Hi! :) Sorry, I've been too busy to DIS the past few days (argh!). I have to tell you that I don't know what cream of coconut drink mix is...unless...it is what I use when I make "adult smoothies" when we are on vacation. For those, I buy Coco Lopez brand of cream of coconut. It is a very, very thick, sweetened stuff that has about 9000 calories per tablespoon. HA! It's what you use to make pina coladas. At the grocery, it is usually stocked in the soda isle near the margarita mix and angostura bitters and comes in a 10 ounce can. DH is calling me but I'll come back in a bit and post what we've been eating lately plus some of my adult smoothie recipes. It is Saturday after all!

I just saw Paula Deen make a sinfull "Bacon Cheeseburger Meatloaf". OMG did it look good!
 
OK folks, I've dragged out my vacation notebook and have some yummy frozen libations to share. :woohoo: I am not responsible for any weight gain!!!

BANANA CABANA

6 tbsp. cream of coconut
2/3 cup baileys irish cream
2 ripe bananas
2 tbsp. white rum
3 cups crushed ice

Combine all in blender. Makes two drinks. If you want to gussy it up you can drizzle some chocolate syrup along the inside of the glass before pouring in the drink.

FROZEN MANGO MARTINI

1/2 cup sugar
1/2 cup water
1 inch fresh ginger, sliced

Combine over medium heat until sugar dissolves. Simmer five minutes. Cover, let steep one hour, strain ginger out. Chilll.

2 mangoes, peeled and sliced
1/2 cup vodka
20 ice cubes

Puree mangoes in blender. Add 1/2 cup ginger syrup, the vodka, and the ice. Puree until smooth. Makes four drinks.

FROZEN KIR ROYALE (Tres chic! :snooty: )

1 bottle champagne
6 ounces creme de cassis

Pour half of the champagne into ice trays and freeze. Freeze creme de cassis until thick.

Blend the frozen champagne, the cassis, and the remaining unfrozen champagne along with one cup ice until smooth. Makes four.

BUSHWHACKER (warning--STRONG! :eek: )

Baileys irish cream
amaretto
vodka
kaluha
grand marnier
nutmeg
ice

Fill blender 3/4 full with ice. Add a small splash of vodka and a small splash of grand marnier (say one ounce each). Add a healthy glug of kaluha (around 4 oz.) and a splash of amaretto (about 2 ounces). Fill the blender with bailiey until about 1/2 inch from the top of the ice. Blend until smooth. Pour into glass and grate nutmeg on top.

FROZEN MANGO MARGARITA

1 ripe mango, peeled
3 oz. white tequila
1 oz. cointreau
2 oz. fresh lime juice
3 tbsp. superfine sugar
2 cups ice cubes

Blend all until smooth. Rub the rims of your margarita glasses with the rind from your lime and dip into sugar. Pour in drinks. Serves 2.

And, for the next morning, if you drank too much of what I listed above :headache: and need a little pick me up:

MANGO MINT SPARKLERS

1/4 cup packed mint leaves
1 tbsp. lime juice
3 cups mango nectar, chilled (we use goya brand--easy to find)
1 bottle sparkling wine
cucumber spears ad mint leaves for garnish

Crush mint leaves with lime juice in a bowl with a pestle or spoon until bruised. Stir in mango nectar and chill.

Pour nectar through sieve into serving pitcher, discarding solids. Pour about 1/2 cup mango juice into each glass and top with sparkling wine. Garnish with mint leaves and cucumber spears. Makes six.
 
Allright, back to food.

Last night I made me a chicken breast pounded flat and rolled up around broccoli and cheddar cheese, breaded and sauteed. For DH I made a porterhouse steak with cilantro chili butter. Sides were gratineed potatoes and seared spinach. The potatoes were too salty but otherwise dinner was good.

Tonight we are having spaghetti with meatballs and sausages, garlic bread, and a giant salad. I have a turkey brining in the fridge for anyone who is over tomorrow for the Pats game. I still have to figure out what I am making for go withs.

Do you guys have a good recipe for meatballs (or what are the best pre-made meatballs?) and gravy (again pre-made or home-made). A friend of ours made meatballs and gravy over mashed potatoes. It was really good.
The meatballs she bought through Schwans? They deliver to her place, they do not to ours, she wasn't willing to add an extra order for us. (I did ask--not sure what her deal is) But I would love to make something like it.

The gravy was dark colored and really thick and good (my mom would kill me-- ha ha, she only eats/makes light colored gravy).

Oh another one along the same lines, Salsbury steak. :D Anyone have a recipe for this?

1 egg
1/4 cup milk
1/2 cup dry Italian bread crumbs (I use Progresso)
1 Tablespoon dried onion flakes (or you could use 2 T finely minced fresh onion)
3/4 teaspoon salt
1 to 1 1/2 pounds ground chuck

In a large mixing bowl beat egg; add milk, salt, onion and bread crumbs - mix well. Add ground chuck and combine. Roll into ping pong size balls. I like to give them a lot of space so I put them in two 9x13 foil lined pans. If you don't use Reynolds Release foil make sure you use non stick spray. Bake at 375° for 20 - 25 minutes.

Another stupid question. What is the difference in baked vs fried? I always worry I won't fry them enough and then they will come out dry or hard.

I skillet fry them because I think it adds more flavor. After I cook them on all sides, I then add them to the sauce and let them finish cooking. I don't worry about cooking them all the way through. I just like to brown them nicely all around before adding them.

I worked all afternoon so DH went and picked up some steak, cheese and mushroom subs for us ~ YUM!! :)
 
Is there a thread about only crock pot recipes? I am looking for some kid friendly meals for the crock!
 
I picked up Steak at Costco and Velveta Mac and cheese. My nephews requested the Mac and cheese. I was going to do Broccoli but I am getting to lazy errr tired.:rotfl:

I got meat I am going to cut up tonight for fajitas tomorrow... marinate them over night and then cook them. I am debating on the stove or crock pot. Any suggestions? I am making a lot so I am leaning twords the crock pot.

Tonight I am making baked BBQ chicken, Stove Top (no flames please, I just crave the stuff every now and then), and some green peas.

Tonight will definitely be the burgers and fries I meant to make yesterday. I forgot to defrost the ground turkey, so around 6:30 DH ran out to get some munchies to watch the ball game!! Geaux Saints!!:cool1:

We never made it out last night, we have been reorganizing a couple rooms and were pooped, so we ordered in...italian.

We are finishing up the work around here today so I needed something easy...ravioli, meatballs and texas toast...

Then maybe some chips and dip for 24!!! Yeah! :cool1:

Nancy how do you make Salisbury steak?

Where do you find the meatballs at Costco? In the frozen section? Not where the fresh meat is I assume?

I had never seen ground pork, but I didn't look hard. I normally just get a pork loin.


I really don't use a recipe for Salisbury steak. I just toss ground beef, onion soup mix ( I stopped using sauteed onions a while ago for this) a little bread crumb, maybe, one egg, and some ketchup and worchester sauce together. Form some thick patties. Pan fry and serve with a brown gravy.

This is my basic hamburger pull together. My DH's Mom and my Mom used to stretch their ground meat like this, so when we feel a little nostalgic I do the same.


The MB's are in the frozen food section.
