Tonight I am making the egg dish recipe I posted earlier, roasted asparagus, a mache salad, and potato fritters. Though I might skip the fritters if the bakery still has baguettes by the time I am able to get over there.
 
It's still a mess here in Jersey...DF cannot get home...he is going through his 2nd check point right now...they are carrying machine guns...helis are hovering...I am very sad...

Jenny, Happy Birthday to your son. What a wonderful present having your husband home.

Sandy, I know how frustrating that can be. DH's parents are divorced and his father just moved to our town after living all of DH's life in another state. My family lives here too, so we have to try and fit in three separate families in at the holidays now instead of just two. I feel like I am orchestrating a troop movement.

ETA: My car is fixed! And thankfully it only cost $67. I couldn't believe it. What happened was a cable split that was attaching the "hardware" of the controls to the accelerator pedal. The guy asked if I had been noticing it becoming difficult to throttle. I hadn't really. But it's all fixed ! WOO HOO!!

Tonight is Chinese take out . I have to get fun fair tickets orders out next week.

One day this weekend I have to take out my son to celebrate an almost straight A report card.:woohoo:

Good morning all! Well tonight will be dinner at our church small group. And then tomorrow morning EARLY (our flight leaves at 6:15) we head down to Florida. Have a great two weeks all! I'm hoping to check in sometime on our trip--DH is bringing the laptop along. Happy Easter everyone!

Lauren--Glad that everyone is safe! You must live close to another Dis friend of mine--I guess her babysitter lives about 2 blocks away from the bank. Good thing they were all on vacation! How scary for everyone!
 
Today is the sit around and wait day.
The lab is coming between 8 and 2 to check Ed's coumadin levels
peapod(groceries) is coming between 10 and 12... They have chocolate so I will be looking forward to them coming
A physical Therapist is coming between 12 and 2.30 to evaluate ED
Today we will eat birthday cake from yesterday, Cadbury chocolate and then for dinner homemade pizzas.
 
Good morning everyone!

Thanks to all of you for the kind words. You are all awesome friends. I guess I just have to have a good cry every now and then, especially holiday times. I'm feeling a bit better today.

No cooking for me until Sunday. Tonight we'll be getting my new favorite take-out food - the fried green tomatoes topped with shrimp remoulade - YUMMY!! Tomorrow we're getting some boiled crawfish after DS baseball game. Then it's Easter Sunday dinner for four.

Steph - I hope you and your family have a wonderful vacation!!!!!
 
TigerKat your dinner sounds amazing. I am jealous. Nothing like that available around here!

Tonight we are going to the fish market after work to see what they have. The market usually brings in all kinds of interesting and different fish on Good Friday, so I am just going to choose whatever looks the best/freshest. I was able to get a baguette last night, so I will be making the potato fritters tonight to go with the fish, and I have some sugar snap peas and baby carrots in the fridge for veggies.

Tonight's dinner is going to be really simple. I picked up some shrimp and we are having shrimp salad. No time to cook much because we are getting ready for the weekend.

Well, this was last night's dinner but it was so easy and my DH LOVED it as did my 4 year old and both requested it again....and I threw it together!

So we'll call it:

Shrimp Pasta a la "V"
1 pound shrimp (peeled)
1 bag of stir fry veggies (mine was broccoli, snow peas, etc)
1/2 pound aspargus tips
2 tps minced garlic
1 stick butter
1 cup white wine
drizzles of olive oil
1 box of bowties (or pasta of your fancy)

First I boiled the tips in water and put them aside. Then I drizzled a fry pan with olive oil and added the garlic to cook. Next put in the veggies until tender adding the stick of butter and wine.

While these were cooking I boiled the water and cooked the pasta. Added the shrimp to the veggie mix and lastly the cooked asparagus tips until shrimp were pink (maybe 5 minutes). Tossed all this with the bow ties and it was awesome!!
 
Tonite we are having pizza....I had planned on salmon but I just found out that my DS and DDIL are as far as NJ and will be here for a late dinner :cheer2:. They don't like fish and I just want to visit with them.
 
Tonight's dinner will be Enchilada casserole. Quick and easy! I have a practice at the Church for Easter Sunday, so I need something that will be fast and hassle free!

Tomorrow we are having a barbecue lunch and egg hunt! I'm marinating some chicken thighs, and making Ranch Potato Salad. I'm also making a treat called "Nesting Chicks". Basically, it's rice krispies (only made with Corn Pops), formed into nests in muffin tins, topped with green coconut, jelly beans and a Peep. I hope they turn out cute!

So, my whacko SIL called today to see how I would feel about making tomorrow's egg hunt "sugar free." She doesn't want her kids to eat refined sugar. I told her that she could do whatever she wanted with her kids, but my kids were getting Easter candy! I won't allow them to eat it all within 5 minutes, but they will be eating sugar!!! I couldn't believe that she would even suggest such a thing! Easter and Christmas are 2 holidays you just don't make sugar free!
 
We are not religious so we are eating meat!!

We are having Steak Tips marinated in garlic and herb marinade, twice baked potatoes and green beans. Maybe a salad if I can wipe that up!! :)

Tonight it is shrimp salad. Hmmmm....:scratchin do I see a pattern here?

I made chocolate pudding for dessert, though - and that is the important part! :banana:
