Hi everyone! One of my new year resolutions was to cook more and eat out WAY less than we have been. Part of the reason we ate out so much was that I was tired of fixing and eating the same things over and over so we are trying out at least one new recipe each week. I have been coming to this thread (along with several other places) for ideas. So far we have tried the Crockpot Chicken and Dumplings from this thread and they were a huge hit.

I'm going to try to post regularly starting tomorrow! Thanks everyone for the ideas so far.
 
Tonight I am making Boo's smoky chicken patties (using turkey), baked potato wedges, and a salad.

I'm headed to work tonight--so DH is in charge of dinner--meaning frozen pizza or pasta with jarred sauce--:rotfl: --but as long as the kids are fed I"m good!
 

My family is not big on ground beef casseroles, however, this one is called "Company Beef Casserole" and it is really quite good and quick and they love it. I'll serve corn and crescent rolls with it.

Mom21 ~ I made your corn bread casserole and it was really good! I had to bake it a longer than you said though, instead of 35-40 minutes I think I had it in the oven for 65 minutes until the center was set.


Tonight is an easy dinner - grilled ham steak, pasta shells in white cheddar sauce, and broccoli.
 
I'm trying Swedish Meatballs, served over egg noodles. I had some at a Christmas party and they were so good!

We loved these but I cheat when I make them...I use frozen meatballs, they are not like home made but the boys here love them - DFI even comes from a true Italian background, and then I add jarred beef gravy and at the end I add a few TBS of sour cream...it really comes out yummy!

We are having comfort food here tonight...breaded chicken cutlets, mashed potatoes, corn and I am craving stuffing so I'll add that! :) I love the chicken dunked in Saucy Susie...do you guys have this? Its an aoricot sauce...

Kathy are you going to share your casserole recipe?

We're having fried oysters, cole slaw, and waffle fries. Maybe some apple slices w/ caramel for dessert.
 
Welcome Cyndi. Tonite we are having a roasted oven stuffer chicken, stuffing, mashed potatoes and gravy, cranberry relish, and some kind of veggie. I may bake something if I get enough cleaning done.
 
Beef Stew and rolls for us tonight. Left over ice cream cake for dessert.

Oh trust me I'm cheating too! :) Frozen meatballs, and the gravy is cream of mushroom soup, sour cream, and Worcestershire sauce. Sounds easy enough!

I spelled it wrong...it's actually Saucy Susan...

OMG! It is the best! It's along the lines of duck sauce but better! It's a peach apricot sauce...other brands can't compare...can you tell I'm a Saucy Susie freak? :) :) :) I grew up on it...it's great on chicken, pork, ribs, burgers, fish...

It's everyone-for-himself nite here. I planned it that way, as I will have a looong meeting this PM.
We have a nice array of leftovers--beef stew, chicken fried steak--and a fresh baby greens salad. I picked up some lovely cherries, which are on sale this week, & there are pears & apples for dessert, too.

I've never seen it in our local stores. It sounds good, but you have to order a case of it thru the website. I'm going to look around locally, maybe it is available!

I've bought that brand before. I think I only got the ham glaze though. I'll have to pick up some peach apricot sauce the next time I go shopping. DS loves that type sauce on eggrolls.

I giggle every time I make this dish now - DS's girlfriend proclaimed me a "gourmet cook" after she had this!!:rotfl:

COMPANY BEEF CASSEROLE

1 lb. ground beef
2 Tbsp. olive oil
1 medium onion, chopped
2 c. canned tomatoes
1 Tbsp. ketchup
1 Tbsp. steak sauce (I use A-1, but any kind will work)
1/4 c. chopped green pepper
2 Tbsp. chopped parsley
5 oz. elbow macaroni
Salt & pepper to taste
1 can cream of mushroom soup
1 c. shredded cheddar cheese

Brown beef in oil in a heavy skillet until cooked through. Drain off excess fat. Add onion, tomatoes, ketchup, steak sauce, green pepper and parsley. Simmer for 30 minutes. Cook macaroni according to package directions. Combine macaroni and ground beef mixture in a 2 quart baking dish. Season to taste. Gently spoon mushroom soup into mixture. Mix lightly, lifting from the bottom. Bake at 350 for 30 minutes or until top is browned and bubbly. After 20 minutes of baking time sprinkle cheese over the top.
 
Peapod is delivering my groceries between 4 and 6 so tonights dinner is a quick fix..We are having italian subs on a baguette
