Oreo Truffles, aka Smack yo' Mama Candy

1 package of Oreos
1 8 oz. brick of cream cheese, room temp
2 boxes baking chocolate (8 oz. each)

Remove 9 cookies from the package and grind them to crumbs in a food processor. Place in a small bowl. Add the rest of the Oreos to the food processor and grind until they are crumbs. Place in a big bowl and add cream cheese.

Using a spoon (it's actually easier to just use your hands) combine Oreos and cream cheese until completely combined. Form into balls a little smaller than golf balls and place on a cookie sheet lined with wax paper. *At this point I put them in the fridge to get them good and cold* While they are chilling, melt the chocolate in a saucepan. Dip the balls in chocolate and sprinkle with reserved Oreos.

Store in fridge.

tonight we are having chicken enchilladas - I am hoping DH takes the hint about my late meeting and will have them done when I walk in the door :goodvibes
 
DH is going to a hockey game tonight so DS and I are having something he(DH) doesn't like, Garlic Shrimp Voila.

Tonight is Barbequed Roasted Salmon, garlic roasted mashed potatoes and maybe a salad.

LOL You might be sorry you asked. It's a prepackaged frozen meal. Publix has it on sale buy1get1free this week and I had a $1 off coupon (I'm cheap). DS loves it and it's fast and easy.

Not cooking tonight, DH is bringing something home from a great little restaurant near where he works. They do a great grilled artichoke! YUM!
 
Hi all! Lindsay, I hope you are OK...

We are probably having left over chicken francese...

my DS8 is going by his Dad this weekend...and next weekend since he won't see him for Xmas...we are going to Disney :cool1: ...I miss my dear Andrew already!

Not much cooking this weekend...tomorrow we have my nephew's bday party and Sunday is usually football and football food!

I am not cooking tommorrow either -we are taking our niece and nephew to Hersheypark.

Sunday I will cook the Meatball and Spaghetti stoup and a few things for the week.
 
No cooking for me tonight, either! We are going to my mom's house. That means we'll probably have a yummy stew! Can't wait!
 
I made chili 2 days ago so today we are having cornbread/chili casserole and a salad.

Here ya go Kathy!!! :)


Chicken Francese (Would be great with shrimp or veal too!)

1 1/2 lb thin cut chicken breast
salt, pepper and garlic powder
1 - 2 eggs (beaten)
3/4 cup flour
3 cloves garlic (chopped)
1 cup chicken broth
1/2 cup white wine
1 TBS lemon juice (I usually add about 5 TBS)
parsley for color
1/2 stick butter
oil for frying
flour or corn starch mixed with a little water to thicken sauce (optional)
Optional toppings: sauted mushrooms, spinach, ham, prociutto, mozzerella

I usually double the sauce and serve with linguine or rice...Yummy!

Heat fry pan and oil to fry chicken. In a shallow dish mix flour with salt, pepper and garlic powder. Coat chicken with flour then dip in egg and fry to golden brown on both sides. Drain chicken and set aside (this can be done prior and refridgerated).

Preheat oven to 350 degrees.

SAUCE (can be made ahead too) In a small sauce pan, melt butter and saute garlic lightly. Add broth, lemon juice and wine. Simmer for 5 minutes. Add flour/cornstarch to thicken and boil for a few minutes. Add parsley and salt and pepper to taste.

Line baking dish with chicken, pour sauce over meat (if doubled recipe for sauce do not use entire amount), add toppings. Bake for approximately 15 minutes. Let stand 5 minutes before serving.

Hi all!! I'm alive!! I changed my Friday workout from 2:30 to 7 a.m., so on Friday mornings I will be late updating the thread :)

Tonight we are going to a Christmas party. I am taking the Oreo truffles I made yesterday and some crockpot weenie-bacon wraps :)

We will put up our tree tonight and I will probably make a salad with steak teriyaki on it.
 
No "real" cooking for me tonight, either. Friday's are our normal pizza days, but since DH is working nights we won't be going out. Going to toss a Freschetta in the oven. DD and I are having a "campout" in the living room tonight--sleeping bags and all--so I'll also be making some snacky foods for us to munch on while watching movies! :goodvibes

That sounds like so much fun, I miss doing things like that. DS is 16 and I don't think he'd go for it! :rolleyes:
