Not sure yet--We leave for vacation in 1 week, and it's tradition before our Florida trip to have a pre-Florida party the week before. So, we're supposed to be having our party tonight--but I totally forgot to buy partyfood at the store yesterday. I suppose as long as I make a fruity frozen drink and have some Key Lime pie I'll be set!
 
Does anyone have a dessert idea that is low cal but still tastes good. I need to bring something low cal for Easter dinner. I don't have any good light recipes that don't taste like diet food.

Have you ever tried the angel food/crushed pineapple cake? Let me know if you need the recipe. This cake is so popular in our office and super easy. It's only 1 or 2 WW points also.

We had the velvet shrimp last night. That sauce is sooooo yummy and I don't like cheese. I told DH that I'll have to double the recipe next time and he said, "AT LEAST!" Even my picky sons liked it!

No idea what tonight's dinner is going to be. We have a piano recital and a track meet today so it may be sandwiches!

Tonight we are having rack of lamb with Outback's cabernet sauce, roasted potatoes and lucas' succotash salad. Can't wait!!

Hershey- The pineapple angel food recipe is really good and so easy. You can also make a cherry pie filling combo with lite cherry pie filling.

Lindsay- I'm glad that your chair is back in business! Temporary wheel or not, you have got to be breathing easier today :thumbsup2.

I am feeling so not up to cooking today after seeing some of your menus. I think I may need to find my way to your houses!
I really don't know what to cook today, Buddy can't tell me all of his day, DD and SIL are at a family fun fair with Kady, and I am at my Aunts for the afternoon. You know that they are not going to want dinner and dishes!
 
Today is a quiet day,hich is very nice after 9 weeks of non-stop stress and business..I'm making Mongolian BBQ like youget at Great Kahn's type places...I think mine tastes pretty close to the original.
I have to mke it less spicy than usual..Ed is a spicy food lover but after 9 weeks of barely eating his palate has gone soft..I have to get him back into the swing of spicy foods slowly

Well It's not an official recipe but this is what you need.....Shredded beef...I buy roast beef or shaved steak from the meat dept.. You can also use slivers of other meats.
For the vegies ad combo of
cabbage
cilantro
baby corn
mushrooms
carrots
peppers
broccoli
onion

for the sauce
water
garlic
soy sauce
the most imortant ingrediant San-J sechuan sauce found in the asian aisle or here at Amazon.com http://www.san-j.com/product_info.asp?id=7

In a large pan add some water(small amount) and garlic..I also add crushed red pepper, soy and san-j sauce.. You just have to do this to taste..The San-J is the hotter sauce, but it's also the sauce that gives this it's uniquie flavor. Cook veggies until almost tender .. Add the meat and stir fry for another minute or two,until it all cooks..
I serve this over asian spaghetti type noodles..If your store doesn't have them regular spaghetti works.. I like to top with sesame seeds.
It's really a very simple healthy meal...If your feeling lazy just get a bag of stir fry veggies.. I would still add the cilantro and baby corn too as it really ads to the flavor

Oh my goodness, the pancakes were AMAZING!!! :cool1: Actually amazing doesn't even begin to describe the pancakes. I have never tasten anything like them before, they were so delicious. I was in heaven. :cloud9:
I could taste the vanilla, the lemon zest, and the small bites of banana just melted into the pancake.

If you make the pancakes be sure to use good pure vanilla extract. It really makes a difference. I use Nielsen-Massey Vanilla (Madagascar)
And be sure not to overbeat the batter. Just mix enough so that all the ingredients are wet.


Tonight I'm making maple glazed salmon (that's for my dad), herb basmati rice, and roasted winter vegetables.
I'll post the recipes later.:)
 
We're having Velvet Shrimp again. YUM! Thanks for posting the recipe Kathy. My sauce got really thick last time (don't know what I did wrong) so I'm going to add more half 'n half and see what happens.
 
Tonight I am making a Mario Batali recipe for grilled tuna served on a salad of arugula, canelini beans, garlic, balsamic, olive oil, etc. topped with a dijon mustard-olive oil-red wine vinegar-cayenne sauce. If it is yummy I will post the recipe. I am also making tomato bruschetta.

I love Mario!!! My BIL was on his show twice and goes to his restaurants all the time (DSis too of course...I've yet to go)...If you ever see an episode of the show with the Port Authority police officers, that's my BIL! :thumbsup2

Jenny the Mongolian dish sounds wonderful! It brings back alot of memories when I worked in NYC....

Hersey, I am not sure if the cupcakes are on the WW webite but all you do is use boxed cake mix and add 1 can of diet soda (I use diet cola with chocolate...just use clear sodas with a white cake) and 3 egg whites and then bake as directed on the box. Really yummy!

OK, enough mindless blabber...we are having hamburgers and hot dogs on the grill, corn on the cob (on the grill too) and I am not sure what else.
 
I have a half a pound of leftover penne pasta, (Barilla PLUS) so I'm making shrimp and asparagus pasta toss with lemon.
 
This afternoon I made a lemon yogurt cake and it smells sooo good.:love: It's still cooling with the lemon-sugar mixture poured on top. After that I have to put the lemon glaze over it. I want to attack the whole cake right now!:lmao:

It's an Ina Garten recipe (of course!)

Here's the recipe:

Lemon Yogurt Cake

1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup plain whole milk yogurt
1 1/3 cups sugar, divided
3 extra large eggs
2 teaspoons grated lemon zest (2 lemons)
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1/3 cup freshly squeezed lemon juice

For the glaze:
1 cup confectioners' sugar
2 tablespoons freshly squeezed lemon juice

Preheat the oven to 350 degrees. Grease an 8 1/4 by 4 1/2 by 2 1/2 inch loaf pan. Line the bottom with parchment paper. Grease and flour the pan.

Sift together the flour, baking powder, and salt into one bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it's all incorportated. Pour the batter into the prepared pan and bake for 50 minutes or until a cake tester placed in the center of the loaf comes out clean.

Meanwhile, cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves the mixture is clear. Set aside.

When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.

For the glaze, combine the confectioners' sguar and lemon juice and pour over the cake.
 
Here are the other recipes I said I would post and a couple of other recipes. :) There are all Ina Garten recipes. Yes I am a huge fan.;)
The zucchini gratin is soooo good.

Zucchini Gratin

6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
1 pound yellow onions, cut in half and sliced (3 large)
2 pounds zucchini, sliced 1/4 inch thick (4 zucchini)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepers
1/4 teapoon ground nutmeg
2 tablespoons all purpose flour
1 cup hot milk
3/4 cup fresh bread crumbs
3/4 cup grated Gruyere cheese

Preheat the oven to 400 degrees.

Melt the butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes or until tender. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce.
Pour the mixture into a 8 by 10 inch baking dish.

Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.



Green Herb Dip
makes 2 cups

8 ounces cream cheese at room temperature
1/2 cup sour cream at room temperature
1/2 cup good mayonnaise
3/4 cup chopped scallions, white and green parts (3 scallions)
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh dill
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Place the cream cheese, sour cream, mayonnaise, scallions, parsley, dill, salt and pepper in the bowl of food processor fitted with the steel blade. Pulse 10 to 12 times, until just blended, but not pureed. Serve at room temperature.



Maple-roasted Bacon

3/4 pound thick-cut smoked bacon (16 slices)
1 to 2 tablespoons good maple syrup

Preheat the oven to 400 degrees
Place on a baking rack on a sheet pan and arrange the bacon in one layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan from the oven. Brush the bacon slices with maple syrup and bake for another 3-5 minutes, until the bacon is a warm golden brown.
