Morning All!

My son's birthday is on Saturday and he will be with his dad...:sad1: , so we are having a cake for him tonight. He requested pizza (easy for me) and I will make a cake for him. We are having family over on the 17th for him...

I'm especially going to miss my baby this weekend. This is the first bday that I haven't been with him...
 
Lauren, I know you are sad about your son’s birthday. Special days without our kids are always hardest on the moms I think. Keep your chin up and just think how happy he will be to stretch his birthday out over a week and a half (extra stuff maybe).

Kathy, glad you are feeling better, but hate that you had to go back to work. I am longing for the day DH can make enough money so that I can retire. :rotfl: :rotfl: Seriously though, your pork chop recipe looks really good, but I have a question. What kind of chile sauce do you use?

Dinner tonight is by request of DH. It is ground beef and wild rice casserole with an as yet undecided vegetable on the side.

Yesterday I made the microwave carrot caserole (Zandy pg.331), and the crock pot pork roast. The carrot dish turned out really well, but my pot roast was a little dry. Any suggestions would be appreciated!

Do you mind me asking how you cooked your pork roast? Sometimes I find I have to add a little more liquid than a recipe calls for. Also, check your crockpot and see if it's cooking faster than the recipe says. I know that in my case, if a recipe calls for cooking something on low for say 6 hours, that my meal will most likely be ready in 4 and a half hours. Crock pots are tricky that way. I still love mine, and use it often, but it's taken some time to find out all it's little quirks!
 

Dinner tonight will be Maple Baked Chicken. New recipe. I hope it's good. Some kind of vegetable on the side, and a chicken rice dish as well.

Could you all spare some good thoughts for my daughter today? She is participating in a school wide storytelling competition. She's worked really hard, and if she wins she gets to perform her story at the Mount Timpanogos Story Telling Festival this summer. She would be able to work with professional story tellers. She's really nervous, so any pixie dust you could spare would be great!!

Oh, by the way, my dinner last night was a hit! So easy, too!!!

One Pot Saucy Skillet

1 pound hamburger
1 C. salsa
2 C. water
1 pkg. macaroni and cheese dinner
1 C. frozen corn

Brown hamburger in a large skillet. Drain. Add the water, salsa and macaroni. Cook for 10 minutes or until macaroni is tender. Add corn and cheese sauce mix. Cook for 2 minutes or until heated through.

You can top this with more shredded cheese or sour cream. It was yummy, warm, and easy!!!!!
 
I made a big batch of Jewish Penecillian(Matzoh Ball Soup) to take to Ed at the Hospital
 
Morning Y'all,

Well I didn't try the new recipes. I decided to go with my usual because it's lowfat. I had been pretty sick over the past month, but the good thing was I lost 12 lbs! So I'm going to try & keep it off. We'll see, it's going to be tough with all these great ideas! We'll see....;)

So last night we had :
grilled chicken breast marinated with mediterreanean seasoning & curry, olive oil, lemon, minced garlic
grilled portabello mushrooms marinated with balsamic vinegar, worchestshire, garlic & cajun seasoning
tabouli mix (Fantastic brand is good) with parsley, celery, tomatoes
whole wheat pita bread
yogurt sauce

Don't know what's for supper yet! I need to get off of the computer & get to the grocery. Anyone have a "lite" ideas?

Nancy, I don't know about Kathy, but this Red Beans & Rice girl is NOT one to have a schedule! I'm lucky if I remember when it's Monday!!!:rotfl:
 
Lauren - I know how sad you are about not having your baby for his birthday so I'll be thinking of you this weekend. :hug:

OKWMom - I use Heinz chili sauce, you can find it near the ketchup in the grocery store.

Hopefully I haven't already posted this one like I did with my pot roast recipes yesterday! I guess we have it too often.

Tonight we're having sloppy joe "pizza"

2 lbs ground beef
large can of manwich sloppy joe sauce
2 packages crescent rolls
shredded cheddar cheese

Brown ground beef, add sloppy joe sauce and simmer for 10 minutes. Meanwhile unroll crescent rolls but do not separate. Press preforations together to seal (1 crust per can). Bake crescent roll crust for 8-10 minutes. Poor sloppy joe mixture over crust and top with shredded cheese bake an addition 3-5 minutes.

We're also having salad, corn and jello with whipped cream for dessert.

Glynis- :wizard: for your DD. You must be so proud of her.

Kathy- What do you mean you had to go to work.You're supposed to always work in the extra day to fully recover.

Gretchen- I am home and love it, but I can tell you that no one in my home wants my job :confused3. When they have been home and taken over the things I do, they can't wait to escape! :rotfl2:

Glenda- I used to have that problem with pot roast so now I try to use a boneless chuck roast. It is not at all lean so it tends to stay moist. I don't cook them often because of that, but they do taste good. You also do not need to check the cooking time as closely.

Tonite I am planning a maple glazed chicken that I saw in a magazine. I hope that it is good. I'm serving roasted potatoes and onions, I think and a vegetable and salad.
 
Tonight I am making lasagna, an arugula salad, and garlic bread. I'm trying a new recipe for the lasagna with some turkey sausage in it. I usually make my lasagnas vegetarian, so we'll see if I like this one.

Nancy - unfortunately I fell so far behind at work when I was dealing with Mom I felt really guilty about taking off today, but I did think long and hard about it.;)

I just finished making the "hamburger gravy" recipe and towards the end I realized this was something my Mom used to fix when I was a child. I hadn't thought about it in decades! What a great memory!:cloud9: I'm sure we will all love it, but my DS won't be home until 9:00(baseball) and we'll wait for him to have dinner.

THE HAT - thanks so much for this recipe, it brought back some great memories and this is definitely "comfort food"!

My daughter did just fine! We won't know if she won until Monday, so it's going to be a long weekend for us!

My Mom used to make it too, usually on Monday. She had some funky name for it. My Mom was French Canadian and we grew up using some of her slang. My MIL calls it hamburg gravy, but I did not realize it was the same thing until I had dinner at her house.
 
I was relieved, after a Looonnngggg day- doctor appt for DD's , haircuts for DD's and myself, school, PE, then home by 5pm-my DH calls and says he is bringing home crawfish:banana: !!!!!!! yum-my 1st batch this year! DD's had some crawdads and then made mac n cheese(a staple:laughing: )-with corn and potatoes of course. I was NOT looking forward to whipping something up in less than an hour or so. -tomorrow is another day...:rotfl:

I will make something with ribs -had them marinating for today-so they will be cooked with something tomorrow!

In the crock pot I had the roast, 1.5 potatoes, a few baby carrots, one cup water, one cup sweet and sour sauce. It cooked for 8 or 9hrs. Do you think the veggies soaked up the liquid? When I openned the lid when it was done, there seemed to be enuf liquid in there. :confused3
