriously disappears and all you're left with is crumb...I don't understand how that happens.) DS does dip his in ketchup (he has an egg allergy, so when I make the sticks, I substitute a Tbsp vegetable oil for the egg) but he's eight. I wouldn't recommend going with his food preferences. He once opened up his peanut butter and jelly sandwich and spooned half a cup of yogurt into the middle of it and ate it. :eek:

We have embellished the sticks a couple of times. We made eggplant bruschetta a couple times by making the recipe as is, except the eggplant was cut into rounds rather than sticks, and once cooked, the rounds were topped with fresh mozzarella and tomato and run under the broiler for a couple minutes until the cheese melted. That was good. The sticks were also a nice substitute for meat in fajitas. DSis discovered that.
 
My Mom used to make fried eggplant sticks, which as I remember were pretty good, but these sound incredible!:thumbsup2

Sometimes it feels like the rest of the country has forgotten about what happened here, but my DIS buddies are proof that has not happened.:grouphug:

No Sweetie, we have not forgotten. Sometimes it is hard to picture the kind of devastation that you all have suffered, even more so because you very rarely say anything or complain, but we all know. Now we just have to keep hoping and praying that this hurricane season slinks away so that some of the areas that have not recovered do not get hit again.

Kathy- glad to hear that the rain has let up a bit..........please know that it might seem like the GOVT has forgotten about you all, but that your fellow americans and your DIS family will always have you in our thoughts. I am sure that it is a frightening thing when the rain comes down.

Lauren- glad Tom is home and back in america land of the non froo froo foods!!

To all who gave good thoughts and wishes to ds....Thanks!! Bad news is we had another appt at the dr's today, and ds is out of commision for 6 weeks. No gym class for the rest of the year, or recess. He will be out of karate as well, hopefully he will at least be able to sit in starting next thursday. He won't be able to compete again until the tournament June 16th.
He has a grade 2 sprain on the arch of his foot which we found out is kind of rare as only 1 out of 10 foot sprains will be in that area. He is on crutches for 2 weeks.(which is quite a challange as we live in a multi level house, (5) and he is NOT coordinated.....(middle name is not grace for a lot of reasons, lol).
So that is where we are with that. he is in good spirits about it, and it could be much worse.
 

Hi all! We had crawfish pasta tonight. Not the creamy kind but the rotel spicy kind-yummmy and low fat! Oh and EASY!!:stir:

Recipe, please! :)

I don't know where my MIL got it from but here it is and I will name it for her!

Mrs. Bobbie's Crawfish Pasta

1# crawfish tails(pack is fine, fresh is better)
2 cans Rotel w/ chile's(we use mild and it is STILL spicy!)
1 cup chopped celery
1 bunch green onions chopped
3 tbsp olive oil
3 tbsp butter or margarine
box of angel hair pasta

melt butter and oil together in a big pot or pan(I use a wok!)
add crawfish tails and cook until water is cooked out
add green onions and celery-saute
add in the Rotel tomatoes and chiles
serve over pasta(we use about 3/4 of 1 box of angel hair pasta. Half is too little and a whole is too much!)

This is MUCH better the next day!

Sometimes I have it with a veggie and sometimes not-this time I did not.

Going to another crawfish boil tomorrow!!

We are really excited about the trip. We are taking our niece with us. She is 7 and has never been. When I told her we were having breakfast at Chef Mickey's and gave her the list of the characters there, she told me "Aunt Gretchen, I've waited my whole life to meet those guys in person." :goodvibes We can't wait to show her WDW.

when I saw this I was green::yes:: -how'd you get her mom to let her go? My sister will not let me bring her DD4(5 in a few weeks):confused3
She has never been and is at SUCH a great age for it. I totally understand the wanting to see thier faces the first time they go thing, but my sister doesn't know when she'll ever get there with her. I offered to pay her way too! (all she'd have to pay for is herself, then). We are very close to DN4 and she would be with all our family-not just my immediate family(check out below for our type of celebration). I am sad she won't be going since it is such a big topic this year for all of us and it is brought up often(we try not to in front of her but she is a smart cookie!)BUT it is not about me and I know my sister would go if she could(she is a single mom), so we are trying to not make her feel uncomfy,yet, well, I could go on...
Anyway- I am truly happy for you and more for your DN7!!!princess: She is gonna' have a blast!!!
 
Today is lunch and a movie for us. No cooking for me tonight!

Wendie - I am so sorry to hear about your DS - It's great that he's in good spirits about it all. It would be so much harder if we were sad and down. Sounds like a very mature young man, maybe uncoordinated(aren't they all at that age), but a very mature young man!:thumbsup2

DS is on his way to Monroe for the semi-final game, DH is working so I'll be all alone today, yea I'm very upset about that.:rotfl2:

Today I'll be doing some tacos, guacamole & chips and margaritas for when DH gets home!

Happy Cinco de Mayo everyone! I am bringing dinner to Dsis's place tonight and then we are all going to watch Caili's skating show. Since it is cinco e mayo I am bringing stuff for fajitas. OK, it's tex-mex, not mexican, but whatever. I am making the guacamole from Rick Bayless' book. I have chicken that's been marinating overnight in a tequila-lime-orange marinade, and I am making refried beans, sauteed peppers and onions, salsa etc. to fill up the tortillas. I am also bringing stuff to make Liam's favorite burrito: PLAIN rice, PLAIN black beans, and PLAIN corn. The only bad part about tonight's dinner is that I can't make margaritas to go with it! Somehow I don't think margaritas and a skating show mix...:upsidedow

Last night I made DH a rib eye steak with cilantro-chili butter to top it off, plus sides of mac and cheese, sauteed spinach, and spicy summer squash. I made myself a piece of chicken stuffed with pepper jack and topped with the chipotle BBQ sauce.

I saw the muffin discussion earlier. I am a little late to the party, but wanted to share one of my favorite muffin recipes anyway (not that I am eating muffins right now, I've got two weeks until vacation and I have to make sure I can fit into my bathing suit!!).

Fresh Lemon and Ginger Muffins

2 tbsp. peeled ginger root, finely chopped
1-2 lemons, scrubbed
1 stick butter, at room temperature
1 cup sugar
2 large eggs
1 tsp. baking soda
1 cup plain yogurt OR buttermilk
2 cups flour
1/4 cup fresh lemon juice
2 tbs. sugar

Oven 375.

Grease muffin cups or use liners.

Take the lemon(s) and grate the peel until you have 2 tbsp.

In a large bowl, beat butter and the 1 cup sugar until pale and fluffy. Beat in eggs, one at a time. Add ginger and lemon peel.

Stir the baking soda into the yogurt or buttermilk.

Fold flour into the butter mixture a little at a time, alternating with the yogurt. When well blended, scoop into muffn tins. Bake 18-20 minutes, or until lightly browned and springy to the touch.

Mix the lemon juice and 2 tbsp sugar together until sugar dissolves.

When muffins are baked, remove from oven and let cool 5 minutes in the pan. Remove muffins from pan and dip top and bottom in the lemon sugar mixture.

Makes 12 regular or 48 minature muffins.
 
Ds wants chinese for lunch so we will pick that up and supper will be light tonight.
I will prob make turkey burgers (ds loves them cold the next day and the dr wants him to be eating a lot of protein) I will serve it with a salad and of course I will have a margarita or two for cinco de mayo!!!

Jme90- my Mom had a "rotation" and if we asked what was for dinner she just would say"It's Friday." Well my Dad was a chef and he never was home on Saturday, which featured bean. Every week. Without fail. Never changed. "It's Saturday" meant hotdogs and beans, hamburgers and beans, beans and French bread, beans and eggs, beans and something. My Dad would get home and all he wanted was a bean sandwich on toast :thumbsup2.Now I'm hungry for beans and you know......"It's Saturday.;)

Kathy- Have a great day on your own. Got any wine....I'm in a "butt ugly" mood today and am looking forward to a glass or two as soon as it is reasonable. In the meantime Buddy and DS have escaped outdoors to split wood, everyone else ran away for the day, and I am scrubbing. They are afraid if they are anywhere in my path today they will be the object of my wrath and would rather that the floors take the beating. Chickens! :rotfl:

I am not cooking tonight. We are t=going to dinner with our neighbors, and this time they believe we meant it. I cannot believe that no one has ever taken them out for a meal :confused3. They are the best! It really is a good thing I am out of the kitchen today, I do not have a good track record when I am simmering and cooking at the same time :confused3.

Yep, but I'm probably going to whip up a batch of margaritas, that is, when it's a proper time like maybe 5:00. But as the saying goes it's 5:00 somewhere so it could be any time now!:laughing:

I hope your "butt ugly" mood improves before your dinner with the neighbors - I would hit the wine before it becomes a reasonable time, just in case.;)
 
Well, we have a friend visiting from Pa who is a vegeterian...Yesterday I made awesome Veggie lasagna, Bruschetta and salad...Today I am making both fish and carne asada tacos and refried beans..He brought us 3 different types of fruit salsa and we will have that with it along w hm guacamole..
Happy Cinco de mayo..Oh and tomorrow is my Birthday.
 
Well, I am in a very down mood right now so I thought I'd check in with my DIS friends...it always makes me feel better. Ex picked up DS this morning and informed me that he was taking him to the racetrack, just for a few minutes, so he can place bets for people at work for the Kentucky Derby...he said he was elected since he was the shop steward...What an A**! I think I have mentioned that he has a gambling addiction and the final straw in our marriage was when he robbed a bank with Andrew in the car at 6 months old...Yes, shocker right??? I can write a book! Needless to say I was not very happy and we argued a bit. He told me he would not bring A...I didn't want A to go but I did. Now I am a worried mess but feeling better cause Tom is a really good man.

OK, I vented.

Kathy, I am glad that the weather is better...we are here for you girl and never forget the devastation that Katrina left. :hug: I hope you enjoy your day of peace and yes!!! it is 5 somewhere! :)

Tom is glad to be home. I forgot to tell you guys that while all that stuff was happening to him, the ATM decided not to give his card back...with no money given...thank God the bank was open and he got his card back, otherwise he would have no money and miserable in France!

I am working the bad mood off. I did get a chuckle because the only sandwich filling I have on hand already made is a chicken salad with cranberries, pecans and a little honey. I gave it to Buddy yesterday and he hated it. Well today Erica made lunch for the guys and.....you guessed it..........chicken salad for the grouch! Good thing he was outside choking down the "Nanatized" sandwich:lmao:
