lucas - I thought you'd appreciate this knowing our food here. DH & I have been getting fried green tomatoes topped with shrimp remoulade for the past few weeks from Ye Olde College Inn. He just called to tell me their special tonight is a sauteed softshell crab topped with lump crab and a bernaise sauce. Now how do I decide between those two? Well one is an appetizer and one is an entree, so we're getting two of each!!!!:yay: :yay:

liamsaunt - I read where you thought the fried green tomatoes sounded great, they are incredible, but now the softshell crab too, I'm really excited!! You need to fly down and enjoy with us tonight!;)

Hi! DF was home so we ran alot of errands and went out for breakfast and dinner...I was bad today and had a steak...I'll pray extra hard on Sun...:) I had steak topped with blue cheese, portobello mushrooms and red peppers...it was really yummy! I also had a beer which is not on my diet but I will be extra good tomorrow! :)

Glynis, a SF holiday??? Why bother right? We do not have many little ones in my family, most of my neices and nephews are older now, but we are having a egg hunt for the youngsters on sunday...my baby is in Arizona though...:sad1: :sad1: :sad1:

No kidding, why bother. My other SIL called me to fume about the SF suggestion. Her solution: she went to Costco and bought multiple packages of gigantic Pixie Stix. I suggest we simply freebase the stuff when that SIL comes in.

Good luck with the carrot cake! I love to bake, and really, it's not that difficult. Just remember to follow the directions and you'll be fine!

I can't wait to see the invites! I'm living vicariously through you! I had a double wedding with my sister, and she picked everything out! The only thing I got was the invite that I wanted. Everything else, she picked out!

He just called me crying...he is homesick and misses me...now I am upset...my poor little buddy...he was fine when we hung up...hopefully he is just tired and will be better tomorrow.

Well, whacko SIL has decided not to have her kids come to the egg hunt, but to come to the barbecue afterwards. Now, how do you think her kids are going to feel when they see all their cousins with their baskets full of candy? I feel so badly for them!!! I'm trying to figure out a way to get some sugar into the potato salad!!!

The double wedding was definitely an experience! It would be a lot better if my sister hadn't divorced her hubby #1 18 months later. (He was an abuser, and she got pregnant, and didn't want baby abused) Anyway, all my wedding pictures have my ex BIL in them. Could be worse, though, she could still be married to the jerk!!!

I told DH that for our 25th anniversary, he owes me the reception that I wanted, but didn't get! Only 8 more years to go!

I think my Sis has some pics with my Ex whited out...he is a jerk. Sometimes having a child helps women get out of bad relationships. I call my son my angel because his being born helped me realize his father was not the best to be around. He had a huge gambling problem which caused lying, stealing, etc...I couldn't have my son around that...it was bad. I could probably write a book and have it be a best seller. People don't believe half the stuff I went through.

Maybe in 8 years you can have a Disney Vow Renewal!!!
 
Tonight we are going to my mom's house for Easter dinner. We are having a huge spread. I am taking a lemonade cake (cool and not rich) and a *ready for this* Chocolate Peanut Butter Gooey Butter Cake (rich and heavy!).

We are having a nice quiet day today*knock on wood*. No one is due to come today. I'm going to try Glynis pot roast...I believe I made this recipe once years ago,or at least something similar

The only thing I'm cooking today will be our Easter dessert. What else would the "Queen of Easy" make but "Moist & Easy Coconut Cake"!!:laughing:
 
We are just having a variety of leftovers tonight.

I am making a lite version of New York cheesecake with fresh fruit on top. Yes sugarfree. My family has now gotten so small we can fit around the dining room table. Pretty sad I remember when we couldn't fit in the same room. :sad2: First year without my step mom too many without my dad.

I'm love hearing all your stories about big family problems. And pixy stixx :laughing: You could arrange them in a small vase with some jelly beans to be the water for decorations. Or have a pixy chugging contest ;)

No, I haven't heard from him. He is probably sleeping...they woke up at 4:15 am for their flight and with the time change, it was 9:30pm when I talked to him and 6:30 there. I am praying today will be a better day...Do you believe they didn't even sit together on the plane???? What a crappy thing to do to a 9 year old...thank God Andrew is very adaptive and probably played Gameboy the whole flight! :) Please share your recipe.

Hersey, can you share your recipe for the cheesecake? I love your idea about the pixie sticks!!!
 
Here is the recipe I'm using

New york style cheesecake

1/2cup ground almonds
2 8oz nofat chream cheese
3 8 oz neufchatel (lower fat) cream cheese
1/2 sugar
1/4 cup splenda
1 tblsp vanilla
1 cup sour cream
4 eggs

preheat oven 325f if using a silver 9 inch spring form pan 300f if dark non stick 9inch. Spray bottom of pan with cooking spray sprinkle evenly with almonds.

Beat cream cheeses, sugar, splenda and vanilla in large bowl with mixer at med speed until well blended. Add sour cream mix well. Add eggs 1 at a time mixing on low speed until blended. Pour into springform pan.

Bake 50 to 55 minutes or until center is almost set. run knife around rim of pan to loosen cake, cool before removing rim. Refrig 4 hours or overnight. Top with fresh berries makes 16 servings


I'm making this with all splenda and egg beaters and lite sour cream. Some of my family has cholestrol problems and 1 is diabetic, so I sacriifice. I will have to experient a little to find the perfect amount or splenda since it's much sweeter than sugar. I think I'm using Blackberries and maybe raspberries if I can find them.

Here ya go:

Moist & Easy Coconut Cake

1 box yellow cake mix
1 1/2 c. milk
1/2 c. sugar
2 c. coconut
8 oz. cool whip, thawed

Prepare cake mix as directed in a 13 x 9 inch pan. Cool 15 minutes. Poke holes in cake with the end of a wooden spoon. Meanwhile, combine milk, sugar and 1/2 c. coconut in a saucepan. Bring to a boil, reduce heat and simmer 1 minute. Spoon evenly over warm cake. Cool completely. Fold 1/2 c. coconut into cool whip and spread over cake. Sprinkle remaining coconut on top. Chill overnight.
 
Lauren - I remember when my boys were young and they would go to their dad's for the holidays.........the house felt so empty and of course, I worried all the time and they were right here in town. I can't imagine them flying halfway across the country! And the airplane seating, surely someone would have traded places with a 9 year old little boy. I'm sure he is fine and was just tired. I think it's harder on us mothers than it is for them (to hear them upset). I still have meltdowns when I'm tired and need my mama and I'm 41!

Not cooking dinner here tonight. I'll make up for it tomorrow but this afternoon I'm having 30+ women over for a cruise get-together. This is the second year I've done this and we already have next year's planned. Last year it was only 17 ladies so each year it is getting bigger! Anyway, a bunch of us girls get together and go on a four day cruise and today is the day I hand out everyone's tickets, t-shirts, koozies, and other various goodies! It's a lot of work but we have fun. We just moved to this neighborhood last summer though so I'm not sure how the neighbors are going to react to the crowd at the house. Guess we'll find out around 3 today!!! :rolleyes1

So I'm not making dinner, just a bunch of appetizers/finger foods for the ladies and a LOT of MARGARITAS!!!!!!!

Hi everyone!:) I haven't posted lately because I hurt my back and haven't been cooking. I started to feel a lot better yesterday and made the dinner that I had planned a while ago. (parmesan chicken, macaroni and cheese, etc.) The macaroni and cheese was really yummy.

Tonight for dinner I'm having leftover macaroni and cheese, string beans with shallots and roasted carrots.
Then today I'm thinking about making blueberry coffee cake muffins or maybe coconut cake cupcakes or chocolate cupcakes with peanut butter frosting. I can't decide! :rotfl:

Zilla- :grouphug:. It was breaking my heart when my son and his wife were not home on a Holiday, I can't imagine how it is for you, especialy when your DS was crying :sad1:.

Glynis- I vote "Pixie Stix" too! Those poor kids, not only missing the egg hunt, but they have to come late and have the prizes they missed out of drilled home! Shame on your SIL! If you ask me, I think she needs a cookie because there is obviously something missing and cookies might sweeten her up :rolleyes1

I am cooking for tomorrow, but my heart really is not in it. So far I made a jello salad, a chocolate cherry cake for my son, an "almost apple pie" that I'm sure I managed to ruin because I can't seem to learn to measure :confused3, and sausage stuffing to g o with the roast pork.

Marisa is going to pick up grinders for dinner tonight.
 
Today I am making seared salmon with a fresh tomato vinagrette on a bed of greens, served with a crusty baguette. We are eating kind of early, so if it comes out nice I will come back and post a picture. I have been working on my photography skills in advance of my upcoming vacation. Unfortunately, they are pretty poor. Food is especially hard to make look nice, for some reason.
