We're having tacos here. My son is still sick (strep) and they have him on heavy duty antibiotics- tacos was his request but I'm not sure how it will agree with him. If that's what he'll eat though- I'll make it.
 
Friday = Pizza! We always have pizza on Friday and since we're Catholic we don't eat meat on Fridays in lent. Kids have a day off from school today so grilled cheese for lunch and pizza for dinner.
 
Last night's casserole was okay, but nothing really worth posting.

Anyway, you guys will appreciate this story. I agreed weeks ago to make dinner for our church small group tonight. We meet every other Friday night and a couple of the ladies divide up cooking the dinner. So I signed up for the main course and a side. So, I decided that I would make liamsaunt's recipe for the Lemony Balsalmic Roast Chicken. I had done all the prep yesterday afternoon--chicken marinating, everything. And then I have potatoes to make some garlic mashers as a side--Had enough food for the 12 people we had 2 weeks ago. To find out at 8PM that there will be 24 people there tonight! WTH!!! I freaked out--ahd to run to the store, buy more chicken, potatoes, recipe ingredients. Then had to stay up late getting that prep work done. :scared1: So we'll see how the cooking goes later today! Cross your fingers for me!
 

Glynis, please be sure to let us know the results of your daughter's competition. We are all pulling for her.

Stephanie, I would have been freaking out too. Good luck with your now much larger dinner.

Tonight's dinner is the leftovers from last night's casserole. However, dessert is going to be chocolate covered strawberries. My favorite, but our youngest daughter doesn't like chocolate, but loves berries, so I have left some plain for her to have with cool whip.

Mermaid- I hope that your son feels better soon.

I'm not sure about this evening, we don't eat meat on Friday either, and I forgot to take the fish out of the freezer. DH has had about 5 tuna sandwiches for lunch already, so I'm thinking he will be a happy man if he can have that for supper, too!

Yesterday I attempted to bake bread, and it was not pretty! It was a batter bread but really came out looking like two solid funny shaped bricks. Well today I tried oatmeal bread, and it is much better. I've been able to make dinner rolls and Babka, so I did not expect the bread to be different, but I can see that I need a lot of practice. Are there any bread bakers in the house?

Stephanie, I'm thinking of you and wishing you all the best...I give you alot of credit for taking on the task of cooking for 24 people. I tend to freak out when I cook for anyone other than my boys. :scared1: I am already stessing for my son's party next week. Stay calm...:)

Nancy, hubby had 5 sandwiches already???!!! I thought we were big eaters...;) I'll come over for babka anytime...I haven't had that in years.

We try to be meatless here on Fridays too...I say try since DF just ate a piece of leftover pepperoni sausage pizza!!! I am making pasta with marinara, bread and salad...it makes it a little hard that DF doesn't like fish.

Yes, but i am trying to bake by hand. The pie crust thing was not a success so I am hoping that this is better.

He sure can eat! I fixed 4 cans of tuna, I had one sandwich and there is only a little left :confused3.

OT but before we got married, Buddy and I went to my sisters just as they were finishing dinner. It was their leftover night. She asked if he was hungry and of course he was, I was not cooking for him every night. She started cleaning out her fridge, and he ate everything she put in front of him. He finally figured she was having fun with him when she put a dish of olives and a can of cranberry sauce on his plate.

Now I am going to make Babka for Easter, so come on by!
 
I'm making a bunch of caribbean food tonight: spicy cuban black bean cakes, sweet plantains with hot banana ketchup, pineapple-coconut rice, and coconut shrimp with mango chutney. I'm trying to decide on whether to make some kind of foo-foo frozen fruity drink too. I even have the miniature paper umbrellas!

I have a flank steak that I am going to use to make Carne Asada tacos with Pico DeGallo and Guacamle..Dinner is just for me and the youngest son.. DD is sleeping at a friends house and my other DS is going to my mother's house for dinner
 
I am just waiting for my macaroni to be finished cooking but had to share that I think m marinara is the best I ever made...I think its the tomatoes that I am using but had to ask my fellow cooking buddies...do you think food tastes better when you just throw all the ingredients together and not be so precise? It seems to be this way with me...DF thinks so too.
 
Some of my best dishes are when I just wing-it.

Tonight we had Flank steak with Tastefully simple Moroccan spice, rice and salad. Maybe next week I'll be able to grill. It's finally getting warmer.
 
Happy Friday everyone....I don't think I'm cooking dinner tonight but just wanted to say hi. If I do cook, it will be grilled cheese sandwiches since we're also meatless on Fridays during Lent. Reading everyone's recipes/meal plans has made me really hungry for meat though!!!!

Lauren - my boys are at their dad's for Spring Break so it's really quiet in the house. I feel for you, the first birthday without your DS will be the hardest though so just know that it does get easier. Hugs to you :grouphug: .

Glynis - we'll be waiting to hear how your daughter did at the competition!

Stay warm to all those up north in the cold part of the country. It was almost 80 here today. I went to get a pedicure last night so I could start wearing sandals/flip flops again.

In the crock pot I had the roast, 1.5 potatoes, a few baby carrots, one cup water, one cup sweet and sour sauce. It cooked for 8 or 9hrs. Do you think the veggies soaked up the liquid? When I openned the lid when it was done, there seemed to be enuf liquid in there. :confused3

It sure sounds like you had enough liquid. Did the veggies seem TOO done? It might just be that your crock pot cooked the meal in less time than the recipe called for. They also could have soaked up the liquid, but if there was still liquid in the crock that's very confusing. Hmmmmm. If you try the same recipe (or another one), you might want to test for doneness a little earlier.

I only make it in my bread machine, and even then it's hit and miss for me!
 
Welll, I was planning on making calzones for dinner tonight. I spent the day with my niece making journals for my oldest daughter and son, and 3 of my niece's and nephews who are all going with us to Disneyland in June (they turned out so cute!). Then I had to pick up DD and DS from school and run them to my sister's house for violin lessons. When I stopped at the house to pick up the violin and music books, there was a message on the machine. The organizers of the competition had called to let me know that Katie had been chosen to be the representative from the upper grades from our school! You guys sure sent along a ton of pixie dust. I thank you from the very bottom of my heart (and Katie's too!)! Now, she goes on the district wide competition. Then, hopefully, on to the storytelling festival!!!!!

In light of that, I decided to let Katie choose dinner tonight. No surprise, she chose pizza. What she doesn't know is that it will be served to her on our special Blue Plate. We save it for special occasions, get it? The Blue Plate Special. Usually, the kids only get it on their birthdays, but this is too important for Katie to let it pass by!
 
We are going to the movies to see "Breach" today. We will eat out somewhere, haven't decided where yet.
