Yesterday we went to the South FL Fair and had corndogs, Philly cheese steaks, pizza, bacon cheese fries, and fried dough. My stomach still hurts.

Tonight I think we'll have grilled chicken salads or maybe wraps.
 
I worked all day so DH made spicy chicken sandwiches for dinner.

I just popped a Triple Chocolate Cake into the oven for a late night snack. :cloud9:

The recipe has been around for years but if anyone's interested, here it is:

1 (5.25 oz) box of chocolate pudding ~ not instant
2 1/2 C. milk
1 (18.5 oz) boxed chocolate fudge cake mix
2 C. semi-sweet chocolate chips

Preheat oven to 350. Spray a 9x13 cake pan with cooking spray.
Mix pudding mix and milk in a large saucepan over medium heat until it thickens, stirring frequently. Remove pan from heat and mix in cake mix (batter will be thick).
Pour into cake pan and sprinkle the chocolate chips over the top.
Bake at 350 for 40-45 minutes. Delicious!

I want to thank you all for your prayers and support. My Mom passed away earlier today. She's now with my Dad. I'm kinda numb right now, but just wanted to let you all know how much I appreciate your kindness, thoughts and tolerating me throughout this entire ordeal. I love you all.

I am making black bean soup and corn bread tonight. Simple and comforting (and lasts 2 days!).

Tonight will be chicken parmigana--I think. Last night DH came home from getting his haircut and had bought all the fixings for homemade nachos. So, I once again scrapped my dinner plans, and we had nachos!

We wound up going out last night so I think I will make the hotdogs tonight.
 
Me again--I made the Maple Pecan Sticky Buns from the newest issue of Kraft Food and Family for breakfast. And it was really yummy--one of the only recipes I've made that looks as good as it's pic! If anyone is interested in the recipe I'll be glad to post it!

Thank you all so much for your thoughts and prayers. I'm doing OK but this week will no doubt be a tough one.

liamsaunt - the "brined" roast chicken was so incredibly moist. I'll never do a chicken again without brining first.

Glynis - the black cherry poke cake is very good. The black cherry jello gives it a tart kick and it's fairly healthy as far as desserts go. It's a keeper here!

Good thing I did a lot of cooking yesterday morning as I have dinner for tonight almost ready - cajun chuck steaks in mushroom wine gravy, egg noodles and roasted vegetables.
 
Just dd and I tonight. Hubby took stuff to work for a tuna sandwich and a can of Progresso Clam Chowder....LOL. Usually I cook lunch on weekends since he works evenings, but today dd is having lunch at church so I didn't. He just had a tuna sandwich with chips for lunch. Poor hubby, but I think he will live.

DD and I are splitting a sweet potato, going to broil some tilapia, have a little grouper and a few shrimp left over. All together should be enough to make a meal for us. Easy day again. I am burned out on cooking.
 
Linner tonight was Disney food! We made the salmon with maple glaze and praline pecans from the F+W 2004 booklet (Canada), plus the onion mashed potatoes from the "Mickey cooks with the Disney Chefs" book. The salmon was AMAZING. It was fresh, from Alaska, and just so incredibly moist and yummy.

Sides were roasted broccoli with sesame seeds, seared sugarsnap peas, and the famous, unable to be duplicated, eggplant sticks, contributed by my Mom.

Dinner tonight was Polynesian pork roast (way yummy!), sweet potatoes, and white hominy. For dessert we will have White Chocolate Cinnamon Squares with Vanilla ice cream. We'll eat that while we have our family movie night. I think tonight will be Brother Bear.
 
We had grilled shrimp and scallops with hasbrown potatoes and coleslaw.

Tomorrow it will be orange garlic chicken, the rest of the coleslaw and some kind of rice. I've got the whole week planned but we will see if it sticks the plan. It usually doesnt! :confused3

Think tonight will be Stacy's Chicken Pot Pie tonight--It's cold here, so need some comfort food!
