Make it for the party! I checked the Food Network site for reviews, and most people loved it. Maybe I'm just a weirdo!! :laughing:

Maybe I should do a trial run to see if DFI and DS like it first...I would be making it for the family at DS's bday party in March...I guess I should make what he likes right??? :) You are not weird...I tend to eat anything!

Tonight we are having chinese take out...we haven't had it in a while.

I spent the night at Mom's last night, she seems to be declining slowly. Not sure what's going to happen today, hospice told me they are only ordering a few more days of meds. They also told me that she may be holding on until next Friday - would be Dad's birthday. I really hope she doesn't linger that long, but if that's what she wants then I hope that's what happens.:sad1:

I'm going to brine a chicken to roast for tomorrow or Sunday. I know you use salt only, correct? Do you wrap the chicken in anything?
 
I think we're going to do bourbon chicken. DH didn't think it was spicy enough last time (I omitted the red pepper flakes so this time I'm going to put them in).

Hi Kathy, you and you Mom are in my thoughts.

For the chicken, yes, salt only. Wash the chicken well and get the skin really dry, the use about 3 tablespoons of kosher salt, sprinkle it all over all parts of the chicken and a little bit in the cavity. You can tuck some herbs under the skin also, but you don't have to. Wrap loosely in saran wrap and refrigerate for at least 24 hours and up to three days. Wipe off the chicken before you cook it to get rid of any excess salt.

I ended up making the Bruschetta Chicken bake last night, and it wasn't great. A new recipe out of the Kraft food and family magazine. It was all-right, but not outstanding! TGIF all!:cool1:

I tried it too. I thought the same thing! Just ok. Don't think I'll be making it again unless I jazz it up. It's pizza night here! :)
 
I'm not sure what we're doing for dinner. We were going to do Maple Pecan Pork Chops, but that was before I had to spend an hour with my MIL at the hospital. DH wasn't even with me. I deserve dinner out! So, that's what I'm pushing for!

We are taking a friend to Ruby Tuesday's for his birthday today. I'm so excited! We haven't been in forever!!

We ended up going out for pizza last night--so tonight will either be hte chicken pot pie or chicken parmigana
 
Something easy here...probably hotdogs, sauerkraut and fries...DS is by his dad this weekend :sad1: so its just the two of us...
 
Tonight we're having roast chicken, our thread favorite - STOVE TOP stuffing:laughing: , mashed potatoes and glazed baby carrots. I brined my chicken for the first time - anxious to see how that comes out!

Lauren I know how sad you feel without your boy, I had to deal with that a long time ago.:hug:

You will love the chicken...I messed it up when I brined the chicken this week and it was still very good. I have a turkey breast I have to cook...I think my xtra freezer is going. This time I will follow the instructions! :)

I found a recipe in the latest issue of food & family for a Black Cherry Jello Poke Cake that I'm going to try today. If it comes out good I'll let everyone know!

Lunch for us today since hubby is working a night shift. We are going easy: french onion soup, bread, salad, and some shrimp scampi. Hubby will take left overs for dinner and I will make dd a baked pot and some grouper that is leftover. Easy peasy day.

Dinner tonight will either be the maple pecan pork chops or hamburger soup. I'm not sure, yet. It depends on what we get done today, and if I find time to get to the store.
 
Last night I made DH a strip steak, and we had green beans and pasta with parmsean and lots of black pepper.

Tonight we are eating with my parents. I am making the roast pork with the green peppercorn sauce again--DH said it was great, so I figure it will go over well. I am also making ravioli from scratch--they are going to be stuffed with some butternut squash that I roasted with maple syrup and butter, plus ricotta and parmesean cheeses. The sauce is more parmesean, walnuts, cream, and a few dried cranberries. I am also making a big salad and some crusty bread.
 
Last night we ended up having spaghetti (dh offered to cook and when he cooks...it's spaghetti!). So tonight will be bourbon chicken.

I made a big chocolate cake last night so we'll have some of that for dessert.
