Kathy, Praying for all of you down there...glad its looking better. Best of luck to DS in the game as well. Will he be pitching? Or should I say, will Mom be a nervous wreck?

Lindsay, Soory I cannot help with BBQ in the crockpot but I am eager to hear any recipes...

I decided to make a new chicken recipe...it was super easy to put together and bake. If it is good I will post the recipe. Its Italian of sorts so I will serve it with some WW pasta.

Hey guys, we need some prayers down here. It's been raining since very early this morning, the canals are full and we are anticipating another batch of storms moving this way. Ever since Katrina I tend to panic but this is the first time my street has flooded.:sad1:

Kathy- I just stopped by for a recipe and am now sending prayers for all of my NOLA friends. Stay safe!
 

Lauren & Nancy - thanks for the prayers. Our city fared fairly well, the meteorologists scared the **** out of me earlier. There is a lot of street flooding, but hopefully we won't get any more rain. Katrina surely changed my life in every way.:sad2:

You won't be disappointed!!! My family is requesting another batch of them this weekend. I've got the pie filling, so I might as well see if I can find some decent fresh blueberries. I've used the frozen, and that is good too!
 
Well, I think I have finally figured the eggplant sticks out. One key is to make sure you use plenty of water with the egg...two cups or so...and another is to not salt the sticks until after they are finished baking. Also, you want to get a long, thin eggplant, not the big, fat ones. Apparently, the long ones are male eggplants and the rounder ones are female. The male ones make better sticks. I know there's a joke in there somewhere, but I am going to leave well enough alone.



I admit, I haven't been posting very often lately. I got out of the habit because we moved, then DH was home from Iraq, then I was painting the house...lots going on. Anyway, I've been lurking for a while, so I'll try to be better about posting.

Tonight, I am probably not cooking. DD has her annual ice skating show tomorrow, and tonight is dress rehearsal. It is conveniently scheduled during dinner time.

Here's the recipe:

Mom's Famous Eggplant Sticks

One long eggplant, peeled and cut into sticks about 1/2 inch thick, 3-4 inches long.
1 egg
2 cups water
flour, about two cups
breadcrumbs, about two cups (Mom uses Progresso Italian flavored)
Vegetable oil, for baking sheet

Preheat oven to 400.

Lightly oil a baking sheet, set aside.

Whisk the egg together with the water in a medium bowl. Put flour in a bowl or large plastic bag. Put the breadcrumbs in a separate bowl or plastic bag.

Dip the eggplant first in the egg mix, then in flour (shake any excess off), then back in egg, then in crumbs. Put on baking sheet. Do this in small batches until all the eggplant is crumbed. Add additional flour and breadcrumbs to your bowl as needed.

Put baking sheet in on the lower oven rack (put the rack in the lowest position) and bake 45 minutes. Turn once about halfway through. Salt when the sticks are done.

Mom also tries to make sure she doesn't have anything else in the oven when making these. She says they come out better.

Oh, I think I just drooled a little bit! These sound so yummy! You can bet I'll be trying these out! Does she serve them with anything to dip in, or just as they are?

I'm not sure what will be for dinner tonight. DH and DS are leaving for a camping trip, so it will be me and my 3 girls. I'm thinking of picking up some Chinese and a fun movie. We'll see how tired I am when it's time to make a decision.
 
KAthy- I'm glad everyone fared well with the storm, I have a tiny understanding because I get nervous in the winter time when we have some storms, nothing like what you and the NOLA's must feel every time the storms come.

Lauren- I am still chuckling at your Sweetie's expense. I know he will be glad to get home to you and your DS.

Glynis- You think the frozen berries will work well? BBerries are pretty high here right now.

Lindsay- Sorry, I can't help with the BBQ either. I am not a very good crock pot cook.

Wendi- Hope your DS is healing. It is hard to miss the end of the year activities.

Tonight dinner is simple. Roasted chicken, yellow rice with garlic and olive oil, corn, green beans and for dessert I have my version of an orange creamsicle cake in the oven. I'll post it if it comes out good.

Hi everyone. It took me an hour to catch up on everything that has happened since I left.

I had nothing at all in the fridge, so I just got back from the store. I'm planning on steaks on the grill with baked potatoes and salad.

Hope everything's okay, TigerKat. I have a student in my room that moved here after Katrina. I always keep y'all in my thoughts and prayers, but especially when bad weather hits. The little girl really hates storms now. I always feel so badly for her. Hang in there and stay safe.

Thanks. It's good to be back. I thought about all of you while I was gone and was wondering how everyone was doing.

I'll get my food details together and post them for you. I'm not planning a real food review - DH is wayyyyy too shy for me to take pictures of our meals. I'll try to post all the details this weekend. Right now I need to get off the computer and deal with the laundry and get dinner ready.

We are having DS favorite dinner cheese stuffed hotdogs with curly fries. Yes I know not diet food ;) There is always tomorrow.

Nancy - The last 2 batches I did were with frozen blueberries, and they were wonderful! Give it a try!
 
Glynis, lucas, ugadog, Nancy, Lauren & HERSEY - thanks for thinking about us down here, all is well. The saddest thing was on the news tonight they showed parts of N.O. that were flooded and they were the hardest hit from Katrina, where people haven't even returned to.:sad1:

Sometimes it feels like the rest of the country has forgotten about what happened here, but my DIS buddies are proof that has not happened.:grouphug:
 
Welcome back Gretchen! I, too, am eager to hear about dining...:)

Well, tonight's chicken dish was a HUGE hit. Tom said it was the best chicken dish I make...even better than his favorites: parmesan and francese! :) The sauce came out so good - I served it with pasta. It was soooo easy...

Here is the recipe:

Tom's Home Chicken! (it didn't have a name when I received the recipe but it should have a formal name like Balsamic Chicken)

Boneless Chicken Breast (5 - 6)
1 can of Italian Diced Tomatoes
1/4 cup Balsamic Vinegar
1/4 cup Olive Oil
3 Cloves Garlic, sliced thin
Italian Seasoning and Salt and Pepper to taste
Shredded Mozzarella (about 1 - 2 cups)

Place chicken in a baking dish. Mix all other ingredients, except mozzarella. Pour over chicken. Cover with foil and bake at 350 for 45 minutes. Uncover and sprinkle with cheese and put back in the oven for 5 - 10 minutes or until cheese is melted.
 
Lauren - that chicken dish sounds awesome and "Easy", right up my alley!! I'm definitely going to try it soon.
