No cooking for me tonight. I'm a bit down, I'm sure it's due to the approaching string of holidays(Easter, Mothers day & Fathers day). Even though Mom had not been with me mentally for a while, she was still there. Now they're both gone and I'm alone. Oh my, no need to be so depressing, sorry guys!:sad2:
 
Velvet Shrimp here tonight. I'm home today and I think I will make some homemade rolls too.

:grouphug: to you! This can be a terribly hard time. Don't ever apologize for expressing how you feel. I wouldn't enjoy this group half so much if I didn't feel like everyone was close enough to let us all sympathize and celebrate.

Do something special in honor of your mom for Mother's Day. You could "adopt" an elderly lady in your neighborhood and take her to brunch or lunch. Spend some quiet time just jotting down your memories of your Mom, compile a scrapbook of pictures of your mom from her childhood on up. Just do something small to remember her!
 
Dinner tonight is Pepper Jack Chicken Pasta. I'm craving southwest flavors, and I can make it healthier by using whole wheat pasta. I'm going to steam some broccoli and we'll have sugar cookies for dessert.

I just finished reading "Chocolate Chip Cookie Murder" by Joanne Fluke, and she includes cookie recipes. I tried the sugar cookie recipe yesterday, and it was so easy, and very yummy! My kids loved them too, so we'll finish them up today.
 

Thanks for the pot roast recipe Glynis! I did it and it was fabulous! Even better was the "seasoned" meat leftovers that got shredded into tortillas with sour cream and Sheryl's tomatilla salsa! Nothing like crocking it once and eating all week!

Tonight is taco salad with leftover salsa and tostitos. And chocolate Zingers (cause I'm trying to convince myself to work out:headache: - makes no sense I know:lmao: ) If I pre-reward myself I know I'll feel guilty later for not exercising- I'm beginning to think my Grandmother was Pavlov when I was growing up- because I'm well trained!:rotfl2:

Hey Gals!

Sorry I couldn't check in yesterday. DH worked from home cus we had 2 contractors coming out. He hogged the computer all day!:scared: It made me jittery! More drama on the contractors, I'll tell y'all more later.

I had to read 5 pages just to catch up one day.

Nancy, So glad to hear things went well with Kady! I hope it all works out!

Lindsay, How's your car coming? Any problems getting it fixed? Is it a manual/mechanical type hand control? What was the problem, did the cable come off the accelerator? Hope you get the car back today!

We went to my DD for boiled crawfish last night! My first of the season. So good! I was so proud of my SIL, he used my Dad's old boiling recipe that my Brother had given him & they were almost as good as I remember my Daddy's! My Dad was the Seafood Boil King & neither of my 2 brothers has gotten it quite right.

Lori, Which salsa did you fix? That sure sounded like some great leftovers!

I don't have a clue as to WFD tonight!

Lauren, congrats on the lost pounds. But....I hate to say, I think I found them. They are now on my hips along with the other "found" pounds of the past couple of years. If I could find my willpower, I'd join you on a diet. But with vacation coming up, I don't think it's happening.

Kathy, I know the holidays are tough, especially the first ones without your parents, but please don't apologize for venting to us. I'm with Glynis, that's one of the things that is so nice about this thread. Prayers and hugs for you. If all else fails, don't forget the wine and chocolate.

The first one with the tomato and tomatillas. Wonderful in the warm weather....now that it's cold again:confused3 We'll find out tonight!

And there's Rosa Regale in my fridge for DH getting home from Detroit tomorrow!:rolleyes1
 
Today is my youngest sons 12th birthday. Where did the time go. Last year on this day we were at WDW and had his birthday cruise from the Grand Floridian.
We will have cake and ice cream after school and tonight I will make chicken Fajitas with fresh pico de gallo and guacamole.
 
Camrees Mom- A new baby!!!!!!!!!!!!!!! What a wonderful Christmas gift! Thanks for sharing teh good news, I love this.

Gretchen- I don't know about you, but I have some found pounds on me as well. I was supposed to quit the gym that I never go to, but I decided that I am going to force myself ;)

Lauren- You have got to be so thrilled right now! Wedding plans and lost pounds...how good does it get?

Lindsay- Hoping that you are back in your car again. It is the worst to feel stranded when you want to get to the store.

And now Kathy- Glynis is right, this is a wonderful group to talk to. I hope that you don't try to keep it all to yourself, it is way to hard. I am actually appreciating that you did say something because I have not been able to pinpoint why I am so discombobulated this week, but now I know, and I feel better. This is a tough season, I think.

As to dinner.....I just don't know. DD told me she checked the thread to see what was for dinner :rotfl2:. Guess she is worried that she is going to need to cook tonight :rotfl::rotfl::rotfl:
 
I am freaking out...there was just a robbery and a shooting several miles from my house and an FBI agent was killed...

There is a suspect on the loose...you should see all the police. Unbelievable. Please pray that all involved are safe and pray for the agent's family.

Hey Kathy, don't even think about being sorry.....I'm fortunate enough to have both my mom and my dad still around but DH's parents have both passed away and I know he still has bad days. His father has been gone for 13 years now and I still have to remind myself to give him extra hugs on the day he passed. So many hugs to you with all of the holidays coming up!

Jenny - Happy Birthday to your son!!! I LOVE fresh pico de gallo but they eat it as fast as I can make it over here!

Lauren - I think I've found some of your pounds too! Because of that, we will be having salad for dinner tonight. I will add some chicken, avocados and boiled eggs to it so I don't how diet that is though. :confused3

Jenny- Yesterday I started going through this thread to finally put the recipes collected here into an order for myself and as I was going through your posts about your trip were here. It was fun to go through them. Happy Birthday to your son!
 
Last night we had egg salad sandwiches and chips for dinner - thanks to another thread on the CB, I was craving egg salad. I know, another weird dinner at lucas' house. :crazy: Thank goodness dh is easy to please. Does Buddy like egg salad or is he strictly a tuna salad sandwich kinda guy?

Tonight I am making veggie lasagne. I am looking forward to that.

TigerKat, hang in there. I can't imagine how hard it is for you.
 
Lucas- Buddy likes egg salad if he can't have tuna ;).

I told him the other night that I have been talking a "little" about him and his "food issues" and now he is wondering what i said ....after he explained to our friends how I insist on "messing with his food" They know him so they just :rolleyes:.

I decided to have baked spaghetti tonight. Quick and easy because i have to get to a meeting before 7 PM.
 
Well, I don't need to worry about making that gravy for Easter dinner... DH's family is being difficult (nothing new there) and has decided to have dinner at the same time my DB and SIL are having their's. :mad: DS11 and I were really hoping to spend time with both families, but now they've gone and ruined that. We have to go to DH's parents' house because this is the first holiday in years they've been in FL. The thing is, ever since I've known them, they've had holiday dinners in the early afternoon, so I think they're doing this on purpose because they know it will upset me.

OK, vent over.



We're having Breakfast Pizza for dinner.

16 oz. roll Jimmy Dean sausage
1/2 cup onion, chopped
1/4 cup green pepper, chopped
1 regular size can Pillsbury crescent rolls
1 cup frozen shredded hash browns, thawed
1 cup cheddar cheese, shredded
small can mushrooms, drained
5 eggs
1/4 cup milk
1/2 tsp. salt
1/8 tsp. pepper

Preheat oven to 375°. In a large skillet, break up and cook sausage, onion and green pepper until sausage is no longer pink, drain. Place crescent rolls in a greased 9x13 pan, push dough up the sides about 1 inch. Make sure any holes in the dough are sealed. Layer the sausage, hash browns, mushrooms, and cheese on the crescent dough. In a bowl beat eggs, milk, salt and pepper together, then pour evenly over the "pizza". Bake for 25 minutes or until egg is set. Remove from oven and let rest for 10 minutes before serving.

Tonight I'm going to try Emeril's Grillades & Cheese Grits from food network recipes. I'll let y'all know how it turns out & if I changed anything. (I have problems following recipes exactly, that's why I don't bake much.)
