Chicken Seinfeld

4 boneless chicken breasts
1/2 c. flour
1/4 c. chopped basil
1/2 c. feta cheese
2 Tbsp. butter
1/4 c. white wine
1/8 c. chopped fresh dill
2 Tbsp. olive oil
2 plum tomatoes, sliced
4 cloves garlic, chopped
1/2 c. mozzarella cheese, shredded
1/8 c. lemon juice
salt & pepper

Mix flour with salt & pepper to taste. Dredge chicken in flour mix. Heat olive oil in an oven proof saute pan and saute chicken until just under done. Top breasts with sliced tomato, basil and feta. Cover with mozzarella and place in 350 degree oven until cheese is melted and chicken is done. Melt butter in a saucepan, add garlic and cook until brown but not burned. Add lemon juice, wine and a dash of cream. Simmer until moderately thickened. Add fresh dill to sauce and spoon over chicken. ENJOY !!
 
Last night we had shrimp in garlic butter over angel hair pasta, crab cakes, and peas.

Tonight is broiled teriyaki salmon, ramen noodles, baby carrots, and green beans.

Tomorrow night will be breaded fish sandwiches, corn and maybe a salad.

Can you tell I've been in the mood for seafood? :teeth:
 

Sandy, I'm in the mood for seafood too! We're having crabby patties (crab cakes), coleslaw & fries. For dessert we're having cream puffs.
 
Thanks to the person who posted the Polynesian Pork recipe. I had a pork roast on my menu for the week. I am going to try out that recipe!


You're most welcome! I hope you like it as much as my family did! I served it with sweet potatoes, and brown rice. Very yummy!
 
Our dinner tonight is Chicken with Lime Butter sauce. I haven't tried it before, so it should be interesting. I'm also doing a Cauliflower/Tomato bake and some kind of noodle dish for the kids. They gotta have those carbs!
 
We are having crockpot potato sauerkraut soup. It is very good, easy and low fat.

1 can cream of mushroom (lowfat)
1 can rinsed and drained sauerkraut
1 package (or 1/2 pack) of turkey sausage chopped (can be lowfat)
2 stalks of celery chopped
3 carrots chopped
2 Tbsp apple cider vinegar
1.5 tsp black pepper (looks like a ton of pepper)
1 large potato chopped
1 can of mushrooms
1 large can of chicken broth (sometimes I add more depending on how many servings I want)

Cook on low all day.
 
We're having Cappelini Pomodoro with grilled chicken breasts like at Olive Garden. We went to eat there on Saturday and DH was going to order it but then he said, oh, you can just make that! Anyway, super easy and pretty lowfat. I'm planning on chicken and dumplings tomorrow since it is going to be cold and rainy again. Can you tell chicken was on sale here??? :rotfl2:

However, while I was waiting for DH to finish up his conference call, I got some prep done for tomorrow, when we are having striped bass chowder. I always think seafood chowders taste best if you make them a day in advance to let the flavors meld.

Sure, it was really easy and DH and I loved it. Of course the kids didn't, but I anticipated that!

Chicken in Lime Butter Sauce

6 boneless skinless chicken breast halves (I used chicken tenders)
1/3 C. vegetable oil (I used WAY less than this)
Salt and pepper to taste
1/2 C. butter
Juice of 2 or 3 limes
1/2 tsp. minced dill weed
1/2 tsp. minced chives

Sprinkle both sides of the chicken with salt and pepper. Cook in large skillet with vegetable oil that has been heated to medium. Saute chicken about 4 minutes until lightly browned. Turn chicken. Reduce heat to low and cook 10 minutes more until chicken is tender. Remove from pan and keep warm. Remove oil from pan. Add the juice of 1 lime and 2 tablespoons butter to the skillet. Continue to alternate lime juice and butter until sauce becomes opaque. Stir in minced dill and chives. Pour sauce over chicken.


I figured the kids wouldn't like the sauce, so I gave them their chicken plain. Hey, more sauce for DH and me! We enjoyed this.
 
Tonight I am making kicked up vegetable soup and cornbread.

Last's night recipe was a MAJOR hit. DH said he could "drink the sauce". Super easy too!

Chicken pieces(I used a whole cut up chicken, b/c it's cheap)
1/2 jar Apricot Preserves
1 bottle French dressing
1 envelope Onion Soup mix

Place chicken in pan(I removed the skins to help keep the fat down)
Combine other ingredients and pour over chicken. Bake at 350 for about 1 hour.

My tip of the day, not that any asked. Line your baking pan with parchment, no clean up required! I used to put layers and layers of foil in my pans trying to make it so the grease wouldn't slip under it. I HATE washing the pans I cook my meats in. I finally figured I could use parchment(up to 420) and it fits over all my pans with just one piece! :thumbsup2

I think i"m going to do TigerKat's recipe for Apricot Pork Tenderloin. WE'll see what sides I come up with.

Tonight we are having the striped bass chowder I made last night, plus some crusty rolls and an arugula salad.
 
Spaghetti with homeade meat/sausage sauce and whole wheat noodles. It's a quickie dinner night tonight since it's church night, so I'll probably just open up a bag of lettuce and throw dressing on it. I'll have DH pick up some garlic bread sticks on the way home from work.

I've never made homemade sauce before. I'm going to cook up my meats and put everything in the crock pot.

Last night's dinner was even more of a hit than the Apricot Chicken. I even got my 5 year old to eat all his sweet potatoes, which he HATES. DH said,"Thanks for eating all your sweet potatoes" DS said,"Those were sweet potatoes???" :rotfl:

I made toasted flat bread with olive oil and feta cheese to go with the salad.


Golden Chicken

Chicken breasts, boneless, skinless.
1+ T. olive oil
2 large sweet potatoes, cut into 1/2 cubes
2 cups fresh, or frozen green beans.
1 can chicken stock, or 2 cups homemade
1 large garlic clove, minced
1/2 cup sliced red onions
1/2 t. dried rosemary leaves
1/4 t. dried thyme leaves
salt and pepper

Season chicken with salt and pepper. Brown chicken in oil in 12 in. (or larger if doing more than 4 peices of chicken) skillet. Remove chicken from pan, saute garlic and onions. Add half the chicken stock, rosemary, thyme and veggies. Cover and bring to a boil. Cook on high for 5 minutes. (now at this point my sweet potatoes were done, so I removed them and the green beans and set them aside). Add chicken back to pan, add more stock if needed, cover and simmer chicken for 10 minutes. Towards the end of the 10 minutes(about 4 minutes left) add veggies back to pan. At this point my chicken was cooked, if it's not just keep simmering it for a few more minutes.

It was SO good. The chicken was so flavorful and tender!

I am putting that Chicken in Lime Butter Sauce on my menu for next week! That looks SO good!
 
DF looked at me a little weird when I told him what I took out of the freezer...so I put it all back! :) I guess cause I didn't have a plan or recipe. He said he wanted Chinese, so Chinese it is...we try and do take out once a week so this is it...

I guess its just not my day...my cat jumped on a work table I have in my office and knocked over a whole box of packing peanuts and then I was having coffee and totally missed picking up the cup...spilled all over...Can I go back to bed? :)

Thanks girls for all the chicken recipes...I will be more prepared now on! :)
 
That golden chicken looks outstanding. I'll have to try that. My son won't any veggies EXCEPT sweet potatoes so this is perfect for us.
