Liamsaunt, So happy for you!!! How long are you going to be there? I won a 5 night trip to Paris and I took my Mom...we saw alot of stuff in 5 days...even DLP!!! If you have time, take a bus trip to the Loire Valley and the Chateaus...very nice trip, but a long day!

Nucpharm, Can't wait to try that meatloaf recipe!!!

Tonight we are having Lindsay's Crockpot Italian Chicken...I may try it over rice...and broccoli and green beans...

Tomorrow, I may try the famous Spaghetti and Meatball stoup! :)

:Pinkbounc Woo Hoo! My new food processor was delivered today. It's a belated birthday present (from me, to me). I can't wait to use it, but I don't know what to make. I could've really used it yesterday when I made cole slaw.

Tonight I'm making Portuguese grilled chicken thighs, orzo with garlic butter, and some kind of vegetable.

Dinner for us tonight is an Enchilada Bake. It's a new recipe, and I hope it's good. I'll let you know!
 

Thanks everyone! I am so psyched! I arrive in Paris around 7 AM Friday, and we fly home Monday afternoon (arriving Boston...Monday afternoon!) We won't get out to the wine areas, much as I would like to, since we only have the three days--we are just going to stay in the city. I've been doing some reading and have discovered a couple of other things we definitely are going to visit, but if anyone has been to Paris and has a "don't miss" please PM me! :)

Food related, dinner was nice tonight. In addition to the pasta, we had a salad of mixed baby greens, cucumbers, sweet onion, grape tomatoes, and kalamata olives in a balsamic dressing, plus some garlic bread.

Were your chicken strips homemade? I have to confess...I LOVE homemade chicken strips. Especially with a honey-mustard-mayonaisse dipping sauce...So, if you have a recipe for a homemade chicken strip, please post it! My recipe is very bad for you--too much butter and parmesean cheese, plus cornflakes!
 
Tonight ended up being spaghetti and italian sausage. I forgot that I have to have dinner ready earlier this week as DH is working the night shift and has to be at work at 6:30. So with the extra time on my hands tonight, I'm baking some pumpkin pie bread--Really yummy!
 
I made a huge pot of chicken chili today ~ it is so cold here and it was the perfect thing for today's weather. On the plus side of the chilly weather, DH went out and chopped down our Christmas tree today and while we were decorating it, it started snowing giant, fluffy snowflakes...so pretty! :cloud9:

This isn't really a recipe but it is what I call chicken strips. Just dip chicken in a couple of beaten eggs, then in flour, making sure to completely cover with flour and press flour into the chicken so it sticks. I put a little oil in pan - just enough to cover bottom of pan (with heat on medium/high). Cook on one side for a few minutes then flip and repeat. When they are golden, drain on paper towels. While they are hot, sprinkle with salt and black pepper (I like to sprinkle also with some cayenne pepper). I don't use a dipping sauce but fry enough chicken to make cold sandwiches the next day!
 
Tonight I am making the smoky chicken patties (or Boo patties, according to Rachael Ray, we call them that too). I forgot to get anything to make with them so I will be stopping by the grocery store.

ETA: To those of you asking about chicken strips/fingers, when I make them I use pancake mix instead of flour.

Spaghetti and Meatball Stoup...no mushroom though...my guys do not like them. I will serve it wiht nice crusty bread.
 
Tonight I'm doing a recipe called "Chicken Sparky", which was a prize winning recipe down here a few years back (No, not mine :teeth: ). It's basically, cubed chicken breasts with LOTS of seasonings and spices served over angel hair pasta. It's a LONG recipe, but goes together very quick and its YUMMY!

I have to go meet with Mom's homehealth care nurses at 10:00 to discuss her case, which is not very good. She's fading fast, my friends. :sad2:

Tonight I am having my parents to my house for dinner. We are having fresh codfish cakes with a spicy remoulade sauce, roasted fingerling potatoes, roasted asparagus, and carrots braised in honey.

You might appreciate this - the Shrimply Delicious Rice that I am making tonight comes from a LSU Dental School cookbook that the wives club put together many MANY moons ago when I worked there (over 20 years ago - YIKES!). Any hoo, I love that cookbook and refer to it all the time. They are real, tried and true Louisiana recipes! :thumbsup2

Got some beef stew in the crockpot--it's one of those bagged meals from the freezer case--needed something quick today!

Tigerkat-so sorry about your mom--hope the meeting goes well.
 
TigerKat - I'm so sorry to hear about your mom. We are going through the same thing with my grandmother. Your mom and you will be in my prayers.

Last night's enchilada bake was really good! I would have liked it spicier, but then my kids wouldn't have eaten it. Anyway, I'll post the recipe if you'd like it.

Tonight we're having spaghetti and meat sauce with garlic bread and a large green salad.

Enchilada Bake

1 pound ground beef
1 1/2 C. frozen corn
1 can enchilada sauce
1 can chopped green chiles, optional
6 oz. pkg. corn tortillas cut into strips
shredded cheddar cheese

Preheat oven to 375 degrees. Brown ground beef in large skillet until no longer pink. Drain. Add frozen corn, enchilada sauce, and chiles. Cook about 5 minutes. Layer 1/4 meat mixture in a lightly greased 8 inch square baking dish. Top with 1/4 tortilla strips. Repeat layers 2 times ending with meat mixture. Cover with foil and bake for 40 minutes. Remove foil and spread cheese on top. Return to oven for 5 minutes or until cheese is melted and bubbly. Serve with sour cream.
 
Got some beef in the crockpot, mashed potatoes, salad, maybe will saute up some zucchini, onions, and bean sprouts (trying to get more veggies in my diet :teeth: )
