There are all Ina Garten recipes. Yes I am a huge fan.
The zucchini gratin is soooo good.
Zucchini Gratin
6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
1 pound yellow onions, cut in half and sliced (3 large)
2 pounds zucchini, sliced 1/4 inch thick (4 zucchini)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepers
1/4 teapoon ground nutmeg
2 tablespoons all purpose flour
1 cup hot milk
3/4 cup fresh bread crumbs
3/4 cup grated Gruyere cheese
Preheat the oven to 400 degrees.
Melt the butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes or until tender. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce.
Pour the mixture into a 8 by 10 inch baking dish.
Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.
Green Herb Dip
makes 2 cups
8 ounces cream cheese at room temperature
1/2 cup sour cream at room temperature
1/2 cup good mayonnaise
3/4 cup chopped scallions, white and green parts (3 scallions)
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh dill
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Place the cream cheese, sour cream, mayonnaise, scallions, parsley, dill, salt and pepper in the bowl of food processor fitted with the steel blade. Pulse 10 to 12 times, until just blended, but not pureed. Serve at room temperature.
Maple-roasted Bacon
3/4 pound thick-cut smoked bacon (16 slices)
1 to 2 tablespoons good maple syrup
Preheat the oven to 400 degrees
Place on a baking rack on a sheet pan and arrange the bacon in one layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan from the oven. Brush the bacon slices with maple syrup and bake for another 3-5 minutes, until the bacon is a warm golden brown.
