Tonight is lasagna and breadsticks. I will probably try to make the fudge pie that I saw Paula Deen making this morning for dessert, as I have everything on hand for that except the baking chocolate.

We are having braised pork chops, herb and butter rice (thanks to Lipton) and carrots.

I am trying to cook easy this week since I am getting ready for Andrew's birthday party on Saturday. He requested Sausage Shells and Peas so I will make that for the birthday boy tomorrow. I love it too! :thumbsup2

Tonights supper is haddock chowder and drop biscuits. It is warm out today but cloudy so it will be perfect.
I usually do it on the crock pot to simmer all day, but found a "quick" version that will work well, since I only made up my mind a half hour ago after buying the haddock, lol!

Glynis - this recipe is very old and I haven't made them in a long time. I don't really like how they turned out but the family does. I find the graham cracker taste a bit overpowering:

Frosted Chocolate Coconut Squares

3/4 c. margarine
2 oz. semisweet chocolate
1 3/4 c. graham cracker crumbs
3/4 c. shredded coconut (I would add more)
3/4 c. chopped nuts
2 tsp. vanilla
1 3/4 c. confectioners sugar
2 Tbsp. milk

Melt 1/2 c. of the margarine and 1 oz. of the chocolate. Remove from heat and stir in the graham cracker crumbs, coconut, nuts and 1 tsp. of the vanilla. Press into a 9 inch square baking pan; chill. Meanwhile beat remaining margarine, sugar, milk and 1 tsp vanilla until smooth and creamy. Spread over chilled crumb mixture. Melt remaining chocolate and drizzle over top.Chill until frosting is firm. Cut into squares.

Ohhhh this sounds good to me. I'm gonna have to give it a try! :wizard:

That's what we're having too! I am "eating out of the freezer" this week and found some haddock in there. I don't really care for frozen fish- but I'm determined to stop wasting food! Must be the day for chowder in Maine!
 
It sure sounds like you had enough liquid. Did the veggies seem TOO done? It might just be that your crock pot cooked the meal in less time than the recipe called for. They also could have soaked up the liquid, but if there was still liquid in the crock that's very confusing. Hmmmmm. If you try the same recipe (or another one), you might want to test for doneness a little earlier.

Tonight we are having leftover black bean chili and cornbread. Mmm, it was yummy! :)

Hot turkey sandwiches with stuffing and cranberry sauce. My mother cooked a turkey yesterday and brought most of it over here!

Sorry....I didn't see this until this morning:( Not sure if this will still help you or not but here it is.

Hamburg Gravy

2lbs of lean Hamb.
1 packet of onion soup mix
a few good splashes of worcestershire sauce

Mix all of this together then "scramble" in a pan until done. Drain and then pour in 2 jars of your fav beef gravy. Let simmer for about 15 min. stirring often.
This is super yummy over Mashed Potato's, Rice or Noodles.

After finding the original post of this I saw my chicken parm bite recipe, so I will make that tonight as it is so yummy and easy!

Chicken Parm Bites

1 package of boneless skinless chicken breasts cut up into bite size pieces.
Toss them in a mixture of Italian bread crumbs and parm cheese, salt and pepper.
Cook until done in some Olive Oil, once they are cooked through, pour in your favorite spag. sauce and let simmer.
While it is simmering cook up some Egg noodles and drain.
Toss chicken and sauce with noodles and stir in about 2 cups of Italian cheeses.

We will have this with green beans as I just love spag. sauce on them, mmmm!

Tonight is my son's favorite...as he says it "Shawsage, Schells and Peas"...he has a hard time S's since his palate expander...I have garlic bread for the side.

Yes, Lauren! Our whole family is having a hard time with the time change!!! Give us a week, and we'll be used to it, but this week is going to be hard! I foresee a serious nap in my future today!

Dinner tonight will probably be something quick and easy. I'm thinking spaghetti. Sauce was on sale at 10 jars for 10 dollars. I'll make some quick meatballs, and call it good. We have to have Katie at the school by 6:30 tonight for her storytelling celebration, so we'll eat quickly before that.

The donuts turned out really well! The kids thought it was so cool to watch them cook up! And the best part was that I didn't burn the house down. I'll post the recipe if anyone wants it.

MMM cornbread would go good with Carne Asada and refied beans..I wonder if I have the stuff to make it..I like to add green chilis or jalapenos to my cornbread.
 
Tonight we are having lasagna (leftover from the other night), romaine salad with buttermilk ranch dressing, and roasted garlic breadsticks.

Saturday I made a huge pot of linguini with clam sauce, arugula salad, and crusty bread.

Sunday linner was mostly made by my Mom--a tenderloin of beef roast with gravy, roasted potatoes, carrots pureed with cumin, green beans with almonds, and butternut squash with cinnamon. Since I don't eat red meat I brought over a piece of chicken that I pounded flat and stuffed with broccoli and cheddar cheese, plus a pan of twice baked potatoes. Two kinds of potatoes at one meal...I guess you can tell we have some Irish in us!
 
Hi Y'all,

Didn't cook this weekend. I'm finally feeling better, so we did lot's of running this weekend. Went to a local French festival had a Spinach Rockefeller Soup from Emeril's restaurant!! Sooo good!

Nothing new to report for tonight. It's Monday! So just like Kathy, here in New Orleans, it's red beans tonight!

Nancy, it's just DH & myself in our house now, so I can try just about anything. DH is just so happy when I cook!

Kathy, How did the scallops turn out? The tuna was easy. I marinated it with garlic, soy sauce, a little cajun seasoning. I used wasabi peas (purchased at Whole foods, dried peas with a wasabi coating) that I ground in my coffee grinder. Then coated the tuna with the ground wasabi peas and pan fried it in olive oil to a medium rare.
The jasmine rice is a brand of rice, can be purchased at most stores or at Oriental Markets. (I've bought at that big Market near you on Behrman.) It's just white rice but tastes a little sweeter than regular rice. I like to add a little coconut milk with the water when cooking it.

Hersey, I've wanted to try doing pizza on the grill also. But I chicken out every time! I have a pizza stone so I always end up doing it on that in the oven.
 
Hi everyone, I haven't posted since Friday because I got food poisoning from our breakfast out on Saturday morning. Our youngest got a good interim report so we decided to take the kids out for breakfast Saturday morning. We let DD8 pick the place, so it was, big surprise, McDonalds. I got sick around noon Saturday and spent the entire weekend in the bed. I have just started to feel human again.

Glynis, so glad to hear about Katie. I know she is so excited.

Tonight's dinner is Glynis's pot roast, cooking now in my crock pot with Glynis's warm pudding cake for dessert. Because my husband doesn't really like citrus, he requested strawberry cake with vanilla pudding. I'll let you know how it turns out.
