New recipe.:rolleyes1 So, we'll see if it's a hit. We'll have left over homemade au gratin potatoes, which were amazing, if I do say so. ;) I think we'll have salad with it. We've been on a greek salad kick. I got the recipe from the Food and Wine Festival. Best salad ever!

Tonight we're having Cajun 15 bean soup with ham. It's simmering in the crockpot. Smells great! I love it. It's the first time for the family. I guess I better have the chicken nuggets ready as back up, just in case. LOL.

It's red bean and rice Monday with grilled smoked sausage.

Sure. I got it from a lady at my church. We all loved it!

Polynesian Pork Roast

3-4 pound pork roast
3/4 C. Apricot Pineapple preserves
1/2 C. brown sugar
1 clove garlic, finely minced
1/4 C. apple cider vinegar
1/2 C. soy sauce
1/4 C. molasses
2 C. chicken broth

Place pork roast in a crockpot. Combine all remaining ingredients and mix well. Pour over roast. Cover and cook on low for 8 hours. Can thicken the juice for a nice gravy by adding some cornstarch dissolved in water.

Enjoy!
 
Dinner tonight will be baked pork chops with brown rice. Not sure on the veggie. Gotta see what I have on hand. There's always salad!

Tonight we had sauteed sole with a brown butter-lemon sauce, rice pilaf, and peas. Very simple, and tasty. I am not up for making anything complicated--I am coming down with what looks to be a monster cold, and DH is upstairs sneezing uncontrollably as I type, so it looks like he is in for it too. Grr! I hate colds!!
 
Tonight we are having baked teriyaki chicken, rice, and stir-fry vegetables.

Today I'm going to roast a stuffed chicken (basted with garlic rosemary butter) and I'll pop in some baked potatoes and green beans to go with it. I think I'll do a simple butter cake for dessert later. :)
 
Tonight we're having Golden Chicken breasts, with sweet potatoes and green beans. I might make some cous cous to go with it. Or I'll just throw a salad together and make it a carbless dinner. :thumbsup2

Last's night recipe was a MAJOR hit. DH said he could "drink the sauce". Super easy too!

Chicken pieces(I used a whole cut up chicken, b/c it's cheap)
1/2 jar Apricot Preserves
1 bottle French dressing
1 envelope Onion Soup mix

Place chicken in pan(I removed the skins to help keep the fat down)
Combine other ingredients and pour over chicken. Bake at 350 for about 1 hour.

My tip of the day, not that any asked. Line your baking pan with parchment, no clean up required! I used to put layers and layers of foil in my pans trying to make it so the grease wouldn't slip under it. I HATE washing the pans I cook my meats in. I finally figured I could use parchment(up to 420) and it fits over all my pans with just one piece! :thumbsup2

I make this too! Only I use boneless breasts...my family loves it too! :thumbsup2 Thanks also for the parchment tip...I hate the baked on pan clean up too...I read somewhere to put a dryer sheet in the pan and let it soak for about 10 minutes...the stuff wipes right out.

I am making sausage, shells and peas tonight along with garlic bread...I needed something easy, crazy day here. OT (a vent session) I just had to pick up a loner car too...my 6 month old car was flat bedded out of the driveway yesterday...the engine is going...:( . That's what I get for getting a lemon yellow car...
 
Tonight is DH's favorite "Chicken Seinfeld", yep named after Jerry. I'll post the recipe a little later. Not sure of what sides I'm doing yet.
 
DMIL LOVES the apricot chicken recipe. She makes it frequently.

I was going to have ginger/apple pork chops but seeing how DH doesnt like "out of the ordinary" food I switched to burgers and hashbrowns since we had kind of "fancy" food last night. :lmao:
